For this dish, I dried enoki and shiitake in the sun for one day.
この料理では、エノキとシイタケを一日、天日干ししました。
I didn't throw the stems away.

薄切りの玉ねぎとえのき(肉なし)で作った簡単なうどんです。

For this dish, I processed enoki in a blender until puree.
この料理では、えのきをピューレ状になるまでミキサーにかけました。
4. Pork and mushrooms stir-fried with doubanjiang
I intended to make pork kimchi, but I failed, partly because what I thought was gochujang was actually doubanjiang.

豚キムチを作るつもりでしたが、コチュジャンだと思っていたのが実際は豆板醤だったこともあり、失敗しました。
5. Tsuke men (lit. dipping noodles) & mushroom soup
For this dish, I used the trick of turning hiyamugi noodles into ramen noodles by boiling with water and baking soda.

Note that one of the requirements for this recipe contest is that the dish is a simple one that can be made by anyone. Another requirement is the use of mushrooms. Using different types of mushroom is a big plus in this contest.
このレシピーコンテストの要件の一つは、誰でも作れる簡単な料理であること。また、きのこを使うことも要件です。このコンテストでは、色々な種類のきのこを使うと評価が高くなります。
Intersting that there is a contest for easy to cook dishes with mushrooms and only a few ingredients. Very nice collection. My easiest recipe for mushrooms is mushroomstew with egg omlette. My father used to cook this pretty often after his mushrooms hunts.

Just roast mushrooms (bigger ones cut into slices) in a little oil, with diced onion (spring opnion should be nice), season with pepper, salt (you could use soy sauce too guess but my father did not use any). Bake an omlette, just eggs beaten with a little water and salt until fluffy. Fill mushrooms on one half and top with the other.
