Hash Browns Made by Using New Potatoes/新じゃがを使って作ったハッシュポテト

I have already talked about our hash browns here, so I will be brief again.
我が家のハッシュポテトのことはすでにここで述べているので、また簡潔にします。

About 700 g potatoes, microwaved and mashed.
電子レンジで加熱し、潰したじゃがいも、約700 g。
Equal amount of potatoes, diced into 5-mm cubes.
同量のじゃがいも。5mm角に切る。  
Mixed the cubed potatoes with the mashed.
角切りにしたじゃがいもを潰したじゃがいもに混ぜる。 
Add salt and pepper and add an appropriate amount of potato starch to attain the right texture.
塩胡椒を入れ、片栗粉を適量加え、ちょうどいい硬さにする。 
Scoop some with a large spoon, and shape into a ball first and then flatten it.
大きなスプーンで少し取り、ボール状にしてから、平らにする。 
 
I made 48 pieces in total.
全部で48個作りました。

I decided to deep-fry one half of them.
そのうち、半分を揚げることにしました。 
The main dish was eel kabayaki, given to us by my wife's sister!
メインディッシュは、妻の姉からもらったうなぎのかば焼き! 
 
My daughter said there were delicious!
娘は美味しいと言ってました。

Menchi/メンチ

I was born in 1960 (35th year of Showa) at Hiroo, Shibuya, Tokyo. What do I mean by that? Well, I want to make it clear that for me, menchi (short for menchi katsu) were, and still are, quite similar to korokke (Japanese croquettes). The only difference between them is that the former contains more ground meat (pork) while the latter contains little or no ground meat. I am no big fan of present-day menchi, which are supposed to be something like hamburger patties breaded and deep-fried.
私は昭和35年、東京都渋谷区広尾で生まれました。それがどうしたかと言うと、私にとってはメンチとはコロッケによく似たものだった、それに今でもそうであることをはっきりさせたいのです。両者の違いは、前者には(豚の)挽肉がより多く入っていて、後者には挽肉がまったくまたは殆ど入っていないということだけです。私は現在のメンチ(ハンバーガーのパティにパン粉を付けて揚げたようなもの)は、あまり好きではありません。

As part of supper tonight, I was meant to make tonkatsu. It suddenly occurred to me that this would be a great opportunity to make menchi as well. So, I did.
今日の夕飯には、豚カツを作ることになっていました。突然、メンチも作るいい機会だと思いついたので、作ってみました。
Hitokuchi (one bite) tonkatsu in the plastic tray and 12 menchi, large and small.
トレイの上に一口カツ、メンチが大小12個。
Look very tasty, don't they?
とても美味しそうでしょ?

Naturally, I had mine with lots of shredded cabbage.
もちろん、千切りのキャベツも一杯食べました。
I guess I should have deep-fried them for another 2 minutes or so until the ground pork is done. Anyway, the home-made menchi were tasty enough.
もう2分程度、挽肉に火が通るまで揚げるべきだったと思います。ともかく、自家製のメンチは十分美味しかったです。

But, I have to wonder. Store-bought menchi are tastier. I guess menchi should be bought, not made.
でも不思議に思います。市販のメンチのほうが美味しいです。メンチは作るものではなく、買うべきものだと思います。

Udo Karaage, etc./ウドの唐揚げなど

As part of supper last night, I made hash browns for the third time, using ten potatoes (almost 2 kg). I had to, because my children love them.
昨日の夕飯には、じゃがいもを10個(2 kg近く)使って、ハッシュポテトを作りました。これで3回目です。子供たちが好きなので、作らざるを得ません。
I had these udo leaves in the fridge.
冷蔵庫にウドの葉っぱを入れていました。

(The other day, we got some nice udo from my wife's brother. My wife made udo kinpira, using the stems, and I had made udo tempura, using most of the stems and leaves. These leaves were leftovers.)

(先日、妻の兄からいいウドをもらいました。妻が茎を使ってウドのきんぴらを作り、私が茎と葉っぱを大半使ってウドの天ぷらを作り、そしてこれはその残りです。)

I first thought I would make kakiage using these leaves, but I changed my mind and decided to make something like udo karaage. I sprinkled some wheat flour.
最初はこの葉っぱでかき揚げを作ろうと思ったのですが、気が変わって、ウドの唐揚げのようなものを作ることにしました。小麦粉を少し振り掛けました。
I mixed them thoroughly. I later added some more flour to achieve a right texture.
よく混ぜました。後でもう少し小麦粉を足し、ちょうどいい硬さにしました。


I then deep-fried them at a low temperature of 160C until crisp.
それから、低温(160C)でカリカリになるまで揚げました。  
More like an appetizer for sake than an okazu for rice. Anyway, they tasted good.
ご飯のおかずと言うより、酒の肴みたいです。ともかく、美味しかったです。

My wife removed aku (harshness) from warabi, given to us from a relative.
妻は、親戚からもらったワラビ(わらび、蕨)の灰汁抜き(あくぬき)をしました。

Microwaved Version of Potato Chips and Frozen Extra-Large Korokke/電子レンジで作ったポテトチップと特大の冷凍コロッケ

Today, around noon, I tried Kiki's suggestion about making potato chips: using a microwave instead of deep-frying. I used only a single potato. This was more like an experiment than cooking.
今日は、昼ごろ、Kikiさんから教わった、揚げる代わりに電子レンジを使ってポテトチップスを作るという技を試してみました。じゃがいもは一個だけ使いました。料理と言うより実験のようなものです。
This particular slicer (mandoline) is adjustable to three thicknesses of 0.5, 1.3, and 2.0 mm. I selected 2.0 mm.
このスライサーは厚さを0.5、1.3、2.0 mmに調節できます。私は2.0 mmにしました。
I pierced the slices with two bamboo skewers, and placed them on a Tupperware container. Then, I went out for shopping. I left them on the kitchen counter, hoping that the slices would be dried to some degree.
スライスしたじゃがいもに竹串(たけぐし)を刺し、タッパーの上に置きました。それから買い物しに外に出ました。じゃがいもはある程度乾くことを期待して、キッチンに置いたままにしました。
Thirty minutes later, I microwaved them for a total of 3 + 3 = 6 minutes.
30分後、合計3 + 3 = 6分、電子レンジで加熱しました。
We have two microwaves in our kitchen, by the way.
ところで、うちのキッチンには電子レンジが2つあります。
Still soft. I decided to give up this attempt. I didn't want to use the microwave for as long as 16 minutes or so.
まだ柔らかいままでした。この挑戦は諦めることにしました。電子レンジを16分程度も使いたくなかったので。
I left them on the kitchen counter, hoping that they would get crisp.
キッチンに置いたままにしました。カリッとなるかと期待して。
At around 5:30 in the evening, they were still soft. I decided to deep-fry them.
夕方の5:30頃でもまだ柔らかいままでした。揚げることにしました。
I deep-fried them at 160C for 2 minutes and 40 seconds.
160Cで2分40秒揚げました。
I tasted one. It was tough rather than crisp.
一つ食べてみました。カリッと言うより硬かったです。
Then, I made potato chips in a usual way.
次に普通の方法でポテトチップスを作りました。
I deep-fried them at 160C.
160Cで揚げました。

At 2:30 after the start of deep-frying, they were still soft.
揚げ始めから2:30でもまだ柔らかかったです。
It took me more than 6 minutes to make them crisp.
カリッとさせるのに6分以上かかりました。

I really hated making potato chips in these two ways. I don't want to make potato chips again! Potato chips should be bought, not made!
これら2つの方法でポテトチップスを作るのは本当に嫌になりました。もうポテトチップスを作りたくないです。ポテトチップスは買うもので、作るものではありません!

Then, I took these frozen extra-large korokke out of the freezer, which had been made by my wife the other day.
次に、冷凍庫から、この特大の冷凍コロッケを出しました。先日、妻が作ったものです。
They were so big that they were not fully covered with the oil. I was afraid that I might get "punctures", so I increased the temperature setting from 160C to 180C, and poured some additional oil little by little.
大きすぎて、油が全体に回らないので、パンクするのを恐れて、温度設定を160Cから180Cに上げ、油を少しづつ足しました。
Six minutes passed.
6分経ちました。
I gave up! I took them out of the fryer, wrap them in aluminum foil, and heated them in the toaster oven for 3 minutes.
諦めました!フライヤから出して、アルミホイルでラップして、オーブントースターで3分加熱しました。
The last two ones.
最後の2個。
6-minute deep-frying. I got one puncture in one.
6分揚げました。コロッケ一つがパンクしました。
Again, I wrapped them in aluminum foil. and heated them in the toaster oven.
また、アルミホイルでラップして、オーブントースターで加熱しました。
The oil was now contaminated with starch...
油はでんぷんで汚れてしまいました...。

I also simmered atsu age. This was the last piece, which I had after washing the dishes.
厚揚げも煮ました。これは最後の一つです。皿を洗ってから食べました。
(I like atsu age, while the rest of my family don't.)
(私は厚揚げが好きなのですが、家族のうち好きな人は他にいません。)

Hash Browns, Again/再びハッシュポテト

While having supper last night, my family discussed what to make with the remaining potatoes. I mentioned Kiki's and Sissi's suggestions, but my children said they wanted to have hash browns again.
昨日、夕食中に、家族で残りのじゃがいもで何を作るか話し合いました。Kikiさん、Sissiさんが薦める料理のことも話しましたが、子供たちはまたハッシュポテトが食べたいとのことです。

So, as part of supper tonight, I made hash browns again. This time, I changed the recipe in my own way. I mashed previously boiled potatoes, diced raw potatoes, mixed them together at a ratio of about 1:1, added some salt and pepper, as well as some potato starch.
と言うわけで、今日の夕飯にはまたハッシュポテトを作りました。今回は、レシピを自分流に変えました。前に茹でたじゃがいもをマッシュして、生のじゃがいもをさいの目に切り、およそ1:1の割合で混ぜ、塩コショウを少し入れ、片栗粉も少し入れました。

I deep-fried each batch at 160C for more than 5 minutes.
どの回も、160Cで5分以上揚げました。

While talking to my son tonight, I learned that he has never had McDonald's "hash potato". (In Japan, hash browns are called hash potato.)
今夜、息子と話している際、息子がマクドナルドの「ハッシュポテト」は食べたことがないことが分かりました(日本ではhash brownsはhash potatoと言います)。

I hope I can make other potato dish next time.
今度は別のじゃがいも料理を作りたいと思います。
