Experiment: Making Ume Syrup and Ume Jam in Three Different Ways/実験:梅シロップと梅ジャムを3つの方法で作る

Today, my father and I harvested ume from my father's two Nanko ume trees the second time this season.
今日は、父と一緒に、父の2本の南高梅の木から梅を収穫しました。今シーズン2回目です。
I was supposed to make low-salt umeboshi from ripe ume, following the recipe my father taught me last year. Unfortunately, most of the ume were still unripe.
熟した梅で低塩梅干しを、去年父から教わった方法で作る予定だったのですが、残念ながら、大半の梅はまだ熟していませんでした。
1.1 kg of ripe ume and close to 12 kg of unripe ume.
熟した梅が1.1 kgで、熟してない梅が12 kg近く。

The ripe ones were quite fragrant.
熟した梅は香りがとてもいいです。
By the way, I found this metal skewer more useful in removing the heta (stem end) from each ume than a bamboo skewer. Ripe ume didn't have a stem end.
ところで、この金属製の串のほうが、竹串よりも、梅からヘタを取るのに役立ちました。熟した梅にはヘタはありませんでした。

I first made low-salt umeboshi, using 5% salt (1100 g x 0.05 = 55 g) and water just enough to cover the ume.
まずは、塩を5%(1000 g x 0.05 = 55 g)、梅がかぶるだけの水を使って、低塩梅干しを作りました。
Then I started making ume syrup and ume jam in three different ways.
それから、梅シロップと梅ジャムを3つの方法で作り始めました。

Way 1: Microwave ume before putting them in a jar.
方法1:梅を電子レンジで加熱してから瓶に入れる。
I microwaved 1 kg of ume in a 600-W microwave oven for 5 minutes.
1 kgの梅を600Wの電子レンジで5分加熱しました。

Way 2: Freezing ume before putting them in a jar.
方法2:梅を冷凍してから瓶に入れる。
I will keep 3 kg of ume in the freezer for 24 hours.
梅を3 kg、冷凍庫に24時間入れるつもりです。

Way 3: Simply put ume in a jar.
方法3:単に梅を瓶に入れる。

Left: 3 kg of microwaved ume + 1.5 kg sugar
Right: 3 kg of unprocessed ume + 1.5 kg sugar
左: 電子レンジで加熱した梅3 kg + 砂糖1.5 kg
右: 処理していない梅 3 kg + 砂糖1.5 kg

I used my usual way for the remaining 2.2 kg of ume.
残りの2.2 kgの梅には、私のいつもの方法を使いました。

On the night of the same day (June 18):
同日(6/18)の夜:
The performance of the microwaved ume looked so good that I decided to microwave the ume in the Tupperware container.
電子レンジで加熱した梅の成績がよさそうだったので、タッパー容器に入れた梅も電子レンジで加熱することにしました。
2.2 kg of ume in a 600-W microwave oven for 5 + 5 = 10 minutes.
2.2 kgの梅を600Wの電子レンジで5 + 5 = 10分。
Around noon on June 19:
6/19の昼頃:
My father picked up some fallen ume from the field. 560 g in total. I added them to the jar that already contained 1.1 kg of ume, added 5% salt and additional water to cover the ume.
父が畑から落ちた梅を拾ってきました。全部で560 g。すでに梅を1.1 kg入れた瓶に入れ、塩を5%足し、水を梅がかぶるだけ入れました。
Now to the main topic:
さて、本題へ:
I took out the ume from the freezer.
梅を冷凍庫から出しました。
Now I got three jars each containing 3 kg of ume and 1.5 kg of sugar.
これで、それぞれ梅3 kg、砂糖1.5 kgが入った瓶が3本になりました。
The untreated ume changed very little.
そのままの梅はほとんど変化していません。

The microwaved ume performed very well.
電子レンジで加熱した梅はとても成績がいいです。 
 
The syrup was already sour.
シロップはすでに酸っぱかったです。

I tasted the syrup, and found it was already sour!
シロップを味見すると、もう酸っぱかったです!

Around noon on June 20:

Unlike the Tupperware container, the glass jar is difficult to shake. Besides, shaking the jar at this point is not a very good idea because doing so simply lets the sugar go down to the bottom. I still refrain from shaking the jar.
タッパー容器と異なり、ガラス瓶は振りにくいです。それにこの時点で振っても、ただ砂糖が下に落ちるだけなので、振らないほうがいいと思います。いまだにガラス瓶を振るのは控えています。

Microwaved ume:
電子レンジで加熱した梅:
Almost done, but some sugar remains undissolved at the bottom.
ほぼできていますが、砂糖が少し溶けずに底に残っています。

Frozen ume:
冷凍した梅:
They are in good condition despite the fact that this is Day 1 for them. The syrup is already sour.
冷凍した梅は一日目ですが、良い状態です。シロップはすでに酸っぱいです。

Around noon on June 21:
6/21の昼頃:

Unprocessed ume:
そのままの梅:
I shook the glass jar for the first time this morning. The syrup was not yet sour.
今朝、ガラス瓶を初めて振りました。シロップはまだ酸っぱくありません。

Microwaved ume:
電子レンジで加熱した梅:
Almost done.
ほぼ完成です。

Frozen ume:
冷凍した梅:
Almost done, too, but a considerable amount of sugar still remains undissolved at the bottom.
こちらはほぼ完成ですが、まだかなりの量の砂糖が溶けずに底に残っています。

Around 9:00 am on June 22:
6/22、午前9時頃:

Unprocessed ume:
そのままの梅:
At this point, the syrup is simply sweet and is not sour at all.
この時点では、シロップは甘いだけで、まったく酸っぱくありません。

Microwaved ume:
電子レンジで加熱した梅:
Frozen ume:

Around noon on June 22:
6/22の昼頃:
I separated the microwaved ume from the syrup.
電子レンジで加熱した梅とシロップを分けました。

The syrup contains bits of fruit flesh from cracked ume.
シロップには、割れた梅から出た果肉の破片が入っています。

I sterilized the syrup by heating.
シロップを加熱殺菌しました。
I was surprised to see that no bubbles were generated in this process.
この過程で、泡がまったく発生しないので驚きました。
Probably the syrup is not fermenting. One big advantage of microwaving ume first.
多分シロップは発酵してないのでしょう。梅をまず電子レンジで加熱することの大きなメリットです。

From 3 kg of ume, I got 1,600 + 250 = 1,850 ml of syrup.
梅3 kgからシロップが1,600 + 250 = 1,850 ml出来ました。
I also processed the ume in the Tupperware container.
タッパー容器に入れた梅も処理しました。

I sterilized the syrup by heating in the same way. Bubbles kept appearing in the whole process.
同じ方法でシロップを加熱処理しました。その間、泡が出続けていました。

From the 2.2 kg of ume, I got 1,250 ml of syrup.
2.2 kgの梅からシロップが1,250 ml出来ました。
Instead of making ume jam right away, I simply added 300 and 200 g of sugar to the containers, and
梅ジャムをすぐに作らずに、容器に砂糖を300 g、200 g入れ、
microwaved the containers.
電子レンジで加熱しました。

3 kg ume plus 300 g sugar:
梅 3 kgに砂糖300 g:
2.2 kg ume plus 200 g sugar:
梅2.2 kgに砂糖200 g:
Early morning on June 23:
6/23の早朝:
Unprocessed ume:
そのままの梅:
The syrup is not yet sour.
シロップはまだ酸っぱくないです。

Frozen ume:
冷凍した梅:
At around 8'clock, I separated the syrup.
8時ごろ、シロップを分けました。
Slightly bubbling.
少し泡立っています。
I could only get this amount. Maybe I should have waited for a few more days.
これだけしか出来ませんでした。もう数日待ったほうがよかったかも。
Clear and lighter in color than the syrup from the microwaved ume.
クリアで、電子レンジで加熱した梅からできたシロップより色が薄いです。

Frozen ume:
冷凍した梅:
I will keep them in the jar for a while.
しばらく瓶に入れたままにしておきます。

Edited to add:
追記:

On June 24, I added 300 g of sugar to the jar containing the frozen ume above in attempt to get more syrup.
6/24、シロップがもっと取れるよう、上記の冷凍梅が入った瓶に砂糖を300 g入れました。

On June 29, I was able to get some more syrup.
6/29、シロップがもう少し取れました。
The unprocessed ume finally finally came to completion.
そのままの梅がやっと完成しました。
Fermenting considerably.
かなり発酵しています。
I separated the syrup. I was surprised at how bubbly the syrup was.
シロップを分けました。泡が多くて驚きました。
Bubbles kept forming while I was sterilizing the syrup by heating.
シロップを加熱殺菌している間、泡が出続けました。

After it cooled down, I transferred the syrup to a 4-liter PET bottle. I got close to 3 liter of syrup.
冷めてから、4リットルのPETボトルに移しました。3リットル近くのシロップができました。
Not transparent at all but cloudy.
透明ではなく、濁っています。

Now to the main topic:
さて本題へ:

I tasted them all.
全部味見しました。
Conclusions: I hated the syrup made from unprocessed ume. Because of the fermentation, it tasted different from the other two. The two tasted almost the same. I can't say which of the two I prefer, but considering the clarity, I think I prefer the syrup from the frozen ume.
結論:そのままの梅から作ったシロップは嫌いです。発酵のせいで、他の2つとは味が違います。2つはほぼ同じ味でした。どちらが好きか言えませんが、透明度を考えると、冷凍梅で作ったシロップのほうが好きです。

Note: I like the syrup made from unprocessed ume in a Tupperware container.
注:そのままの梅からタッパー容器で作ったシロップは好きです。

fiasseP: That's going to be the topic of a future post. I'm making other experiments right now.

Which of the three options to use largely depends on the personal preferences, naturally, but my personal opinion so far would be:

1. Unprocessed ume + glass jar: NOT RECOMMENDED AT ALL!!!
2. Unprocessed ume + Tupperware container (or a Ziploc bag, etc.) = Good
3. Frozen ume: Better than 2, but not free from fermentation
4. Microwaved (or heated in another way): Better than 2, and free from fermentation. If clarity is important, refrain from over-microwaving (or overheating)
