Enoki Mushrooms/エノキタケ

Some people seem to eat enoki mushorooms raw, but they contain a hemolytic substance (a type of protein) and should not be eaten raw. When heated, the protein is decomposed and is safe to eat.

Two days ago, I got five clusters of enoki from the owner of the enoki factory. Yesterday, I used three of them to make 1) enoki and daikon miso soup, 2) Japanese-style salad of boiled enoki, wakame, corn, fake crab meat, and sesame seeds, and 3) enoki gratin.
