At my parents' house, it is my job to make three meals a day. Sometimes, my father is kind enough to reduce my work by getting premade meals such as nigiri zushi (< sushi).
Yesterday, my father suggested that he make another local dish of Shinshu (Nagano), obukko. Obukko is a kind of nikomi udon (udon stew). I search for any information about this local dish, and I found it is usually made with flat, wide noodles.
Well, I was surprised at the amount of obukko he was making, which was enough to serve three of us four times, i.e., 12 servings!
We will have to consume the rest tomorrow...
I see fresh Salmon cuts, Cavier and other Seafood. The Japanese diet is so fish centered. I read the Blue Fin Tuna auction on this New year was for a record amount of money.
ReplyDeleteseeandoh: By carier, you mean the salmon roe?
ReplyDeleteYes, sushi and sashimi are all about freshness, not barbarism!

Cavier is fish eggs. We get fish eggs mostly from Sardines here in Kerala, S. India during the monsoon rains. But Cavier is an expensive item in the Western World.

You wrote on another site: "To make shirataki, you need a special gadget for extruding paste-like konnyaku from tiny holes into noodles, which are then directly put into a hot-water bath. http://www.natto-men.com/pages/shiratakiseizo.html Japanese only. See the 3rd photo." But that link is no longer valid. Can you tell me where to get a shirataki noodle maker now? Thanks. hag sign eatoni com.
ReplyDeleteErwin: Well, I don't think there are such things called shirataki noodle makers.
ReplyDeleteDo you want to build a large-scale shirataki manufacturing plant like in this video?

Why not make a shirataki noodle maker yourself, like this guy (Japanese only)?:

This is quite interesting, thanks. If that very dedicated guy is having trouble, I am unlikely to succeed. :(
