My Style of Nel Drip Coffee/私流のネルドリップコーヒー

I’ve previously posted about nel drip coffee. “Nel” is an abbreviation for the English word "flannel."

Unlike paper filters, nel filters allow the oils to pass through, resulting in a rich and mellow coffee. In Japan, nel drip is said to be the best coffee brewing method. However, because handling nel filters is tedious--washing them with only water after use without detergent, then storing them in a water-filled container in the refrigerator--not many people actually use this method.

I cut a 25 cm x 25 cm square from food-grade flannel (1m x 1m), place it in a Hario V60 dripper, and then put a large tea strainer on top to brew coffee. After brewing, I can easily dispose of the coffee grounds from the tea strainer. The fine particles stuck to the nel cloth are rinsed off with running water, and the cloth is then stored in a water-filled container in the refrigerator.

I think the nel cloth shown in the photo has been used nearly 100 times.

I use 40g of coffee grounds and 1000g of water. The coffee-to-water ratio is 1:25 (while the standard ratio is 1:17), but the resulting coffee is neither too strong nor too weak, and it has just the right strength. Any leftover coffee is cooled to room temperature in the kitchen and then stored in the refrigerator during summer for iced coffee. In other seasons, I pour it into a cup and heat it in the microwave before drinking. The flavor doesn’t deteriorate, and it remains delicious.

I think this method is much more efficient than brewing small amounts (about 10g of coffee and 180g of water) each time I want coffee. 

My concept is to enjoy fresh coffee as affordably as possible. 

I’m still practicing my “hybrid roasting” method, which I’ve posted about before, and I continue to improve it. I plan to post about that next time.

ペーパーフィルターと異なり、ネルフィルターは油分を通すので、まったりとした美味しいコーヒーができます。日本では、ネルドリップは最高のコーヒー抽出方法と言われています。ただ、ネルフィルターは、使用後、洗剤を使わず、水だけで洗い、水の入った容器に入れ、冷蔵庫に保管するなど、扱い方が面倒なので、実際にネルドリップを実践している人は多くいません。

私は、食用のネル生地(1mx1m)から25 cm x 25 cmの正方形を切り取り、ハリオのV60ドリッパーに入れ、その上に大きな茶漉しを載せ、コーヒーを淹れています。抽出後は、茶漉しに入ったコーヒー殻を簡単に捨てられます。ネル布に付いた微粉は流水で洗い流し、水の入った容器に入れ、冷蔵庫に保管します。

写真のネル布は、もう100回近く使っていると思います。

コーヒーの粉の量は40g、使用するお湯は1000g、コーヒーの粉とお湯の割合は1:25ですが(一般的な割合は1:17)、濃くも薄くもない、ちょうどいい濃さのコーヒーができます。残ったコーヒーは、台所でそのまま常温になるまで冷まし、その後、夏は冷蔵庫に入れ、アイスコーヒーにし、それ以外の季節では、飲むときにカップに入れ、電子レンジで温めています。劣化することなく、美味しく飲めます。

コーヒーを飲みたい時ごとに少量(10g程度)と少量のお湯(180g程度)を使ってコーヒーを淹れるより、ずっと効率的にコーヒーを淹れることができると思います。

新鮮なコーヒーをなるべく安く飲むというのが私のコンセプトです。

以前投稿した、私の「ハイブリッド焙煎」は今でも実践していて、改良を重ねています。次回は、そのことについて投稿したいと思います。

Meals Offered in the School Canteen at My Daughter's University, Part 21/娘の大学の学生食堂で出される食事、パート21

She says that at her university, the school canteen is now open for eating but the students must sit on every other seat, so there are not enough seats. She ate the curry and rice while sitting on an outdoor seat. Due to the coronavirus pandemic, the chopsticks, spoons, and so on have been replaced by disposable ones and the students can no longer spinckle dressing, pepper, or shichimi togarashi by themselves.

娘の大学では、学食で食べれるようになったけど、座席は1つ飛ばしで、席が足りないそうで、カレーライスは外の席で食べたそうです。コロナ禍のせいで、箸、スプーンなどは使い捨てのに変わり、自分でドレッシング、こしょう、七味唐辛子をかけれなくなったそうです。

Traditional Umeboshi, Low-Salt Umeboshi, and Umeboshi-Style Ume Pickles/伝統的な梅干し、低塩梅干し、梅干し風梅漬け

June is ume picking season in Japan. I got tens of kilograms of ume from my father's two ume trees.
日本では、6月は梅収穫の時期です。父の梅の木、2本から梅が数十キロも取れました。

Unripe ume in early June and ripe ume in late June.
青梅は6月初旬、熟した梅は6月下旬です。

Unripe ume are used to make ume syrup and ume shu (ume liqueur) while ripe ume are used to make umeboshi. (You can make ume syrup and ume shu from ripe ume, too.)
青梅は、梅シロップや梅酒を作るのに使い、熟した梅は梅干しを作るのに使います。(熟した梅で梅シロップや梅酒を作ることもできます。)

Yukari
ゆかり
Yukari is a registered trademark of Mishima Shokuhin Co., Ltd. This word is often used to mean the akajiso (red perilla) that has been used to color umeboshi. It's very tasty and often used as a kind of furikake.

ゆかりは、三島食品株式会社の登録商標です。梅干しを色付けするのに使った赤紫蘇を指すのによく使われる言葉です。ゆかりはとても美味しくて、ふりかけのように使うことが多いです。

Liquid that comes out of ume after being mixed with salt. Used as a seasoning.
梅を塩と混ぜた後に出てくる液体。調味料として使います。

The right and left ones are the same except the water content. Not colored with red perilla.
左右の梅干しは、水分量以外は同じものです。赤紫蘇で色付けしていません。

Umeboshi-style ume pickles
梅干し風梅漬け 
They are actually a byproduct of ume syrup making. I made ume syrup with an ume to sugar ratio of 2:1 (common ratio is 1:1). After I separated the ume from the syrup, I added 5% salt and red perilla.
実際は、梅シロップ作りの副産物です。梅と砂糖を2:1(通常は1:1)の割合で梅シロップを作り、梅とシロップを分けてから、塩を5%、赤紫蘇を加えました。

To make umeboshi, you must dry pickled ume in the sun for about three days, but these pickles need no drying.
梅干しを作るには、漬けた梅を3日間程度、天日干しする必要がありますが、この梅漬けは、干す必要がありません。

Note: I dried both the traditional and low-salt umeboshi in the food dehydrator. That's why I have been able to make umeboshi before the rainy season ends.
注:私は、伝統的な梅干しも減塩梅干しも食品乾燥機で乾燥させました。というわけで、梅雨が終わる前に梅干しを作ることができました。

So, which of these three I like the best? The umeboshi-style ume pickles, of course. They are easy to make, they need not be dried in the sun, and they taste really good! Besides, you can get ume syrup as a byproduct.
では、この中で私が一番好きなのはどれか、というと、もちろん、梅干し風梅漬けです。作るのは簡単だし、日干しする必要はないし、本当に美味しいからです。それに、副産物として、梅シロップもできます。
