Pickled Shougoin Daikon/聖護院大根の漬け物

I made a senmai zuke-style pickle, using the other half of the shougoin daikon that my father had sent us.
Senmai = Thousand slices
Zuke < Tsukeru = To pickle
Senmai zuke is a specialty of Kyoto, and is made of shougoin kabu (turnips), not shougoin daikon.
I tried this recipe (Japanese only).
父がくれた聖護院大根のもう半分で、千枚漬け風の漬物を作りました。
千枚漬けとは、京都の特産で、聖護院大根ではなく、聖護院蕪(カブ、かぶ)を使って作ります。
このレシピ(日本語のみ)を試しました。

Turnips, 1 kg when peeled
100 g sugar
75 cc vinegar
25 g salt
1-2 red peppers, chopped
Appropriate amount of kombu, thinly sliced
かぶ‥‥1kg(皮をむいた状態)
砂糖‥‥100g
酢‥‥75cc
塩‥‥25g
赤唐辛子(小口切り)‥‥1~2本
薄切り昆布‥‥適量

Peel daikon and cut crosswise into 2-mm thick slices.
大根は皮をむき、横に切り、2ミリ厚のスライスにします。

Put all ingredients in an I-wrap bag, rub well, and let sit in the fridge for 3 hours or longer.
材料を全てアイラップに入れ、よくもんで、冷蔵庫に3時間以上置いておきます。
Not bad, but I may add some more additional seasonings to make it taste better.
悪くはないですが、もっと美味しくするため、もと他の調味料を入れるかもしれません。

Izakaya/居酒屋

Tonight, I went to the tasting party held at the izakaya (Japanese pub) that will open on December 1 near my house.  Ten dishes and as much alcohol as you can drink for 3,000 yen, and you will receive gift certificates worth 3,000 yen that are valid to the izakaya.  It was hard not to go to the tasting party.
今晩は、家の近くで12月1日にオープンする居酒屋の試食会に行きました。料理が10品とお酒の飲み放題で3,000円。そして、その居酒屋で使える3,000円分の商品券をもらえる。試食会に行かないほうが無理です。

Dish 1:  Sperm sac (shirako in Japanese)
一品目: 白子
Dish 2:  Mushroom aemono
二品目: きのこの和え物
Dish 3:  Cold tofu
三品目: 冷や奴(ひややっこ)
Dish 4:  Assorted sashimi
四品目: 刺身の盛り合わせ
Dish 5:  Assorted pickles
五品目: 漬物の盛り合わせ
Dish 6:  Nigiri zushi
六品目: 握り寿司
Dish 7:  Simmered fish
七品目: 煮魚(にざかな)
Last dish:  Kenchin jiru (soup)
最後の料理: けんちん汁
I'm still drunk.  I failed to take photos of two dishes.  What were they?  I can't remember.
まだ酔ってます。料理を二つ撮るのを忘れました。何だったか、思い出せません。

Verdict:  A very good izakaya.  I'm willing to come again soon.  I hear that the chef/owner has worked  in a hotel in Yuzawa town.
結論: とてもよい居酒屋です。また近く行きたいと思います。オーナーシェフは湯沢町のホテルで働いていたそうです。

Shougoin Daikon, etc./聖護院大根など

Today, I got another box of foodstuffs from my father, which included one shougoin daikon and more than ten yuzu.
今日は、また父から食料を1箱もらいました。聖護院大根が一本と柚子が10個以上入っていました。
I phoned my father to thank him, and he said that shougoin daikon was best in miso soup.  So, I decided to put some of it in miso soup.  As you can see from the photo below, shougoin daikon is dense.
お礼を言うため、父に電話すると、聖護院大根は味噌汁に入れるのが最高だと言うので、少し味噌汁に入れることにしました。次の写真で分かるように、聖護院大根は身がしまっています。 
I also added some komatsuna (a type of green) to the miso soup.
小松菜も少し味噌汁に入れました。
Despite what he said to me, I think shougoin daikon is better in simmered dishes and when pickled.
父はそう言ってますが、私は聖護院大根は煮物や漬物にしたほうが美味しいと思います。

A fukusai (side dish) I made for supper tonight was simmered hijiki.  As usual, I added some uchi mame.
今日の夕飯の副菜として、ひじきの煮物も作りました。いつも通り、うち豆を入れました。  
As I mentioned several times in my blog, uchi mame (lit. beaten beans) are soybeans beaten flat. They are a specialty of Niigata that I learned about after I came here.  A great advantage is that they can be cooked in a short time of about 5 min.
このブログで何回も述べているように、うち豆とは、平らに叩いた大豆のことです。新潟の特産で、私はこちらに着てから知りました。大きな利点は、5分程度という短時間で煮えることです。

いつものひじきの煮物
You can also make hijiki salad, using mayonnaise.
マヨネーズを使って、ひじきサラダも作れます。

Another dish I made was kabocha soup.
他には、かぼちゃスープも作りました。
The shusai (main dish) was ground beef-and-pork hamburgers (scorched a little).
主菜は牛と豚の合い挽き肉のハンバーグです(ちょっと焦げちゃいました)。
I made grated daikon sauce with mentsuyu (noodle soup) concentrate, grated daikon, and vinegar.
濃縮タイプの麺つゆと大根おろしとお酢で、大根おろしソースを作りました。

I will add yuzu peel to pickled hakusai (Chinese cabbage).
柚子の皮は白菜の漬物に入れます。

Saba no Miso Ni (Mackerel Simmered in Miso)/さばの味噌煮

I made saba no miso ni as part of supper tonight.
Saba = Mackerel
No = 's
Ni < Niru (to simmer)
今日の夕飯は、さばの味噌煮を作りました。

First, cut an x on the skin of each of four slices of saba.
Then, pour boiling water over them to remove odor.  This step is called shimofuri (lit. frosting).
Shimofuri can also mean marbled/marbling, as in shimofuri niku (marbled meat).
Place in a frying pan, and add: 
175 ml water
25 ml sake
1 knob ginger, sliced

Then, I decided to add mirin (about 50 ml), not sugar, to the pan.

Put on an otoshi buta (lit. drop lid) or something similar (aluminum foil or paper towels), and put on a lid.  Simmer for 2-3 min.  Add some miso (2-3 tbsp) to the pan.  Simmer for another 5 min. or so.

まずは、4枚のさばの切り身の皮それぞれにXの切れ目を入れます。
次に、熱湯をかけて、臭みを取ります。これを霜降りと言います。
霜降りは、霜降り肉など、marbled/marblingという意味もあります。
フライパンに入れ、以下のものも入れます:
水 175 ml
お酒 25 ml
薄切りした生姜 ひとかけ

それから、砂糖ではなくみりんを(約50 ml)入れることにしました。

落し蓋や類似した物(アルミホイルやキッチンペーパー)を載せ、蓋をします。2~3分煮ます。味噌を少し(大さじ2~3)入れます。さらに5分程度煮ます。

I tasted the liquid before adding additional miso, and decided not to add any more miso.
味噌を足す前に汁を味見して、味噌は足さないことにしました。
The resultant saba no miso ni was much less sweet and salty than canned.
出来上がったさばの味噌煮は、缶詰のより砂糖も塩分も控えめです。

Daikon Mochi/大根もち

This is my very first attempt to make daikon mochi.  I searched for recipes and found some.  I decided to mix 400 g grated daikon with 200 g katakuriko (potato starch) and add some shredded naga negi and some salt only (no dried shrimp, etc.)  I also decided to pan-fry it in much the same way as I would make a pan cake.
初めて大根もちを作りました。レシピーを探し、いくつか見つかりました。だいこんおろし400 gと片栗粉200 gを混ぜ、(干し海老などは入れずに)刻んだねぎと塩だけを入れることにしました。また、ホットケーキを作るのとほぼ同じ方法で焼くことにしました。
It was good enough for me, but my children said it was not good.
私にとっては十分美味しいですが、子供たちは、まずいと言ってました。

The shusai (main dish) was tonkatsu, which I made from more than 900 g pork tenderloin.  What you see in the photo is about half of all the tonkatsu I made.
主菜は、私が豚のヒレ肉を900 g以上使って作った豚カツです。写真に写っているのは作った豚カツのおよそ半分です。
I microwaved the rest of the daikon first and then simmered in a pot of dashi, soy sauce, and mirin (15:1:1 ratio).
残りの大根はまず電子レンジで加熱してから、出汁、しょう油、みりん(割合は15:1:1)の入った鍋で煮ました。
The sauce for the daikon mochi was:
2 tbsp mentsuyu (noodle soup) concentrate
2 tbsp water
1 tsp sesame oil
Some shredded naganegi
大根もちのソースは、
濃縮麺つゆ 大さじ2
水 大さじ2
ごま油 小さじ1
刻んだながねぎ
です。
This is how I usually have tonkatsu:  Mustard, lemon juice, tonkatsu (or chuunou) sauce, and lots of shredded cabbage.
私の普段の豚カツの食べ方です。からし、レモン果汁、豚カツ(または中濃)ソース、そして千切りキャベツをたくさん。   
I think that my first attempt to make daikon mochi was a failure.  I think I will use joushinko (rice flour) or a combination of katakuriko and wheat flour next time.
私が初めて作った大根もちは失敗だったと思います。今度は、上新粉を使うか、片栗粉と小麦粉を合わせようと思います。

A Few Notes on Wasabi/わさびに関して少し

Here is some practical information about wasabi in Japan.
日本のわさびに関する実用的な情報です。

Needless to say, wasabi is called wasabi in Japan, but to clearly distinguish it from horse radish, which is called seiyou wasabi (lit. Western wasabi), it is also called hon wasabi.  Hon means real, authentic, etc.
言うまでもなく、日本でも「わさび」は「わさび」と呼ばれていますが、ホースラディッシュ(「西洋わさび」と呼ばれる)とはっきり区別するため、本わさびとも呼ばれます。「本」とは、本当の、正真正銘の、という意味です。

When you purchase a pack of sashimi in a supermarket in Japan, you will usually see a small packet of wasabi attached, such as the one below.
日本のスーパーで刺身のパックを買うと、普通、次のようなわさびの小袋が付いてきます。 
The ingredients label says:  Hon wasabi, seiyou wasabi, mizuame (starch syrup), vegetable oil, salt, sour agent, gardenia pigment, and spice extracts.
原材料名は、本わさび、西洋わさび、水飴、植物油、食塩、酸味料、クチナシ色素、香辛料抽出物です。 
The term "hon wasabi" is placed before the term "seiyou wasabi", which means that this packet contains more "hon wasabi" than "seiyou wasabi".
「本わさび」という言葉が「西洋わさび」より先に表示されていて、これは、「本わさび」のほうが「西洋わさび」より量が多いということです。

I checked other wasabi packets, which happened to be in the fridge, and found they also contained more "hon wasabi" than "seiyou wasabi".
たまたま冷蔵庫にあった、他のわさびの小袋も調べましたが、それらも「本わさび」のほうが「西洋わさび」より量が多かったです。
I didn't know that even such cheap products now contain more hon wasabi.  What's more, the one below says that it uses domestic hon wasabi.
こんな安い製品にも現在では本わさびのほうが多いとは知りませんでした。その上、下の製品では、国内産の本わさびを使用していると書かれています。

There are some tubes of wasabi that contain no seiyou wasabi, like the middle one in the photo below.
下の写真の真ん中の製品のように、西洋わさびを含まない製品もあります。  
I tend to buy such a tube because it's only about 1.7 times more expensive than a cheap one that contains both hon and seiyou wasabi.
本わさびと西洋わさびを両方含んでいる安いのより1.7倍程度高いだけなので、私はこのような製品を買うことが多いです。

The one on the left is a new product from S&B, called Kizami Wasabi, which contains shredded wasabi stalks.
左のは「きざみわさび」というS&Bの新製品です。きざんだわさびの茎が入っています。
I thought it was a good product and bought one without checking the label.  I later found that it contained seiyou wasabi as well.
いい製品だと思って、表示を見ずに買ったのですが、後で、西洋わさびも入っていることに気付きました。
Finally, a tube of wasabi that contains 50% or more hon wasabi may have "hon wasabi shiyou" (hon wasabi used)" written on the package, while a tube of wasabi that contains less than 50% hon wasabi may have "hon wasabi iri" (hon wasabi contained) on the package.
最後に、本わさびが50%以上入ったわさびには「本わさび使用」と書かれていることがあり、本わさびが50%未満入ったわさびは「本わさび入り」と書かれていることがあります。

追記:

Kona (= powder) wasabi, wasabi in powder form, is usually made from horse radish.  Wasabi in a tube is called neri (= kneaded) wasabi.  I'm not implying that neri wasabi is superior to kona wasabi or that hon wasabi is superior to seiyou wasabi (horse radish).  I wouldn't mind at all having sashimi with kona wasabi because that is something I grew up with and kona wasabi, if properly mixed with lukewarm water (about 40C), is more pungent than hon wasabi.
通常、粉わさびはホースラディッシュからできています。チューブに入ったわさびは「練りわさび」と呼ばれます。練りわさびのほうが粉わさびより優れている、本わさびのほうが西洋わさび(ホースラディッシュ)より優れていると言う気はありません。私自身は刺身を粉わさびで食べることはまったく気にしません。小さい頃から食べなれているし、粉わさびのほうが、正しくぬるま湯(摂氏40度くらい)の水で溶くと、本わさびより辛みが強いからです。

Daikon Salad/大根サラダ

This daikon salad was made not by me but by my wife.

Ingredients are daikon, carrot, canned tuna, and mayonnaise.
この大根サラダは、私ではなく、妻が作ったものです。
材料は大根、にんじん、ツナ缶、マヨネーズです。
Today, my wife got lots of (about 20) daikon from her father.  That means you are going to see a lot more daikon dishes from now on in my blog (laugh).
今日、妻は実父から大根をたくさん(20本くらい)もらってきました。ということは、このブログには、もっと大根を使った料理が出てくるということです(笑)。
