Anko Nabe/あんこう鍋

My father likes anko (angler fish, monk fish) nabe very much. Since I came to my parents' house in November 3, this has been the second anko nabe.

This pack specifically for use in nabe contains just a small amount of anko liver, so my father gets a pack of anko liver.

Other ingredients:
Carrot, nage negi, daikon, Chinese cabbage
As instructed by my father, I first mashed half the anko liver in a pot while heating.

Then, I put all the vegetables, added water, and brought the pot to a boil. I then added the anko and the other half of anko liver.
10 minutes or so later, all the ingredients looked done.
I put just enough amount of miso in the pot. Done!
My father is very, very particular about miso brands. Currently, he uses only this particular brand (very expensive!), bought from JA (short for Japan Agricultural Cooperatives).

Every year, he makes miso by himself, but this year, he fails to do so.

When I hear the word anko, I often recall this particular Iron Chef episode in which the main ingredient was anko.

Hiroyuki, I hope your parents are doing well, and thank you so much for showing us what you and your father have been up to while you're in Chiba. The soba noodles and nabe look amazing! Ankimo is such a luxury, I haven't had it in ages...

Amy: Thanks for your kind words about my parents. They are OK, except that my mother broke her left arm in late November, and I have to support them a lot.

And, yes, ankimo is the right word! I somehow refrained from using the word. For those who are not familiar with the word, ankimo is short for anko no kimo (angler fish's liver).

I had assumed that ankimo is a luxury item, but ankimo exported from China is really cheap!

The Anko nabe fish soup looks yummy. Next time I have to make a soup when I get fish liver. We usually fry or poach it here.

seeandoh: Anko liver is 40% fat. Select a fish that has a fat liver!
