Making Dried Enokitake Mushrooms (Continued)/干しエノキタケの作り方(続き)

Three days have passed since I started drying the enoki. It has been mostly cloudy with occasional rain for these three days, which has delayed the drying process considerably.
エノキを干し始めてから三日経ちました。この三日間、おおむね曇りで時々雨が降り、乾燥作業はかなり遅れてしまいました。


The next step is to microwave the enoki. This step is required to ensure that the enoki are completely dried, and is also required to decompose flammutoxin, a type of protein that has a cardiotonic effect but also has a hemolytic effect, meaning that it destroys red blood cells. Heating decomposes it. Furthermore, this step is required to bring out the flavor similar to that of dried squid (surume in Japanese). The microwaving time required differs with the microwave oven. It took me 40 seconds to microwave the amount of dried enoki shown in the photo below to a satisfactory level in my 800-W microwave oven.
次に、エノキを電子レンジで加熱します。目的は、エノキを完全に乾燥させること、それから、フラムトキシンを分解することです。フラムトキシンとはタンパク質の一種で、強心作用があるものの、溶血作用(つまり、赤血球を溶かす)があります。加熱すると分解します。さらに、電子レンジで加熱することは、スルメのような味を出すために必要です。必要な加熱時間は電子レンジによって異なります。私が次の写真に載っている量の干しエノキを満足の行くレベルまで加熱するのに、800ワットの電子レンジで40秒かかりました。

I found that parts 2 and 3 were not dried enough. Anyway, I microwaved them.

Then, store them all in the freezer until use.

Why do I prefer drying enoki in the shade rather than in the sun?

Because enoki contains a large amount of vitamin B2, which is susceptible to light. Enoki differs from shiitake in this respect; the latter contains ergosterol, which is converted into vitamin D when exposed to sunlight.

なぜ私はエノキを日なたよりも日陰で干すのが好きか?

エノキにはビタミンB2を多く含みますが、このビタミンは光に弱いのです。エノキはこの点、シイタケとは異なります。シイタケにはエルゴステロールが含まれ、これは日光に当たると、ビタミンDに変化します。
