ReplyDeleteI recently bought myself a Japanese hand made knife similar looking as your santoku (the middle one). I was going to buy one from the shop you recommended but unfortunately my trip got shortened because of the tsumami. A local shop here import hand made knives from Japan. I absolutely loved it! I will never use anything else. I also bought a Shun last week and when I use them side by side, I still prefer the handmade one! The smallest knife in your set has a very interesting shape. The price for the set is very reasonable. I am waiting for your knife report!

Hiroyuki, a good set of knives is on the top of my list when I go shopping in Japan! Your knives look extraordinary.
ReplyDeleteHere good quality Japanese knives are not available (at least not the hand-made ones). It's funny because I was recently offered a ceramic knife. It's been in fashion lately because it cuts very well. I use it to make very thin pork slices to make Japanese-style rolls with okra for example.
Do you also have a special knife sharpener? I have heard that Japanese knives require a special sharpener.
Good knives are for life. I hope you enjoy yours but it already seems so (laugh). Oh I do know the thrill checking out a new knife. Wonderful, isn't it. And japanese knives are so beautiful, very elegant.
ReplyDeleteDid you cut yourself unintentionally during first use? Some knives take a little blood tax if they are willing to serve you properly furthermore.

Kiki: It's really trilling having five knives at once! I bought some konnyaku yesterday to test the sashimi knife today. It may take some time until I can test the deba.
It's nothing to brag about, but I've never cut myself with a knife for so many years.
