Display of Fireworks/花火大会

The 3-day Shiozawa Matsuri ends with a display of fireworks on July 16. My daughter (10) took videos of many of the fireworks. This video is the most specutacular of all, which begins with a phenix firework.
三日間続く塩沢まつりは、7月16日の花火大会で終わります。娘(10歳)がその花火を一杯ビデオに撮りました。その中で、次のビデオが一番すごいです。フェニックスの花火で始まります。

Shiozawa Matsuri/塩沢まつり

Not just a cart; this cart is called an "odori yatai" (lit. dancing stall), where children perform traditional dances.
ただの車ではありません。この車は「踊り屋台」と呼ばれるもので、子供たちが伝統的な踊りを披露してくれます。

Luckily, we got free waffle samples from a cafe, soon to be open on Bokushi Street (Aug. 11)
運良く、牧之通りでまもなく(8/11)オープンするカフェのワッフルを無料で試食できました。

Osakayaki is a kind of okonomiyaki shaped like imagawayaki.
大阪焼きとは、今川焼きのような形のお好み焼きのようなものです。

The funny thing about osakayaki is that osakayaki cannot be found in Osaka!
大阪焼きの面白いところは、大阪には大阪焼きがないということです。

Not All Food Stalls Are the Same/どの屋台も同じというわけではない

In the Shiozawa area of Minami Uonuma city, Niigata prefecture, the Shiozawa Matsuri (Festival) is held on July 14 through 16.

Today, on July 15, my daughter went to the festival in the morning with a friend of hers. When she came home, she reported she liked two particular foods. One is spa bo (deep-fried spaghetti sticks), and the other is potato fry (french fries). She insisted that I should try the potato fry because it was hot and delicious. So, I decided to give it a try. My daughter, the friend, and I went to the festival again in the evening. (My daughter and I went to the festival yesterday, too.)
新潟県南魚沼市の塩沢地域では、塩沢まつりが7月14日~16日まで行われます。

今日(7月15日)、娘が午前中にお友達と一緒にお祭りに行きました。帰ってくると、気に入った食べ物が2つあったとのこと。一つはスパ棒で、もう一つはポテトフライでした。ポテトフライは温かくて美味しいので食べてみてと、しつこく言うので、試してみることにしました。娘と友達、そして私とでまた夕方にお祭りに行ってきました(娘と私は昨日もお祭りに行ってきました)。

This particular one is curry-flavored. My daughter told me that two other flavors were available, sugar and salt.
これはカレー味です。娘が言うには、砂糖味と塩味のもあるそうです。

I ordered two bags, and the owner started to squeeze potato paste(?) from the machine, and put the resultant potato sticks into the fryer.
私が2つ注文すると、店主はペースト状(?)のポテトを機械から押し出し、できたポテトの棒をフライヤに入れました。




Just as my daughter remarked, the potato fry was very hot and delicious.
娘の言うとおり、ポテトフライはとても熱くて美味しかったです。

My Own Style of Tsukemen (Dipping Noodles)/私流のつけ麺

I'm not going to talk about the tsukemen invented by Kazuo Yamagishi of Taishoken; I just want to talk about my style of tsukemen, which is much simpler.
大勝軒の山岸一雄さんが発明したつけ麺について話そうというわけではなく、自分自身のつけ麺を話したいと思います。私のはとてもシンプルです。

Luckily, I got these four packs of ramen noodles for half the regular prices from the supermarket I frequent the other day.
先日、運良く、よく行くスーパーでラーメンの麺を4パック、通常価格の半分で買えました。


Ramen noodles, boiled, drained, and rinsed and cooled:
茹でて、水を切って、洗って冷たくしたラーメンの麺:

I made the dipping sauce by combining dashi, soy sauce, and mirin at a ratio of 5:1:1, boiling for some time, and chilling in the fridge. Each diner added some vinegar, sesame seed oil, and chopped naga negi (Japanese scallion) to their dipping sauce.
つけ汁は、出汁、醤油、みりんを5:1:1で混ぜ、しばらく沸騰させて、冷蔵庫で冷やして作りました。食べる人がそれぞれ、お酢、ごま油、みじん切りした長ネギを自分のつけ汁に足しました。

Another Attempt to Make Chicken Karaage in my Superheated Steam Oven/過熱水蒸気レンジで再度、鶏の唐揚げに挑戦

Today, I made another attempt to make chicken karaage in my superheated steam oven. This time, I placed sheets of parchment paper on the tray, and placed pieces of chicken directly on them, instead of using the baking rack, hoping that the heat would be transferred directly from the tray.
今日は、また過熱水蒸気レンジで鶏の唐揚げに挑戦しました。今回は、トレイにクッキングシートを敷き、焼き網を使わずに、その上に鶏肉を直接置きました。そのほうがトレイからの熱が直接伝わるのではないかと思って。

Karaage in the making (sorry for the reflection):

After 24-minute superheated steam cooking, the karaage looked almost the same as my first attempt.
24分の過熱水蒸気調理の後、唐揚げは最初の時とほぼ同じでした。

I "grilled" the karaage for 3 minutes, just like I did in the first attempt, but no apparent improvement.
最初の時と同じように、唐揚げを3分間「グリル」しましたが、大した効果はありませんでした。

I decided to grill it in my reliable toaster oven for 4 minutes.
信頼できるオーブントースターで4分間焼くことにしました。

I'm beginning to feel stupid for having made these attempts. Now it seems obvious to me that this low-end model of mine cannot make karaage properly. Besides, the karaage made in an oven is not actually "karaage" because it's not deep-fried.
こんな試みをしてきて、馬鹿らしく思えてきました。この廉価モデルでは唐揚げをちゃんと作れないことは明らかなようです。それに、レンジで作った唐揚げは揚げていないので本当の唐揚げではないし。

Shigefusa Nakiri vs. Kitaeji Petty Knife/重房の菜切りvs.鍛地ペティーナイフ

I've been playing with my Shigefusa kitaeji petty knife since I got it on July 4, and it's been great! Because of its thin blade, it's a good onion chopper, and despite my initial concern about its blade length (as you may know, a petty knife is usually much shorter, about 11-15 cm), now I take advantage of the long blade length; it's really like an all-purpose knife for me, though I still prefer my Shigefusa nakiri for some uses.
7月4日に重房の鍛地ペティーナイフが届いてから、ずっと使っています。とってもいいです!刃が薄いので、玉ねぎのみじん切りも簡単ですし、最初は刃の長さを心配していたのですが(ご存知の通り、ペティーナイフは普通もっと短く、11~15 cmくらいです)、今では長い刃をうまく使っています。本当に私にとっては万能包丁のようです。用途によってはまだ重房の菜切りのほうがいいですが。

Shigefusa Kitaeji 180-mm Petty Knife/重房の鍛地ペティナイフ

I made another purchase from Yoshizawa Riko.
This time, I bought a Shigefusa kitaeji 180-mm "petty" (paring) knife for 29,900 yen.

今回は、重房の鍛地180 mmのペティーナイフ(29,900円)を買いました。

Note that this particular petty knife is quite similar to my sashimi knife in blade length and handle shape. It was much lighter than I had thought; approx. 100 g. I'm thinking of using it as a kind of all-purpose knife for cutting meat and vegetables and even for making sashimi! Just as I expected, this knife can cut a tomato better than my Shigefusa nakiri. More details to come later.
このペティーナイフは、刃の長さと柄の形が刺身包丁によく似ています。重さは思ったより軽く、およそ100 gです。肉や野菜を切るための、さらに、刺身を作るための、いわば万能包丁みたいに使おうと思ってます。予想通り、この包丁は重房の菜切りよりトマトをよく切れます。詳細はまた後で。
