Nogu Ichi (Farm Tool Market) at Ichinomiya Shrine in 2013/2013年の一宮神社の農具市

Every year, Nogu Ichi (Farm Tool Market) is held at Ichinomiya Shrine on March 12.  I visit the market almost every year.

毎年、3月12日に一宮神社(いちのみやじんじゃ)で農具市(のうぐいち)が開かれます。私はほぼ毎年行っています。

It was a clear day today.  My kobushi tree now has a lot of buds on it.  Kobushi is unique in that white big flowers bloom in March to April before the leaves come out.
今日は晴天でした。我が家のコブシの木には蕾み(つぼみ)がいっぱいついています。コブシはユニークな木で、葉が出る前に白くて大きな花が3~4月頃咲きます。

Units Associated with Rice in Japan, Part II/日本の米に関する単位、パート2

Japan is a metric country, and rice is sold in 30 kg brown paper bags, as well as in 10, 5, 3, and 2 kg plastic bags, but in cooking, we still use the unit of go.  Other units associated with rice include sho, to, and koku.  These units are part of the Shakkan-ho, which derives from the Chinese units of measurement.

10 go = 1 sho
10 sho = 1 to
10 to = 1 koku
Thus, 1000 go = 1 koku

1 koku of rice (150 kg) was the amount consumed by a single person in one year.  Thus, 1 go of rice (150 g) was the amount consumed by a single person for one meal (1 go per meal x 3 meals per day x 365 days = 1,095 go).

Note:  Today, the annual per-capita consumption of rice is around 60 kg.  In 1962, about 50 years ago, it was 118 kg.

日本はメートル法を採用しており、お米は30 kgの茶色の紙袋や、10、2、3、2 kgのビニール袋で売られていますが、調理の際には、いまだに合という単位を使っています。お米に関する他の単位としては、升(しょう)、斗(と)、(こく)があります。これらの単位は尺貫法の一部で、尺貫法は中国の市制に由来します。

10合 = 1升
10升 = 1斗
10斗 = 1石
よって、1000合 = 1石

1石のお米(150 kg)は、一人が一年で消費する量でした。よって、1合のお米(150 g)は一人が一食で消費する量です(一食当たり1合 x 一日当たり3食 x 365日 = 1,095合).

注: 今では、一人当たりのお米の年間消費量は60 kgほどです。約50年前、1962年では118 kgでした。

Besides the units of volume, units of area are also associated with rice.  I was planning to write:  At the time of the Taika Reforms, 1 tan was decided to be an area needed to produce 1 koku of rice.  I later learned that this was not a well established fact, so let me just say that in ancient times, 1 tan was decided to be an area needed to produce 1 koku of rice.

1 tan = 991.74 m²
1 tan = 10 se
In ancient times,
1 tan = 360 tsubo (bu)
But, due to the nationwide land survey (Taiko Kenchi) started in 1582 by Toyotomi Hideyoshi, tsubo (bu) was changed as follows:
1 tan = 300 tsubo (bu)

Roughly, 1 tsubo is an area needed to produce rice consumed by a single person a day (3 go = 3 x 150 = 450 g).
1 tsubo = 3.3 m2 (1.818 m square)
The unit of tsubo is still widely used to express the area of a land or building.

Note:  Today, around 500 kg of rice can be produced from 1 tan of rice paddy.


体積の単位のほかにも、面積の単位もお米と関連しています。「大化の改新の時に一反(いったん)を一石(いっこく)のお米を作るのに必要な面積と決めた」と書こうと思っていたのですが、後で、このことは確実な事実ではないと知ったので、単に、「古代では、一反(いったん)を一石(いっこく)のお米を作るのに必要な面積と決めた」としておきます。

1反 = 991.74 m²
1反 = 10畝
古代では、
1反 = 360坪(歩)
でしたが、豊臣秀吉が1582年から始めた太閤検地(たいこうけんち)により、坪は次のように変わりました:
1反 = 300坪(歩)

大まかに言って、1坪は一人が一日に食べるお米(3合 = 3 x 150 = 450 g)を作るのに必要な面積です。
1坪 = 3.3 m2(1.818 m四方)
坪という単位は、土地や建物の面積を表すのに今でも幅広く使われています。

注: 現在では、一反の田んぼからお米が約500 kg収穫できます。

Pork Tenderloin Simmered with Vinegar/豚のヒレ肉のお酢煮

A love-hate relationship can last a long time.  These are the words that occur to me when I think of snow.  I make it a point to take a 20-40 minute walk every day.  Today, the weather was very good, and I saw signs of spring here and there.  How can I leave this beautiful place... despite the snow?
愛憎関係は長く続く。雪のことを考えると、この言葉が浮かびます。毎日、20~40分散歩するのが日課ですが、今日は天気がとても良く、あちこちで春の兆しが見られました。この美しい場所を離れられるか・・・雪は降りますが。

Today, I made pork tenderloin simmered with vinegar.  I also simmered natsumikan peels, cut a whole daikon and dried it, and took a container of nukadoko out of the freezer to make daikon stem and leaf nukazuke.
今日は、豚のヒレ肉のお酢煮を作りました。また夏みかんの皮を煮たり、大根一本を切って、干したり、ぬか床を冷凍庫から出して、大根の葉っぱのぬか漬けを作ったりしました。

I basically followed this recipe:  recipe for pork tenderloin simmered with vinegar (Japanese only).

500 g pork tenderloin
400 ml water
100 ml soy sauce
100 ml vinegar
100 g sugar (I used 100 ml mirin instead)
5 boiled eggs
Mizuna
基本的に、このレシピに従いました:豚ヒレ肉のお酢煮.

豚ヒレ肉ブロック 500 g
水  400 ml
醤油  100 ml
お酢 100 ml
砂糖  100 ml(私はみりんを100 ml使いました)
水菜


Combine water, soy sauce, vinegar, and sugar in a pot, bring to a boil, add pork, and simmer for 25 min. on medium to high heat.
水、しょう油、お酢、砂糖を鍋に入れ、沸騰させ、豚肉を入れ、25分間、中火~強火で煮る。
The vinegar keeps the pork tender.
お酢のおかげで豚肉は柔らかいままです。

Units Associated with Rice in Japan/日本の米に関する単位

Let me start with go.  One go is equivalent to 180 ml.  One go of rice has a weight of 150 g (140-160 g depending on how dry the rice is), and has 534 kcal.  When cooked with water (in the Japanese way), one go of rice increases by a factor of 2.2, and has a weight of 2.2 x 150 = 330 g.  One o-chawan or chawan (rice bowl) holds about 150 ml cooked rice (gohan), so one go of uncooked rice (o-kome or kome) results in a little over two bowls of cooked rice.
合(ごう)から始めます。一合(いちごう)は180 mlに相当します。一合のお米の重さは150 g (お米の乾燥度により140~160 g)で、カロリーは534 kcalです。炊くと、一合のお米は2.2倍に増え、重さは2.2 x 150 = 300 gになります。お茶碗(茶碗)には、ご飯(炊いたお米のこと)がおよそ150 ml入りますから、一合のお米は、ご飯2杯強になります。

In days of old, one go of rice was considered the amount of rice required by a single person for a single meal.
昔は、一合のお米は、一人が一食に必要なお米の量と考えられていました。

So, how was the unit of go determined?  We need to go back to 645, when the Taika Reforms were carried out.

では、この合という単位はどのように決められたのでしょうか?大化の改新が行われた645年にまで遡る必要があります。

A Trip to Ojiya, Part III/小千谷への旅、パート3

In the indoor pond, you can see lots of nishikigoi swimming.

I left Nishikigoi no Sato, and returned to Sun Plaza.  Before entering, I found this monument.

On the sales floor, I was amused to see kiriboshi daikon, wariboshi daikon, and dried enokitake sold together.

When I got to Ojiya Station, I felt a little thirsty, so I decided to buy canned drink from a vending machine.

I enjoyed my short trip very much.

A Trip to Ojiya/小千谷への旅

Not a food-related post but more like a diary entry.
食に関することではなく、日記のようなものです。

Yesterday, I went to Ojiya, about a 45-minute train ride from Shiozawa because I had to to go to Ojiya Tax Office to amend my tax returns for 2012 and 2011!  I didn't want to go to a tax office, but I thought this would be a great opportunity to visit Ojiya.
昨日は小千谷に行って来ました。塩沢から電車でおよそ45分のところです。2012年度と2011年度の確定申告を修正しに小千谷税務署に行く必要がありました。税務署なんて行きたくはないですが、小千谷を旅するいいチャンスだと思いました。

Shiozawa Station was renovated in October last year to match Bokushi Dori.

I have a lot to say about the renovation.  Firstly, you now have to go up five steps, instead of the previous one or two, to enter the station.  Secondly, the restroom, which was located outside the station, is now on the platform, so you can't use it unless you have a train ticket.  I don't think the new station is friendly to anyone.
この改築には言いたいことが色々あります。まず、駅に入るには階段を以前のような1、2段ではなく、5段も上る必要があります。また、以前は駅の外にあったトイレは今ではプラットフォームにあり、切符がなければ行くことができません。新しい駅は誰に対しても優しくないと思います。
