What Has Become of My Ume Syrup/梅シロップはどうなったか?

Some ume turned brown.
茶色くなった梅もあります。
I had a feeling that fermentation was occurring.
I thought that a little more sugar would be needed. So, I added some more.
発酵が始まっていると感じました。
砂糖がもう少し必要だと思い、もう少し足しました。

It was obvious that fermentation was in progress. The ume above the surface of the liquid were covered with what looked like yeast.
発酵が進んでいるのは確かです。液の表面より上の梅は、酵母のようなもので覆われています。
 When I pushed down the ume with a ladle, I saw just a lot of bubbles produced...
お玉で梅を下げると、たくさんの泡が出てきました...。

I just let the fermentation progress. (I didn't know what else to do.)
そのまま発酵させました(他にどうしようもなかったので)。

No signs of spoilage.
腐った様子はないです。
And, no smell of alcohol.
アルコール臭くもないです。

I separated the liquid from the ume.
梅と液体を分けました。
I heated the liquid at around 80C for 15 minutes for disinfection.
消毒のため、80C前後で15分間、加熱しました。
I made simple fig compote, using three figs and some of the ume syrup.
無花果(いちじく、イチジク)3個と梅シロップを少し使って、簡単ないちじくコンポートを作りました。

I microwaved them for 3 minutes. The liquid boiled over!
電子レンジで3分、加熱しました。液体が吹きこぼれました!

Incredibly good!
とっても美味しかったです!

I transferred the ume syrup into three containers.
梅シロップを3つの容器に入れました。

Tomorrow, I'm going to make more fig compote!
明日は、いちじくのコンポートをもっと作るつもりです!

This makes my mouth water! Ume is one of my favorite and I need to go get some next time I'm at the japanese supermarket.

Yubun: Ume syrup is quite versatile. It can be diluted with water to make ume drink, it can be diluted with shochu (Japanese distilled spirit) to make instant "ume shu" (liqueur), and it can be added to sweets to give them nice ume flavor!
