Curry That Sat Overnight/一晩寝かせたカレー

It is often said that curry that sat overnight tastes better.
カレーは一晩寝かせたほうが美味いとよく言われます。

So, my lunch today:
というわけで、私の今日の昼ごはんは:
The pickle at the center is fukujin zuke.
中央の漬物は福神漬けです。

Last night, I put the leftover curry in the fridge.
Curry can go bad more quickly that you'd imagine, especially if it sits at room temperature.
昨晩、残りのカレーを冷蔵庫に入れました。
カレーは意外に足が早いです(特に室温に置いておくと)。

After you put the curry in the fridge overnight, does it get congeal (the sauce gets thicker and lumpy) and also less shiny? That's what happens to my curry. I add water, but it is never as shiny as the first day.

Tea Apprentice: Yes, it does get thicker and lumpy. To reheat the whole batch, I often add some water to prevent scorching, but when I reheat in the microwave, I don't have to add water.

It is less shiny when cold, of course, but I think it will become as shiny when reheated.
