Hiroyuki, thank you so much for this difficult and long job you have done. The dishes' lists are very precious for those who can't read Japanese. I wish so much I could... I should start looking for the recipes of each of the dishes and start making them one by one!

ReplyDeleteHowever, there are three dishes looking delicious and interesting (and possible to make with available ingredients). Do you know how to make Ajino hiraki (nr 68)? I noticed this fish quite often at my fishmonger's and not expensive (not as cheap as saba though). I only had it grilled in the oven once and found the taste very good: it reminded me of saba mackerel mixed with the delicate taste of sweet water fish.. Is this dish possible to make at home? I have also thought tomato in pork belly (nr 72) must be simple and good. And the last one is the cucumber pickled in rice bran (nr 12). In general I am very interested in rice bran pickling.
If you know any of the three recipes or have an idea more or less how to make one of those I would be very grateful!
Excuse-me for bothering you, but since you have kindly offered your help, I thought I'd jump at the opportunity ;-)
Sissi: OK, I will get to them one by one. One question: Is rice bran readily available where you live?

Yes, I can buy rice bran at organic food shops (also bran from different cereals). (By the way, I was in an organic food shop yesterday and have finally found nigari! so I can start doing okara once more and I will try making tofu, this way I will not throw the soy milk away).
