In December last year, Washoku was added to UNESCO's Intangible Cultural Heritage list. It's very important to note that Washoku as the traditional dietary cultures of the Japanese has been recognized as a cultural asset, not any particular Japanese foods or dishes.
去年12月、和食がユネスコの無形文化遺産に登録されました。とても重要なことは、或る特定の日本の食品や料理ではなく、日本人の伝統的な食文化としての和食が文化遺産と認められたことです。

of the Intangible Cultural Heritage of Humanity summarizes WASHOKU as follows:
WASHOKU is social practice
based on a comprehensive set of skills, knowledge, practice and traditions
related to the production, processing, preparation and consumption of food.
「無形文化遺産の代表的な一覧表への記載についての提案書」(農林水産省作成仮訳)では、和食を次のように要約しています。
「和食」は食の生産から加工、準備及び消費に至るまでの技能や知識、実践や伝統に係る包括的な社会的慣習である。
According to the leaflet introducing WASHOKU, published by the Government of Japan, WASHOKU has these four features:
Various fresh ingredients and using their natural tastes
Well-balanced and healthy diets
Emphasis of the beauty of nature in the presentation
Connecting to annual events

Mulukhiyya/モロヘイヤ
I think that in other cuisines, slimy foods are cooked in a way to reduce or elimiate the slime, but in Japanese cuisine, slimy foods are usually eaten just as they are.
他の国の料理では、ネバネバした食べ物はネバネバを減らすか無くすように調理すると思いますが、日本食では、そのままで食べるのが普通です。
Mulukhiyya is one such example. Natto is another. We also like to combine slimy foods together.
モロヘイヤはそんな一例です。納豆も。またネバネバした食べ物を合わせるのも日本人は好きです。
This morning, I gathered some young mulukhiyya leaves from my tiny vegetable garden, boiled them for a few minutes, and chopped them very finely. They are a great addition to natto!
今朝は小さな菜園からモロヘイヤの若い葉を採って、数分茹でて、細かく刻みました。納豆に入れるとすごくいいですよ!

Proper Way to Place the Three Items on the Table/3点をテーブルに置く正しい方法
Just cooked, piping hot rice is a favorite of almost every Japanese.
炊きたて、熱々のご飯は、殆ど全ての日本人が大好きです。
Don't ever think that rice can be a side dish or garnish in Japan. In Japan, gohan (cooked rice) is synonymuos with shokuji (meal)!
日本ではご飯がサイドディッシュやツマになりうるとは決して思わないで下さい。日本語では、ご飯は食事と同義です。
Yesterday, I bought a pack of mitsuba to make chawanmushi (Japanese egg custard) in the near future. This morning, I used some of it as a garnish in clear soup.
昨日、そのうち茶碗蒸しを作ろうと、三つ葉を1パック買いました。今朝は少し澄まし汁に使いました。
By the "three items" in the title, I mean a pair of chopsticks (o-hashi or hashi in Japanese), a rice bowl (o-chawan or chawan in Japanese), and a soup bowl (o-wan in Japanese).
タイトルの「3点」とは、箸一膳、お茶碗(または茶碗)、お椀のことです。
o- is an honorific prefix, and is termed "bika go" (lit. beautifying word) nowadays.
「お」とは、丁寧語で、この頃は「美化語」と呼ばれています。
You must place the pair of chopsticks along the edge of the table, with the pointed ends directing to the left (even if you are left-handed). Place the rice bowl on your left and the soup bowl on your right.
箸を一膳、テーブルの端に沿って置きます。とがった先端を左に向けます(左利きの人でも)。お茶碗は左に、お椀は右に置きます。
Don't be innovative or creative when placing the three items!
この3点を置く際は、革新的、想像的にはならないで下さい!
Last night, I pickled three cucumbers in a 1:1 mixture (60 ml each) of mirin-like seasoning and vinegar plus 2/3 tsp salt and some shiso (perilla) leaves. They looked like this this morning.
昨晩は、キュウリを3本、みりん風調味料とお酢を1:1に混ぜたもの(60 mlづつ)漬けて、塩小さじ2/3とシソの葉を数枚入れました。今朝はこんな感じです。

Chopsticks, etc.・お箸など
Last Friday, I went to a 100-yen shop to get new chopsticks for my children. I bought two pairs, yellow and red ones. My son selected the red (yes, red) one, and my daughter the yellow one.
この前の金曜日、子供たちに新しい箸を買いに100円ショップに行きました。黄色と赤、2膳買いました。息子は赤いの(黄色ではなく)の、娘は黄色いのを選びました。
In Japan, chopsticks, o-chawan (rice bowls), and o-wan (soup bowls) are personal belongings. That is, each family member has their own set of chopsticks, rice bowl, and soup bowl.
日本では、お箸、お茶碗、お椀は個人のものです。つまり、家族それぞれ、自分の箸、茶碗、お椀を1セット持っています。

The Most Important Ingredient for Japanese Cuisine/日本料理で一番大事な食材
I haven't talked about the most important ingredient for Japanese cuisine: soft water. Japanese cuisine absolutely calls for soft water.
日本料理で一番大事な食材のことを話していませんでした。軟水。日本料理には軟水が是非とも必要です。
Generally, the water in Kanto (Eastern Japan, which includes Tokyo) is harder than that in Kansai (Western Japan, which includes Kyoto and Osaka), and this is one reason why dried bonito was used in Kanto for dashi, while kombu was used in Kansai. You cannot extract umami components from kombu if the water is hard.
一般的に、関東の水は関西の水より硬水で、それが、関東では鰹節が出汁に使われ、関西では昆布が使われていた一つの理由です。硬水だと、昆布から旨み成分を抽出することができません。
The other reason why kombu was popular in Kansai is that it was easy to ship kombu from Hokkaido, where it was collected, to Kansai via the Sea of Japan, but not easy to ship it to Kanto via the Pacific Ocean.
昆布が関西で人気があったもう一つの理由は、産地である北海道から関西へは日本海を通って運ぶのは簡単だったが、関東へ太平洋を通って運ぶのは簡単ではなかったことです。
I once did some google search, and I was glad to find that the water here in my area was very soft (hardness: 16).
以前、グーグルで検索したんですが、私の住む地域の水はとても軟水(硬度16)であることが分かり、うれしかったです。

Ichi-Ju-San-Sai (One Soup and Three Dishes)/一汁三菜
As you may know, a typical, rice-centered Japanese meal is hierarchically structured, with rice (the king) at the top. Soup, usually miso soup, (the queen) is required not optional, and all other dishes, no matter how delicious they are by themselves, are mere humble servants. In fact, these dishes, called okazu, are meant to be eaten with rice and are, therefore, seasoned accordingly.
ご承知の通り、典型的な、ご飯中心の日本の食事は、ご飯(王様)を最高位とした、階層的構造になっています。汁、普通は味噌汁(女王様)は必要不可欠です。他の全ての料理は、どれだけそれだけで美味しくても、単なる謙虚な召使いに過ぎません。実際、このような料理はおかずと呼ばれ、ご飯と食べるよう意図され、従って、そのように味付けされます。
The other day, I got three bunches of enoki mushrooms from a neighbor who runs an enoki mushroom factory. Today, I used one of them.
先日、エノキタケ工場を経営する隣人からエノキタケを3株もらいました。

Tonight's supper is one example of an "ichi-ju-san-sai" meal.
Nowadays, san-sai are considered one shu-sai (main dish) and two fuku-sai (side dishes).
The shu-sai today was gyoza (store-bought).
The two fuku-sai are stir-fried vegetables and simmered kiriboshi daikon.
We also had momotaro tomatoes and lightly pickled cucumbers. Momotaro is the most popular tomato variety in Japan.
今日の夕食は一汁三菜の一例です。
現在では、三菜は1つの主菜と2つの副菜と考えられています。
今日の主菜は餃子(出来合いのもの)。
2つの副菜は野菜炒めと切干大根の煮物です。
また、桃太郎トマトとキュウリの朝漬けも食べました。桃太郎は日本では一番人気のあるトマトの品種です。
