My Style of Nel Drip Coffee/私流のネルドリップコーヒー

I’ve previously posted about nel drip coffee. “Nel” is an abbreviation for the English word "flannel."

Unlike paper filters, nel filters allow the oils to pass through, resulting in a rich and mellow coffee. In Japan, nel drip is said to be the best coffee brewing method. However, because handling nel filters is tedious--washing them with only water after use without detergent, then storing them in a water-filled container in the refrigerator--not many people actually use this method.

I cut a 25 cm x 25 cm square from food-grade flannel (1m x 1m), place it in a Hario V60 dripper, and then put a large tea strainer on top to brew coffee. After brewing, I can easily dispose of the coffee grounds from the tea strainer. The fine particles stuck to the nel cloth are rinsed off with running water, and the cloth is then stored in a water-filled container in the refrigerator.

I think the nel cloth shown in the photo has been used nearly 100 times.

I use 40g of coffee grounds and 1000g of water. The coffee-to-water ratio is 1:25 (while the standard ratio is 1:17), but the resulting coffee is neither too strong nor too weak, and it has just the right strength. Any leftover coffee is cooled to room temperature in the kitchen and then stored in the refrigerator during summer for iced coffee. In other seasons, I pour it into a cup and heat it in the microwave before drinking. The flavor doesn’t deteriorate, and it remains delicious.

I think this method is much more efficient than brewing small amounts (about 10g of coffee and 180g of water) each time I want coffee. 

My concept is to enjoy fresh coffee as affordably as possible.

ペーパーフィルターと異なり、ネルフィルターは油分を通すので、まったりとした美味しいコーヒーができます。日本では、ネルドリップは最高のコーヒー抽出方法と言われています。ただ、ネルフィルターは、使用後、洗剤を使わず、水だけで洗い、水の入った容器に入れ、冷蔵庫に保管するなど、扱い方が面倒なので、実際にネルドリップを実践している人は多くいません。

私は、食用のネル生地(1mx1m)から25 cm x 25 cmの正方形を切り取り、ハリオのV60ドリッパーに入れ、その上に大きな茶漉しを載せ、コーヒーを淹れています。抽出後は、茶漉しに入ったコーヒー殻を簡単に捨てられます。ネル布に付いた微粉は流水で洗い流し、水の入った容器に入れ、冷蔵庫に保管します。

写真のネル布は、もう100回近く使っていると思います。

コーヒーの粉の量は40g、使用するお湯は1000g、コーヒーの粉とお湯の割合は1:25ですが(一般的な割合は1:17)、濃くも薄くもない、ちょうどいい濃さのコーヒーができます。残ったコーヒーは、台所でそのまま常温になるまで冷まし、その後、夏は冷蔵庫に入れ、アイスコーヒーにし、それ以外の季節では、飲むときにカップに入れ、電子レンジで温めています。劣化することなく、美味しく飲めます。

コーヒーを飲みたい時ごとに少量(10g程度)と少量のお湯(180g程度)を使ってコーヒーを淹れるより、ずっと効率的にコーヒーを淹れることができると思います。

新鮮なコーヒーをなるべく安く飲むというのが私のコンセプトです。

以前投稿した、私の「ハイブリッド焙煎」は今でも実践していて、改良を重ねています。次回は、そのことについて投稿したいと思います。

  1. I use a metal mesh filter which also allow the oil to goes through, although it also allow some fine grounds to go through as well. Less hassle than the cloth since I just need to do a quick rinse of the metal mesh filter. I do enjoy this type of brewing vs paper filter since it does add some flavor to the brew.

    Nice Doraemon lunch box! My kids have the same one when they were little except it was a hello kitty print instead of the doraemon.
