Kanto-Style Sukiyaki/関東風すき焼き

On the third day of the New Year, my family had Kanto-style sukiyaki as the third nabemono made with the new donabe.
新年の三日目には、新しい土鍋で作る3番目の鍋物として関東風のすき焼きを食べました。

Just take a look at the domestic (which means expensive) kuroge gyu beef.
国産の(つまり、高価な)黒毛牛を見て下さい。

This is actually kuroge gyu (black-haired cattle) shimofuri (marbled) scraps.
実際は、黒毛牛霜降りの切り落としです。

Kanto-style sukiyaki calls for warishita (a mixture of any of water, soy sauce, sake, mirin, and sugar that is prepared beforehand). I didn't want to make warishita, so I just put water, soy sauce, sake, and mirin in the donabe, and brought the mixture to a boil.
関東風すき焼きには割り下(前もって作っておく、水、しょう油、酒、みりん、砂糖の混合物)が必要です。私は割り下を作りたくなかったので、単に、土鍋に水としょう油と酒とみりんを入れ、沸騰させました。


This is the portable burner (called a casette konro in Japanese). There seem to be no such products outside of Japan.
これが携帯型バーナー(カセットコンロ)です。日本以外にはこのような製品はないようです。

This particular sukiyaki differs from the regular one in that it contains dried shiitake instead of fresh ones (because we have plenty of them as gifts) and momen dofu (< tofu) instead of yaki dofu (grilled tofu). Most importantly, we had the beef in the shabu-shabu style because we didn't want to overcook such expensive beef! I enjoyed the tender texture of the beef, but I have to say I very much prefer gyudon (beef bowl) to sukiyaki!
このすき焼きは通常のと異なり、生のシイタケの代わりに干しシイタケを使い(お土産としていっぱいもらったので)、焼き豆腐の代わりに木綿豆腐を使っています。一番重要なことは、牛肉をしゃぶしゃぶ風に食べたことです。こんな高価な牛肉を煮過ぎたくなかったので。牛肉の柔らかい食感を楽しみましたが、本当はすき焼きより牛丼のほうがずっと好きです!

Sushi for Supper/夕飯に寿司

On the second day of the new year, my family had sushi for supper, as I had planned.
新年の二日目には、計画通り、家族で夕飯に寿司を食べました。

One factor determining the quality of nigiri zushi (< sushi) at least at the traditional sushi shop level in Japan, as opposed to the kaiten zushi (conveyor-belt sushi) restaurant level and the supermarket level, is the temperature difference between shari (vinegared rice) and neta (topping). At decent sushi shops, sushi chefs take utmost care to maintain their shari at "hitohada" (human skin temperature) and individual neta (toppings) at appropriate lower temperatures.

To determine how important it would be to ensure a proper temperature difference between shari and neta, I decided to keep the shari and the neta separate and place the neta on top of the shari just before eating.

日本の伝統的な寿司屋のレベルでは(回転寿司屋やスーパーのレベルとは対照的に)、握り寿司の質を決める一つの要素はシャリとネタの温度差です。まともな寿司屋では、職人がシャリを人肌に、個々のネタをそれより低い温度に保つよう細心の注意を払っています。

シャリとネタを適切な温度差に保つことの重要性を調べるため、シャリとネタを別々にし、食べる直前にネタをシャリの上に載せることにしました。

To make sushi rice, you first cook rice with 5-10% less water than usual.
寿司飯を作るには、まずお米を通常より5~10%少ない水で炊きます。


You don't necessarily have to use a wooden sushi oke (lit. sushi tub). Any nonmetallic bowl will do.
必ずしも木製の寿司桶を使う必要はありません。金属製ではないボールで十分です。

Each shari base should be about 20-25 g in weight.
シャリの重さはおよそ20~25 gにします。

Bigeye tuna, salmon, and buri (adult yellowtail):

Use a sharp knife to slice each fillet into neta (toppings).
鋭い包丁でそれぞれを切って、ネタを作ります。

I used my Shigefusa petty knife because it can cut better than my sashimi knife. Each neta should be about 6-8 cm long, 2-3 cm wide, 0.5 cm thick, and weigh about 10-15 g.
私の場合は、重房のペティナイフのほうが刺身包丁より切れるので、そっちを使いました。ネタはそれぞれ、長さ6~8センチ、幅2~3センチ、厚さ0.5センチ程度、重さは10~15 gとします。

It contains dried shiitake, satoimo (taro), carrot, daikon (not visible), and fu (gluten). It is supposed to be an osechi dish.
干しシイタケ、里芋、ニンジン、大根、お麩が入っています。御節料理の一つです。

Conclusions: The neta that I kept in the fridge were simply too cold. I didn't enjoy having hitohada shari with fridge-cold neta. I didn't bother to measure the temperature of neta, but I think that neta at 10-15C should be much better. But, quite frankly, I don't mind at all having shari and neta that are both at room temperature because I've been used to such sushi since childhood, like most Japanese. I think I'll make nigiri in the normal way next time.
結果:  冷蔵庫に入れていたネタは冷たすぎです。人肌のシャリと冷蔵庫の温度のネタを一緒に食べるのは楽しくありませんでした。ネタの温度をわざわざ測りませんでしたが、10~15度程度のシャリのほうがずっといいと思います。でも、率直に言って、共に室温のシャリとネタを食べるのは全然気になりません。大半の日本人同様、子供の頃からずっとそんな寿司に馴れているので。今度は握りを普通の方法で作ろうと思います。

Humble Osechi/質素な御節(おせち)

On New Year's Eve, my family had toshikoshi soba (year-crossing buckwheat noodles) for supper, like tens of million people in Japan, together with some tempura, but we skipped "toshitori zakana", which is salmon in Niigata. Toshitori zakana is the fish that is eaten on New Year's Eve, and is buri (adult yellowtail) in Kansai (Western Japan) and salmon in Kanto (Eatern Japan). That being said, the term "toshitori zakana" itself was unheard-of when I lived in Tokyo.
大晦日には、日本にいる何千万の人と同じように、我が家族では年越しそばを天ぷらと一緒に食べました。年取り魚(新潟では鮭)は食べませんでした。年取り魚とは、大晦日に食べる魚のことで、関西ではブリ、関東では鮭です。と言うものの、東京にいた頃は、年取り魚という言葉自体、聞いたことはありません。

And, today, we had o-zoni for late breakfast. In Niigata, o-zoni contains salmon and seasoned with soy sauce (and salt). The mochi are rectangular. (In Kansai, they are supposed to be circular, although I have no idea whether this is still true.) To the surprise of someone like me, who was born and bred in Tokyo, the people in Niigata simmer mochi, not grill, before putting them in zoni.
そして今日は、遅い朝食としてお雑煮を食べました。新潟では、お雑煮には鮭が入っていて、しょう油(と塩)で味付けします。餅は長方形です。(関西では、丸餅ということになっています。今でも本当にそうなのか、分かりませんが。)私のように東京で生まれ育った人間にとっては驚きですが、新潟の人たちは餅を雑煮に入れるまえに、焼くのではなく、煮ます。

Takenoko no O-suimono (Bamboo Shoot Clear Soup)/タケノコ(たけのこ、筍)のお吸い物

In days of old, bamboo shoots were a seasonal ingredient, available only in spring, but now water-packed ones are available all year round.
Takenoko no o-suimono is a favorite of my daughter's. She says she can never get tired of it.
Note: Takenoko (bamboo shoots) go very well with wakame seaweed. Takenoko need not necessarily be accompanied by wakame, but when we say takenoko no o-suimono, it almost always means clear soup with takenoko and wakame.
昔はタケノコ(たけのこ、竹の子、筍)は、春にしか手に入らない旬の食材でしたが、今では水煮のものが一年中手に入ります。
タケノコのお吸い物は娘の好物です。飽きることはないと言ってます。
注: タケノコはワカメ(わかめ、若布)ととてもよく合います。必ずしもタケノコにワカメを添える必要なないのですが、タケノコのお吸い物と言うと、大抵、それはタケノコとワカメのお吸い物のことです。


I usually use cheap dried wakame. To reconstitute it, add lukewarm water.
普段は安い乾燥ワカメを使っています。戻すには、ぬるいお湯を入れます。

It will be reconstituted within minutes. Drain.
数分で戻ります。水を切ります。


Sorry, I don't have a recipe to share. In this pot, I added 2 tsp instant dashi and 1 tsp salt. Add thinly sliced bamboo shoots, bring to a boil, and stop the heat immediately. Add 1 tsp soy sauce. I used dark soy sauce.
すみませんが、レシピーはありません。この鍋に出汁の素を小さじ2、塩を小さじ1入れました。薄切りしたタケノコを入れ、沸騰させ、すぐに火を止めます。しょう油を小さじ1入れます。私は濃口しょう油を使いました。


I, for one, do not add wakeme to the pot. I put some wakame in an individual o-wan (soup bowl), and add some soup and takenoko.
私自身はワカメを鍋に入れません。ワカメを少し、個々のお椀に入れ、汁とタケノコを入れます。
The reason for this is that wakame can go stale so quickly in the hot hot. Within, say, four minutes, it will no longer taste "fresh".
理由は、ワカメは厚い鍋の中ではすぐに新鮮さがなくなるからです。4分も経たずに、新鮮味がなくなります。

Edited to add: I forgot to mention that I used about half the takenoko.
追記: 言い忘れました。タケノコは半分しか使ってません。

A small sprig of kinome (young leaves of sansho (Japanese pepper)) is often used to give additional fragrance. Mitsuba (trefoil) or yuzu zest may also be used.
木の芽(山椒の若葉)を香り付けによく使います。三つ葉や柚子の皮も使うことがあります。

As I mentioned in a comment, the white substance you will see when you cut a water-packed bamboo shoot is a type of amino acid called tyrosine. It is harmless, and is known to have some medical effects.

Diamond Whetstone as a Stone Fixer/ダイヤモンド砥石を面直しとして

This morning, I tried making my present whetstone flat with the double-sided diamond whetstone.
今朝、現在持っている砥石を両面ダイヤモンド砥石で平面にしてみました。

It may not be apparent from the photo, but my whetstone is rather concave on both sides.
写真では分からないかも知れませんが、この砥石は両面ともかなりくぼんでいます。


Just place the diamond whetstone on the top of the whetstone and move the former back and forth. You don't have to apply downward force because the diamond whetstone is heavy enough.
During the process, rinse the diamond whestone with running water if required.
砥石の上にダイヤモンド砥石を載せ、前後に動かすだけです。ダイヤモンド砥石はかなり重いので、下には力を入れる必要はありません。
この最中、必要に応じて流水でダイヤモンド砥石を洗ってください。

Although it was my first attempt, I managed to make both sides of my whetstone flat within a few minutes. What a great stone fixer!
初めての試みでしたが、数分で砥石の両面を平面にすることができました。素晴らしい面直しです!
Edited to add:
After making the whetstone flat, be sure to chamfer all sides, using the diamond whetstone.
追記:
砥石を平面にした後、忘れずに、ダイヤモンド砥石で全ての辺を面取りしてください。

I forgot to mention: Use the #400 side of the diamond whetstone. This particular diamond whetstone is is a cheap one (can be had for less than 3,000 yen) on which diamond particles are electrodeposited.
I wonder how many diamond particles I have lost in this process.
言い忘れました。ダイヤモンド砥石の#400の面を使ってください。このダイヤモンド砥石は、ダイヤモンドの粒子が電着された安価な(3,000円以下で買える)ものです。今回の工程でダイヤの粒子がどれだけなくなったんでしょう。


It may be hard to tell from the photo, but my whetstone is now flat on both sides.
写真では分かり難いでしょうが、砥石は両面とも平面になりました。

Double-Sided Diamond Whetstone/両面ダイヤモンド砥石

I bought a double-sided diamond whetstone so I could sharpen my Shigefusa knives. Tonight, I sharpened my non-Shigefusa knives to check how good it was. Unfortunately, I found it was not as good as I had thought it would be.
Some more details tomorrow.
重房の包丁を研げるよう、両面ダイヤモンド砥石を買いました。今晩、どのくらいいい物か確かめようと、重房以外の包丁を研いでみましたが、残念なことに、思ったより良くなかったです。
また明日詳細を述べます。

Nothing to add at the moment, except that I'm thinking of buying another whetstone and using this diamond whetstone as a stone fixer (for making a whetstone flat). I know that some people do use diamond whetstones as stone fixers.

今のところ追記することはないです。ただ、別の砥石を買って、このダイヤモンド砥石は、砥石を平面にするために使おうかと思っています。ダイヤモンド砥石をそのような目的で使っている人もいるそうです。

Making Curry and Beef Stew at the Same Time/カレーとビーフシチューを同時に作る

It's the same old story: My children wanted to have different dishes for supper: curry for my daughter and beef stew for my son. It's easy to solve this problem if you have these:
いつものことです。子供たちが夕飯に別の料理を食べたいと言う。娘はカレー、息子はビーフシチュー。この問題を解決するのは、次のものがあれば簡単です。

Top: Store-bought curry roux
Bottom: Store-bought beef stew roux
上: 市販のカレールー
下: 市販のビーフシチューのルー

I simmered the ingredients in a big pot, and when they were done, I transferred half of them to another pot.
具を大きな鍋で煮て、火が通ったら、半分を別の鍋に移しました。

Right: Curry
Left: "Beef" stew (with pork in it)
右: カレー
左: 「ビーフ」シチュー(入っているのは豚肉)

Sorry, nothing to write home about...
別に大した話ではないですが...。
