Tempura/天ぷら







I wish I had more time, but unfortunately, I'm very busy with other matters. For now, I just post some photos of the tempura I made the other day.
もっと時間があるといいのですが、残念ながら、他のことで忙しいので、いまは、先日作った天ぷらの写真を載せます。
I think I'll add some text when I have enough time.
時間がある時に、文章を書きたいと思います。

Mulukhiyya/モロヘイヤ


I think that in other cuisines, slimy foods are cooked in a way to reduce or elimiate the slime, but in Japanese cuisine, slimy foods are usually eaten just as they are.
他の国の料理では、ネバネバした食べ物はネバネバを減らすか無くすように調理すると思いますが、日本食では、そのままで食べるのが普通です。
Mulukhiyya is one such example. Natto is another. We also like to combine slimy foods together.
モロヘイヤはそんな一例です。納豆も。またネバネバした食べ物を合わせるのも日本人は好きです。

This morning, I gathered some young mulukhiyya leaves from my tiny vegetable garden, boiled them for a few minutes, and chopped them very finely. They are a great addition to natto!
今朝は小さな菜園からモロヘイヤの若い葉を採って、数分茹でて、細かく刻みました。納豆に入れるとすごくいいですよ!

Nasu Miso/なす味噌


Nasu miso (eggplants panfried with miso and other seasonings) is a favorite of my wife's. In fact, it's one of her gohan no tomo (rice's companion). The nasu miso shown in the photo contains ginger, too, and is seasoned with miso, sugar, and mirin.
なす味噌は妻の好物の一つ。「ご飯の友」です。写真に載せたのは、生姜も入っていて、味噌、砂糖、みりんで味付けしたものです。

Dried Enoki Mushrooms/干しエノキタケ



Yesterday, before we went mushroom gathering, I did what I had wanted to do for a long time: Drying enoki mushrooms.
昨日、キノコ狩りに行く前に、ずっとやりたかったことをしました:エノキタケを干すことです。
The Feb. 5, 2006 edition of Me Ga Ten, a famous TV show aired every Sunday, featured enoki mushrooms, in which they dried fresh enoki mushrooms. They said that dried enoki mushrooms tasted like dried squid.
目がテンという有名な番組(日曜日放映)の2006年2月5日分はエノキタケ特集で、その中で、生のエノキタケを干していました。干しエノキタケはスルメのような味がするそうです。
Last night, I had some of them as an appetizer. I didn't think they tasted like dried squid, but I thought they were tasty in their own way.
昨晩は、つまみに少し食べました。スルメのような味がするとは思いませんでしたが、エノキはエノキなりに美味しいと思いました。
I put the rest of the dried enoki in the freezer.
残りの干しえのきは冷凍庫に入れました。

Mushroom Gathering/キノコ狩り




My son and I went mushroom gathering yesterday. Actually, we went to three different mountains, trying to get the mushrooms that are in season around this time of the year. We only succeeded in finding some honey mushrooms, which are in season in spring and fall. Honey mushrooms are called naratake in Japanese, but here in Niigata, they are called amandare. We gathered some bracken fern shoots (warabi in Japanese) as well, some of which were huge!
昨日は、息子と二人でキノコ狩りに行きました。3つの山に行き、この時期に旬にあるキノコを探しました。結局は、春と秋に旬の「ナラタケ」を少し見つけただけでした。ナラタケは新潟ではアマンダレと呼ばれます。ワラビも少し採りましたが、中にはでかいのもありました。

Unlike ostrich fern fiddleheads (kogomi or kogome in Japanese), bracken fern shoots (warabi) require the process called aku nuki (harshness removal). I use the special chemical shown below, whose main ingredient is baking soda. You can use baking soda instead. In the old days, people used ash.
こごみ(こごめ)と異なり、ワラビはあく抜きという作業が必要です。私は特殊な薬品を使っていますが(主成分は重曹)、重曹を代わりに使うこともできます。昔は、灰を使っていました。


This morning, the shoots look like this:
今朝、ワラビはこんなになりました。

Drain, rinse, and soak in cold water for a few hours, drain, and put in the fridge or freezer.
水を切って、洗い、水に数時間漬け、水を切り、冷蔵庫または冷凍庫に入れます。

Ama Ebi (Sweet Shrimp/甘エビ


I bought a pack of ama ebi the other day. They were not imported ones but domestic ones from Hokkaido, and were plump and had roe on their bellies.
先日、甘エビを一パック買いました。輸入物ではなく、北海道産です。ふっくらしていて、腹には卵がついてました。
The formal name for this species of shrimp is hokkoku aka ebi in Japanese, but the term ama ebi (lit. sweet shrimp) is widely used in Japan. In Niigata, the term nanban ebi is often used.
この種の海老の正式名は日本語ではホッコクアカエビですが、甘エビという名前が日本では広く使われています。新潟では、南蛮海老という名前がよく使われます。

Before serving, I removed the heads, rinsed them in water, put them in a pot of water, and brought them to a boil. Great miso soup the next morning.
出す前に、頭を取り、水で洗い、水を入れた鍋に入れ、沸騰させました。翌朝、素晴らしい味噌汁になりました。

Japanese-Style Hamburgers/和風ハンバーグ

I bought a new oil pot today at the nearby home improvment center for about 500 yen. The right one is the one I bought at a 100-yen shop months ago. Some items available at a 100-yen shop are great, while others are not so great. The oil pot falls into the latter category.
今日は近くのホームセンターで新しい油入れを約500円で買いました。右のは数ヶ月前に100円ショップで買ったものです。100円ショップにあるものはすごいのもあるし、それ程すごくないのもあります。この油入れは後者のほうです。

I made Japanese-style hamburgers for supper tonight. The special ingredients are shiitake mushroom stems, which I had stored in the freezer, kinako (roasted soybean flour), and grated ginger. Shiitake mushroom stems are edible and are too good to just throw away, kinako is a great source of glutamic acid according to the TV show, Tameshite Gatten, and grated ginger is a common ingredient of the Japanese equivalent of hamburger called tsukune.
今夜の夕飯には、和風ハンバーグを作りました。特別な材料はシイタケの軸(冷凍庫に入れておいたもの)、きな粉、おろしたしょうがです。しいたけの軸は食べられ、ただ捨てるのはもったいないですし、きな粉はすごいグルタミン酸源(「ためしてガッテン」によれば)、そしておろしたしょうがは、「つくね」というハンバーグに似たものによく入れます。
Soy sauce contains 1,500 mg of glutamic acid per 100 g; miso 2,200 mg; and kinako 6,200 mg.
しょう油には100 g当たりグルタミン酸を1,500 mg含み、味噌は2,200 mg、きな粉は6,200 mg含みます。



The garnishes were cabbage, canned corn, and shiso (perilla) leaves.
付け合せはキャベツ、缶詰のコーン、シソの葉です。
We also had pickles and tomatoes.
漬物とトマトも食べました。

The sauce for the hamburgers was a simple one (1:1:1 mixture of soy sauce, mirin, and sake).

Edited to add: I used minced pork to make these hamburgers. The slicer that I used to shred cabbage was a good buy (bought at a 100-yen shop).
