My Nukadoko on November 3/私のぬか床、11月3日現在

The latest great news is that Kiki in Germany has started nukadoko making, as she describes here in her blog, despite the problems she has faced, such as the unavailability of pre-roasted rice bran.
最近のすごいニュースと言えば、ドイツのKikiさんが、自身のブログのここで述べているように、煎りぬかが手に入らないなどの問題に直面しつつも、ぬか床作りを始めたということです。

Today, my nukadoko is like this:
今日、私のぬか床はこんな感じです。
As you can see, the container is tilted. This is intentional! After struggling to find good ways to remove excess water from my nukadoko, I have finally come up with this innovative way (laugh)! No more paper towels, no more dents or holes in my nukadoko!
ご覧の通り、容器は傾いています。意図的にです。ぬか床の余分な水分を取るいい方法を探そうと苦労した末に、最近、やっと画期的な方法を思いついたんです(笑)もうキッチンペーパーも要らないし、ぬか床に窪みや穴を開ける必要もありません!

Just drain the water down the sink.
水を流しに捨てるだけです。
I removed one cucumber (cut in half), daikon, and carrot.
きゅうりを一本(半分に切った)、大根、にんじんを出しました。
I put the carrot back in the nukadoko because I thought it had not been fully pickled.
にんじんはよく漬かってないと思ったので、ぬか床に戻しました。

As I said earlier, replenishing the nukadoko with some rice bran plus 7% salt rather than removing excess water is also a good way for moisture control.
前にも言ったように、余分な水を捨てるのではなく、ぬかと7%の塩をぬか床に足すことも、水分管理の良い方法です。

  1. Getting rid of the water: sometimes the most easiest ways are the best. I am really glad about these pictures. Now I am quite sure my nukadoko has the correct texture and firmness.

  3. These look delicious!!!! I also think its wonderful Fraulein, that you've started a nukadoko too! I recently pickled a cucumber in mine - it was still too salty, but it's starting to develop a good flavor!

    My wife had much of the daikon, and said it was good.
