Satsuma Imo (Sweet Potatoes)/

The other day, I got some sweet potatoes from a friend. Today, I cooked them all except one, which I think I'll use to make tempura.
I put these potatoes in a pot of water, brought the pot to a boil, turned the heat to very low, and simmered the potatoes for 45 minutes. Then, I let them cool.

Then, I put them in the toaster oven and grilled them for more than ten minutes to remove excess water.

That way, you will have the most wonderful sweet potatoes.

  1. That's a great tip, thanks. Sweet potatoes often end up watery, and this sounds like a good way to avoid that.

  2. Thank you for your comments, kake pugh. This tip I learned from a famous TV show called "Hanamaru Market". The very best way to cook sweet potatoes (to bring out their sweetness) is to bake them in hot pebbles. There are things called "ishi yaki imo" (lit. sweet potatoes baked in stones) in Japan.
I think that the way I described in this post is the second best.
