Osechi at my Wife's Parents' House/妻の実家のおせち

On New Year's Eve, my wife and I visited her parents' house to stay.  
We had a wonderful dinner that night, including toshitori zakana and toshikoshi soba.
Toshitori zakana refers to the special fish that you have on New Year's Eve.
Toshitori zakana:
toshi = year, age, etc.
tori < toru = to take, to gain, etc.
toshi o toru = to get old
zakana < sakana = fish
toshikoshi soba:
toshi = year, age, etc.
koshi < kosu = to pass, etc.
soba = buckwheat noodles
In general, the toshitori zakana is salmon in Kanto (Eastern Japan) and buri (adult yellowtail) in Kansai (Western Japan).  Note, however, that I, for one, hadn't heard the word when I lived in Tokyo.
大晦日(おおみそか)は、妻の実家に泊まりに妻と一緒に行って来ました。その日の夜は、年取り魚や年越しそばなど、すごい料理を頂きました。
年取り魚とは、大晦日に食べる特別な魚のことです。
年取り魚(としとりざかな)
年(とし)= year, age, etc.
取り < 取る = to take, to gain, etc.
年を取る = to get old
魚(ざかな) < 魚(さかな) = fish
年越しそば:
年 = year, age, etc.
越し < 越す = to pass, etc.
そば = buckwheat noodles
一般的に、年取り魚は関東では鮭(さけ、サケ、しゃけ、シャケ)で、関西では鰤(ぶり、ブリ)です。しかし、私自身は東京に住んでいる頃はこの言葉を聞いたことはありません。

On New Year's Day, we had these gorgeous osechi as breakfast.
元旦には、このゴージャスな御節を朝食に食べました。

Right:  Two different types of datemaki (rolled omelette mixed with fish paste)
Center:  Kazunoko (herring roe)
Left:  Kuwai (threeleaf arrowhead, not water chestnut)
右: 伊達巻、二種類
中央: 数の子
左: 慈姑、くわい、クワイ(英語ではthreeleaf arrowhead。water chestnutではない) 
Top right:  Kuri kinton (mashed sweet potatoes with sweetened chestnuts)
Left center:  Another type of datemaki, different types of simmered beans such as kuromame (black beans), and chorogi (stachys affinis, Chinese artichoke) (red ones)
Bottom right:  Kouhaku (red and white) namasu (daikon and carrot seasoned with vinegar, salt, and sugar), kouhaku renkon (lotus root)
Bottom left:  Prawn, tazukuri or tatsukuri (small dried sardines seasoned with soy sauce and sugar), chashu(?) (roasted pork fillet)
右上: 栗きんとん
左上: 別の種類の伊達巻、黒豆など色々な種類の煮豆、チョロギ(チョウロギ)(赤いやつです)
右下: 紅白なます、紅白れんこん
左下: 海老、田作り(たづくり、たつくり)、チャーシュー(?)
The leftmost container (tier of a juubako (tiered boxes) contains:
Simmered octopus, kouhaku (red and white) kamaboko (fish paste), tazukuri or tatsukuri, and kanten (agar-agar) (green ones)
一番左の入れ物(重箱の一段)には、
煮ダコ(煮たたこ)、紅白かまぼこ、田作り(たづくり、たつくり)、寒天(緑のやつです)が入っています。
Later, my brother-in-law's wife (that is, the o-yome-san of the parents' house) brought more kouhaku namasu with chorogi on top.
後で、義兄の奥さん(つまり、実家のお嫁さん)が紅白なますとチョロギをもっと持って来ました。
Naturally, we had ozoni, too.  This is a Niigata style ozoni.
もちろん、お雑煮も頂きました。新潟風のお雑煮です。
My wife also had mochi with an (or anko).  The o-yome-san said she had also made a Tokyo style ozoni, which she would serve for lunch, but I missed it because I had to leave before noon.
妻は餡子(あんこ)もちも食べました。お嫁さんは東京風のお雑煮も作ってあり、それは昼食に出してくれるとのことでしたが、私は昼前に帰ったので、食べられませんでした。

I walked back home because I wanted to burn off some calories.  Despite the weather forecast, the weather was very good.
カロリーを少し消費したかったので、歩いて家まで帰りました。天気予報が外れて、天気はとても良かったです。

Humble Okonomiyaki/質素なお好み焼き

I had a considerable amount of tenkasu (also called agedama) in the freezer, and I wanted to use it up before the New Year.  I measured it and it was 120 g in total.  Tenkasu is a byproduct of making tempura, but you can make tenkasu intentionally, and you can also buy premade tenkasu in a supermarket.  I don't remember how many tempura making sessions I did to get this amount of tenkasu.  I guess the tenkatsu was a result of making tempura for supper for at least five times.
冷凍庫に天かす(揚げ玉)がかなりあり、新年を迎える前に使い切りたいと思いました。測ると、全部で120 gありました。天かすは天ぷらを作った時にできる副産物ですが、意図的に作ることもできるし、出来合いの天かすをスーパーで買うこともできます。これだけ天かすができるまで何回天ぷらを作ったか覚えていませんが、少なくとも5回は夕飯に天ぷらを作った時にできた天かすだろうと思います。 
So, I made humble okonomiyaki for supper last night.
120 g tenkasu
60 g leftover store-bought okonomiyaki mix
120 g komeko (rice flour)
120 g hakurikoko (cake flour)
60 + 120 + 120 = 300 g
1 egg
300 ml water
1 pack dried shrimp
300 g cabbage, coarsely chopped

I made four okonomiyaki, using two 18-cm dia. frying pans.
と言うわけで、昨日の夕飯には質素なお好み焼きを作りました。
天かす 120 g
残っていた市販のお好み焼き粉 60 g
米粉 120 g
薄力粉 120 g
60 + 120 + 120 = 300 g
卵 1個
水 300 ml
キャベツ 粗みじん 300 g

直径18 cmのフライパンを2つ使って、お好み焼きを4つ作りました。

Note:  The ratio of (flour + water) to cabbage should be about 1:1, but I made a mistake of mixing the flour + water and cabbage at a ratio of 2:1.  I don't know why, but the okonomiyaki turned out fine.
注: (粉+水)とキャベツの割合は、およそ1:1にすべきですが、私は粉+水とキャベツを2:1で混ぜてしまいました。なぜか分かりませんが、お好み焼きはうまくできました。

It may be hard to see from the photo, but I sprinkled a generous amount of ao nori first, followed by a generous amount of katsuobushi (dried bonito shavings), chuunou sauce, and ketchup.  No mayonnaise for me.  Humble okonomiyaki by any standard, but I was satisified with it.
写真では見にくいですが、まず青海苔を沢山ふり掛け、それから鰹節を沢山ふり掛け、それから中濃ソースとケチャップを掛けました。私はマヨネーズは使いません。どう見ても、質素なお好み焼きですが、私は満足しました。

Making Wari Boshi Daikon/割り干し大根作り

I made wari boshi daikon, using one daikon.  I first cut the daikon in half crosswise, and then cut each half into long strips of 1 x 1 cm.  It took me 4-5 days to dry the daikon completely indoors.
大根を一本使って、割り干し大根を作りました。まず大根を横に半分に切って、それぞれ1 x 1 cmに長く切りました。室内で完全に干すのに4、5日かかりました。
They were 95 g in total.
全部で95 gでした。
I made harihari zuke again, using less soy sauce and vinegar this time (75 ml each) and less sugar (about 25 g).
またはりはり漬けを作りました。今回は、しょう油とお酢の量を減らし(各75 ml)、砂糖も減らしました(約25 g)。

Very good!  I think I'll dry other daikon, too!
とても美味しいです。他の大根も干そうと思います。

Takohiki no Ryu no Tororo Meshi/蛸引きの竜のとろろ飯

とろろ飯の続き

We had some (about 150 g) of the yamato imo left in the fridge, and I wanted to try the tororo meshi mentioned in Episode 3 of the TV drama, Osen.
大和芋の残りが少し(150 gほど)冷蔵庫に残っていたので、テレビドラマ「おせん」の第三話に出てくるとろろ飯を試したいと思いました。


On December 23, I asked my wife to make simmered fish (righteye flounder) as part of supper that night, so I could make the tororo meshi, using the leftover broth today.
12月23日、夕飯に煮魚(カレイ)を作ってくれるよう妻に頼みました。今日、残りの汁を使って、そのとろろ飯を作れるように、です。
The original recipe (Japanese only) calls for 300 g jinenjo (wild mountain yam) and 500 ml broth from simmered fish, but I  decided to mix 150 g yamato imo and 150 ml broth.
元のレシピでは、自然薯が300 gに煮魚の汁を500 ml使っていますが、私は150 gの山芋に150 mlの汁を合わせました。 
I made mugi meshi (rice cooked with barley), following the rice to barley ratio of 7:3, which is called for by the recipe.
レシピに書かれた割合(米7、麦3)で麦飯を作りました。 
Unfortunately, my son said that he was a little disappointed because he liked the tororo to be less soupy.
残念なことに、息子は少しがっかりしたと言いました。とろろは汁っぽくないほうが好きだからだそうです。

I brought all the other dried persimmons to the kitchen, wondering what to do with them.  I searched the Internet for an answer.
残りの干し柿を全部、台所に持って来て、どうしようか考えました。ネットで答えを探しました。
Eureka!  Freezing persimmons will remove astringency from them!  I put the permissions in the freezer right away.  Today, about one week later, I asked my son if he wanted to try one.  Of course, I told him about the possible risk!  My son had it, and said it was good!  He soon took two others out of the freezer and had them, too.

見つかりました!柿を冷凍すると、渋が抜ける!すぐに柿を冷凍庫に入れました。約一週間後の今日、息子に試してみないかと尋ねました。もちろん、リスクは説明しました!息子は食べ、美味しいと言いました。すぐに冷凍庫からまた二つ出して、食べました。
I'm really glad that I didn't throw them away.
NOTE:  If you freeze fresh astringent persimmons, it will take one month or longer until the astringency is removed from them.
捨てなくて、本当に良かったです。
注: 生の渋柿を冷凍する場合は、渋が抜けるのに一ヶ月以上かかります。

Le Lectier/ルレクチエ

Today, I have finally bought a pack of three le Lectier pears for 398 yen.  (I have waited for this time to come!)
今日はやっと、ルレクチエ3個パックを398円で買いました(この時が来るのを待ってました!)

One important characteristic I learned from this webpage (Japanese only) is that, unlike with apples, salt water is not effective in preventing this pear from discoloration.  Another is that the skin of this pear is thin, so you can eat it without peeling.
このウェブページで知った重要な特徴は、りんごと異なり、塩水を使ってもこの梨の変色は止められないこと、ともう一つは、この梨の皮は薄いので、皮をむかなくても食べられることです。

The difference from La France was obvious.  Le Lectier is much more fragrant and flavorful.

Chicken Yuan Yaki/鶏の幽庵焼き

Yuan yaki refers to a yakimono (grilled dish) made by first marinating slices of fish, for example, in a mixture of soy sauce, mirin, and sake (for example, equal amounts of them), usually plus slices of yuzu (or other citrus fruit), and then grilling.  It is said that yuan yaki was invented by Kitamura Yuan, a master of tea ceremony in the Edo period.
幽庵焼き(幽安焼き、柚庵焼き、祐庵焼き、ゆうあんやき)は、焼き物の一種で、魚の切り身などをしょう油、みりん、お酒(例えば、全て同量)、さらに柚子(または他の柑橘系果物)のスライスを混ぜたものに漬け込んでから、焼いた料理です。幽庵焼きは、江戸時代の茶人、北村幽庵が発明したものと言われています。

I asked my wife to make chicken yuan yaki.
Ingredients:
1 (approx. 300 kg) chicken breast (or thigh)
1/2 yuzu, sliced
2 tbsp each of soy sauce, mirin, and sake

1.  Marinate chicken in the mixture for 30 min. or longer.
2.  Pan-fry with the skin side first.
妻に、鶏の幽庵焼きを作ってくれるよう頼みました。
材料:
鶏の胸肉(腿肉) 1枚(約300 g)
柚子 半分、スライスする
しょう油、みりん、お酒をそれぞれ大さじ2

1.  鶏肉を30分以上、漬け込む。
2.  フライパンで皮から先に焼く。
