Kiriboshi Daikon (Dried Strips of Daikon)/切り干し大根

Kiriboshi daikon is a great preserved food, and I like it very much. The one shown below is not store-bought but home-made by my parents.
切り干し大根は素晴らしい保存食品で、私は大好きです。写真に写っているのは市販のものではなく、両親の自家製です。

Another great preserved food is uchi mame, or beaten (soy) beans. The one shown in the photo is store-bought, but in days of old, people used to make it at home, crushing each soy bean with a mallet. A great advantage of uchi mame is that it can cook for five minutes or so.
打ち豆もまた素晴らしい保存食です。写真のは市販のものですが、昔は、家で大豆を一つづつ木槌で潰して作っていました。打ち豆の利点の一つは5分程度で煮れることです。

A photo of the resultant kiriboshi daikon dish has to wait until I get some dried shiitake mushrooms from the supermarket!
出来上がった切り干し大根の料理の写真は、スーパーで干ししいたけを買うまで待って下さい!

At first, I wondered what the number 16 meant, and then I realized that it meant the hardness of the mineral water from Naeba (famous for its ski resorts) in Niigata. As I mentioned previously, soft water is an essential ingredient of Japanese dishes, and I am glad that the water here in the "Snow Country" in Niigata is very soft.
最初、16という番号は何なんだろうと思いましたが、新潟の苗場(スキーリゾートとして有名)で取れるミネラルウォーターの硬度のことだと分かりました。前にも言ったように、軟水は日本料理に不可欠な具材です。新潟の「雪国」の水は極めて軟水なので、嬉しいです。

I bought a pack of fresh shiitake mushrooms instead of dried ones because it was on sale.
生のシイタケが特売していたので、干しシイタケの代わりにそっちを買いました。

I decided not to add the shiitake this time. I'll add some of them tomorrow.
今回はシイタケを入れないことにしました。明日、少し入れようと思います。

I also bought a bag of mikan of an early variety, which were not so sour as I had expected but surprisingly sweet.
早稲のみかんも一袋買いました。思ったほどすっぱくなく、驚くほど甘かったです。

Regional Potato Chips, etc./地域限定ポテトチップスなど

Here are some of the items I bought yesterday.
Left: Potato Chips, Kyushu Shoyu, which uses local chickens produced in Kagoshima Prefecture (in Kyusu)
Right: Potato Chips, Kansai Dashi Joyu (< Shoyu), which uses Ichiban dashi from dried bonito.
昨日買った物の一部です。
左: ポテトチップス九州しょうゆ。鹿児島県産の地鶏使用。
右: ポテトチップス関西だしじょうゆ。かつお一番だし使用。


The left one had a flavor quite similar to the consomme-flavored version from the same manufacturer (Calbee), while the right one had a distinctive kombu and bonito flavor.
左のは同じメーカー(カルビー)のコンソメ味と似たような味で、右のは独特な昆布とかつおの味がしました。
The following are three bags of rice crackers:
Left: Broken deep-fried sembei
Right: Broken sembei
次はせんべいの袋3つ。
左: 割れた揚げせんべい
右: 割れたせんべい

Broken salada (salad oil) sembei
割れたサラダせんべい

These rice crackers (sembei) are usually called "ware sen" (broken sembei), and are very cheap. All these bags are 198 yen each.
このようなせんべいは通常、「われせん」(割れたせんべい、割れせんべい)と言い、とても安いです。この袋はそれぞれ198円です。
You may never consider buying such flawed sembei, but I like them because they are both tasty and cheap.
こんな傷のあるせんべいを買うことなど考えられないかも知れませんが、私自身は美味しくて安いので大好きです。
10-kg bag of Koshihikari rice, new crop:
3,580 yen. You may think that it's expensive, but it's actually quite reasonable in Japan.
コシヒカリ10 kg袋、新米:
3,580円。高いと思うかも知れませんが、実際は、日本ではかなり安価です。

I also bought this: Edamame!
枝豆も買いました。

150 yen. Very cheap by Japanese standards, yet very tasty.
150円。日本の水準ではとても安いですが、とても美味しかったです。

What Was Supposed to Be Mushroom Hunting.../きのこ狩りのはずが・・・

Yesterday (Sep. 21), my son and I went mushroom hunting for the first time this season. The weather had been so good that we didn't expect to gather many mushrooms. So, what was supposed to be mushroom hunting turned into major mountain climbing, reaching the summit of Mount Tairappyo (1983.7 m).
昨日(9/21)は今シーズン初めてきのこ狩りに息子と行きました。天気がそれまで良かったので、きのこはあまり採れないだろうと思いました。と言うわけで、きのこ狩りのはずが、本格的な山登りになってしまい、平標山(1983.7 m)の山頂まで行きました。




The scenery was spectacular, and I am very sorry that none of these photos justifies the beauty.
景色は素晴らしかったですが、残念ながら、写真ではその美しさが伝わりません。






One of my son's dreams came true: Finding tsukiyotake (Omphalotus guepiniformis), which is the main cause of mushroom poisoning in Japan.
息子の夢が叶いました。ツキヨタケ(Omphalotus guepiniformis)を見つけるということです。このきのこは、日本でのきのこ中毒の主な原因です。

At a glance, it looks like shiitake or hiratake (oyster mushroom).
ちょっと見ると、シイタケやヒラタケに似ています。

My son was overjoyed at finding this mushroom: Yamabushitake (Hericium erinaceum)
息子はヤマブシタケ(Hericium erinaceum)を見つけて大喜びでした。

This is all the edible mushrooms we gathered by spending a whole day (8-hour trek).
丸一日(徒歩8時間)使って採れた、食べられるきのこはこれだけです。

My son wanted to have the yamabushitake as "sashimi" (after boiled, of course). He never minds some dirt on mushrooms. (Well, I do.)
息子はヤマブシタケを刺身として(もちろん茹でてから)食べたいと言いました。息子はきのこにちょっと土がついていても気にしません。(私はしますが。)

I decided to have other mushrooms with udon, and bought these cheap udon noodles on our way back home.
きのこをうどんと一緒に食べることにして、帰りにこの安いうどんを買いました。

Here is picture of my bowl. Sorry, I was too tired to take decent photos. I used a dashi, soy sauce, and mirin ratio of 12:1:1, like I usually do. Thus,
1,200 ml dashi
100 ml soy sauce
100 ml mirin

Mizugashi (lit. Watery Sweet)/水菓子

Today, my wife bought these Japanese pears called Hosui.
今日は、妻が豊水という梨を買って来ました。

This sticker says that the sugar content is 12% or greater.
このシールには、糖度が12%以上と書いてあります。

I like Japanese pairs because of their crunchy texture.
私は独特な歯ごたえのある日本の梨が好きです。

The word mizugashi (lit. watery sweet) means fruit, but even some Japanese mistakenly think that it means a watery sweet such as mizu yokan and mizu manju. Mizugashi is usually served at the end of a kaiseki meal.
水菓子とは果物のことですが、日本人の中にも水羊羹や水饅頭などの水っぽいお菓子のことと勘違いしている人もいます。通常、懐石料理の最後に水菓子が出されます。

Simmered Hijiki Seaweed/ひじきの煮物

As part of supper tonight, my wife made simmered hijiki seaweed. I understand that some non-Japanese people refrain from consuming hijiki seasweed because of its high inorganic arsenic content, but that won't stop me from having it from time to time.
今晩の夕飯に妻がひじきの煮物を作りました。日本人以外で、ひじきが無機ヒ素を多く含むという理由でひじきを食べることを控える人がいることは知っていますが、それでも私は時々ひじきを食べています。

Bottle Gourd/夕顔(ゆうがお)

Bottle gourds (yuugao in Japanese) are a very popular summer vegetable in Niigata. For some reason, the people in Niigata call them you-goh (y + long "u" + g + long "o"). Bottle gourds are usually very large. The one shown in the photo is well over 30 cm in height, but it is relatively a small one.
夕顔(ゆうがお)は新潟ではとても人気のある夏野菜です。なぜか、新潟の人たちは「ゆーごー」と発音します。夕顔は通常、とても大きくなります。写真のは高さは、ゆうに30センチはありますが、比較的小さいほうです。

I put some of it in miso soup, together with tsurumurasaki (Malabar spinach).
一部はツルムラサキと一緒に味噌汁に入れました。

Some of you may know kanpyo (dried gourd shavings). Kanpyo is made from bottle gourds.
干瓢(かんぴょう)を知っている人もいるでしょう。干瓢は夕顔から作ります。

Japanese-Style Pizza?/和風ピザ?


I know it doesn't look tasty, but it is! The last "pancake" that I made from the leftover takoyaki batter was topped with natural cheese, white sesame seeds, sprinkled with some soy sauce, and grilled in the toaster oven, and finally topped with katsuobushi (dried bonito shavings). The combination of cheese, sesame seeds, and soy sauce is perfect!
美味しそうに見えないのは分かってますが、本当に美味しいです。残りのたこ焼きの生地で作った最後の「パンケーキ」にナチュラルチーズ、白ゴマを載せ、醤油をかけ、オーブントースターで焼き、最後に鰹節を載せました。チーズ、ゴマ、醤油の組み合わせは完璧です!

Off-Topic: Three Milk Chocolates/三種類のミルクチョコ

The other day, I bought three milk chocolates, all from different manufacturers, Meiji, Morinaga, and Lotte, in an attempt to determine which one I would like the best.
先日、それぞれ別のメーカー(明治、森永、ロッテ)の3種類のミルクチョコを買って、どれが一番好きか決めようとしました。



It was impossible for me to determine which one I liked the best.
どれが一番好きか決めることはできませんでした。

Leftover Takoyaki Batter/残ったたこ焼きの生地


Can you tell what this is? Last night, I pan-fried leftover takoyaki batter, which resulted in these three hamburger patty-like objects. For lunch today, I had one of them. It was delicious! I must say that I very much prefer this to real takoyaki!
これが何だか分かりますか?昨晩、残りのたこ焼きの生地をフライパンで焼きました。すると、このようなハンバーガーのパティーのような物が3つできました。今日の昼ご飯にその一つを食べました。美味しかったです!本当のたこ焼きよりずっと好きです!

Takoyaki/たこ焼き

Like I said before, I am a Kanto (Eastern Japan) man, so I'm not qualified to talk about okonomiyaki and I'm not qualified to talk about takoyaki, either.
Rumor has it that every household in Osaka (in Western Japan) has a takoyaki griddle, and according to one survey, about 60% of the household in Osaka have one. Anyway, the people in Kansai (Western Japan) should have a lot to talk about okonomiyaki and takoyaki.
前にも言った通り、私は関東人なので、お好み焼きについて語る資格はないし、また、たこ焼きについても語る資格はありません。
うわさによると、大阪(関西)ではどの家庭にもたこ焼き器があるそうです。またある調査では大阪の家庭の60%に、たこ焼き器があるそうです。
とにかく、関西の人たちはお好み焼きとたこ焼きについて語ることがたくさんあるでしょう。
Obviously, tako (octopus) is a necessary ingredient of takoyaki.
もちろん、たこはたこ焼きに必要な材料です。

I also used wiener sausage as a filling, as you can see from the photo.
写真を見て分かるとおり、中に入れる具としてウインナーソーセージも使いました。
