Clams/

Yesterday, my father got lots of clams from an acquaintance. I first removed sand from them by soaking them overnight in 3% salt water (2,000 ml of water plus 60 g of salt).
This morning, I checked the clams to find none of them were open. Were they all dead? Anyway, I made soup (called ushio jiru), using about one third of the clams. Apart from water, I only added a small amount of salt. Most recipes call for kombu and sake. I added a small amount of soy sauce at the end.
As part of supper tonight, I made "hamaguri no saka (< sake) mushi" (clams cooked with sake).
Cooking sake contains a considerable amount of salt, so no additional salt is required.
Just put clams in a frying pan, add cooking sake, put on the lid, and cook until done.
Don't overcook!

Last night, I put the last one-third of the clams in a colander over a bowl, and stored in the fridge.

As part of lunch today, I made "hamaguri no saka (< sake) mushi" again,
using cooking sake, margarine, and soy sauce this time.
The combination of margarine (or butter) and soy sauce is heavenly.

"The combination of margarine (or butter) and soy sauce is heavenly".
I can't agree more (laugh)!

fiasseP: Yes, I know that some people hate margarine, but margarine is just as good as butter, in my opinion.

as long as the margarine doesn't contain trans fat, I do love margarine!

but in certain case margarine can't substitute butter, like in chocolate works...
