Kanpachi (Amberjack) Teriyaki/カンパチの照り焼き

For supper tonight, I made kanpachi teriyaki.
今日の夕飯にはカンパチの照り焼きを作りました。
I'm not sure what teriyaki means to you depending on where you live (it may mean spicy teriyaki sauce), but for native Japanese like me, it simply means something cooked (pan-fried, for example) with soy-and-mirin sauce.
テリヤキの意味は住んでいる場所によって違うと思いますが(辛いテリヤキソースを思い浮かべるかも知れませんが)、私を含め、日本人にとっては、単に醤油とみりんで調理した(たとえば、フライパンで焼いた)ものです。
As for me, I used a 1:1:1 mixture of soy sauce, mirin, and sake.
私自身は、醤油、みりん、お酒を1:1:1で混ぜたものを使いました。

Mushroom Gathering, Again, for Muki Take Only/再びキノコ狩り、ムキタケのためだけに

On October 26, my son and I went mushroom gathering again. It's not that I wanted to do that. It's only that my son wanted to gather muki take from these particular logs.
10月26日、また息子と一緒にキノコ狩りに行きました。私がそうしたかったわけではなく、息子がこの木からムキタケを採りたがっていたからです。

Now you know how crazy my son is about mushrooms.
これで、息子がいかにキノコに夢中か分かるでしょう。
Edited to add: We found these logs one week ago, and gathered mature muki take, leaving small ones ungathered. My son had told me that he wanted to come again the next week to gather them.
追記: この木は一週間前に見つけたのですが、成熟したムキタケだけ採り、小さいのは採らずにいました。息子は来週また来て、採りたいと言ってたんです。

Chicken Tatsuta Age/鶏の竜田揚げ

I made chicken tatsuta age for supper last night, together with French fries (called "fried potato" in Japanese).
昨日の夕飯には鶏の竜田揚げを作りました。一緒にフライドポテトも(英語ではFrench friesと言います)。

I sprinkled expensive, natural salt on the French fries.
フライドポテトには高価な天然塩を振りました。

I make it a point to filter the vegetable oil and store it in the oil can while it's still hot to prevent deterioration.
私はいつも、劣化を防ぐため、まだ熱いうちに植物油を漉して、油の缶に保存しています。

I seldom dispose of used oil. I usually reuse it for other cooking purposes.
古い油はめったに捨てません。他の料理に使っています。
Tatsuta age vs. Kara age
They are quite similar. The main differences are:
The former is usually seasoned (with mirin, sake, soy sauce, and ginger juice in my case) before being coated and deep-fried, while the latter may or may not be seasoned beforehand. The former usually does not use garlic for seasoning, while the latter usually uses it. The former is usually coated with katakuri ko (potato starch) only, while the latter is coated with wheat flour or a combination of wheat flour and katakuri ko.

Satsuma Imo (Sweet Potatoes)/サツマイモ

The other day, I got some sweet potatoes from a friend. Today, I cooked them all except one, which I think I'll use to make tempura.
先日、友達からサツマイモをもらいました。今日、一つを残して全部、調理しました。残りの一つは天ぷらにしようと思います。
I put these potatoes in a pot of water, brought the pot to a boil, turned the heat to very low, and simmered the potatoes for 45 minutes. Then, I let them cool.
サツマイモを水の入った鍋に入れ、沸騰させ、火をごく弱火にして、45分間煮ました。そして、冷まします。

Then, I put them in the toaster oven and grilled them for more than ten minutes to remove excess water.
次に、オーブントースターに入れ、10分以上焼いて、余分な水分を飛ばします。

That way, you will have the most wonderful sweet potatoes.
こうすれば、すごく素晴らしいサツマイモが食べられます。

Koshihikari Rice Produced in Shiozawa/塩沢産コシヒカリ

This is the Koshihikari rice that I got from the harvest festival.
これが収穫祭でもらったコシヒカリです。


There are people who wash rice thoroughly until the water becomes clear, but this won't be necessary because the cloudiness of water is due to the starch on the surface of the rice.
水がきれいになるまでしっかりお米を研ぐ人がいますが、それは不要です。水が濁っているのはお米の表面の澱粉のせいだからです。
I wash rice gently about three times, so rapidly that any odor on the surface of the rice does not get inside the rice.
私はお米を3回程度やさしく研ぎます。お米の表面の臭いがお米の中に入らないように素早く。

Just cooked rice.
炊き立てのご飯。

I put some rice in one rice bowl, placed another on top of it, upside down, and shook the two bowls up and down and sideways. The rice turned into a mass.
ご飯を少しお茶碗に入れ、別のお茶碗をその上に逆さに乗せ、2つのお茶碗を上下、横に振ると、ご飯は塊りになります。

I use this very expensive natural salt, 16 times more expensive than regular table salt.
この高価な天然塩を使いました。通常の食卓塩の16倍の値段です。

The manufacturer recommends on the back of the bag that you make onigiri (rice balls) with salt only, because this is the best way to tell the taste of the salt.
製造業者は袋の裏に、塩だけのおにぎりを作ることを薦めています。それが、その塩の美味しさが一番よく分かる方法だからです。
And, this is also the best way to tell the taste of the rice.
そして、それはまたご飯の美味しさが一番よく分かる方法でもあります。

Despite the manufacturer's recommendation, I used a sheet of nori, too. Just my preference.
製造業者の薦めに反して、海苔も一枚使いました。単に私の好みです。

This is not exactly an onigiri (rice ball). It's more like a rice roll, but anyway, you can make it easily, without soiling your hands.
正確にはおにぎりとは言えませんが(ごはん巻きみたいですが)、とにかく、簡単に手を汚さず作ることができます。

Harvest Festival/収穫祭

Today, I went to a small harvest festival held in the Shiozawa area of Minami Uonuma city.
今日は、南魚沼市の塩沢地域で行われた小さな収穫祭に行ってきました。

Maybe too small to be called a festival.
お祭りというには小さすぎるかも。
Anyway, they held a lottery there, and I won this bag of newly harvested Shiozawa Koshihirari rice!
とにかく、そこで抽選があり、私はこの新米のコシヒカリを1つ当てました。

They sold the same 1-kg bags of rice outside the house for 780 yen each.
建物の外では、同じ1kg入り袋がひとつ780円で売ってました。

Can you tell what the stickers say? They say:

シールになんて書いてあるか分かりますか?こう書いてあります。

OK, so what's the very best way to eat such premium Koshihikari rice? Answer: make onigiri (rice balls) and have them.
さて、こんな高級なコシヒカリの最高の食べ方とは?答え:おにぎりを作って食べる。

I forgot to mention that they offered kinoko jiru (mushroom soup) there free of charge. How generous!

Mushroom Gathering, Again/再度、キノコ採り

On October 19, my son and I went mushroom gathering again.
10月19日、また息子とキノコ採りに行って来ました。
We first found murasaki shimeji (Lepista nuda). Beautiful purple mushroom.
最初にムラサキシメジを見つけました。きれいな紫色のキノコです。


Then, we found muki take (Ramaria botrytis).
次にムキタケを見つけました。


It was a beautiful, sunny day, ideal for hiking.
美しい晴れの日でした。ハイキングに最適。

Sheer beauty.
美しいの一言。

Later, we went to another mountain for mushroom gathering. There my son found numeri sugi take (Pholiota adiposa).
後に、別の山に行ってキノコ採りをしました。そこで息子はヌメリスギタケを見つけました。



This is all the mushrooms we found that day.
この日に採ったキノコです。

At my son's request, I fried the murasaki shimeji in margarine.
息子のリクエストどおり、ムラサキシメジはマーガリンで炒めました。

I put the numeri sugi take in miso soup, together with tofu cubes.
ヌメリスギタケはさいの目に切った豆腐と一緒に味噌汁に入れました。

I made omelets containing fried muki take and onion.
炒めたムキタケとたまねぎ入りのオムレツを作りました。

Purin (Japanese-Style Custard Pudding)/プリン

The word "purin" derives from the English word "pudding", but in Japanese, it almost always means Japanese-style custard pudding. Originally, purin is made from milk, eggs, sugar, and vanilla flavoring. You just simply mix all these ingredients together, strain, and steam them.
「プリン」とは英語のpuddingに由来しますが、日本語では日本のカスタードプディングを指すことがほとんどです。プリンは元々、牛乳、卵、砂糖、バニラエッセンスで作ります。ただ、材料をすべて混ぜて、漉して、蒸すだけです。
One thing you should know about purin is that it is huge in Japan. You can find premade purin sold at any supermarket.
プリンに関して知っておくべきことは、日本ではプリンは人気が高いということ。どこのスーパーでも出来合いのプリンが売られています。
So huge in fact that some Japanese say that one of their dreams is to have a bucketful of purin all by themselves.
どれほど人気があるかと言うと、日本人の中には、バケツ一杯のプリンを一人で食べるのが夢だという人たちがいるほどです。
Thus, there are things called "baketsu purin" (pudding in a bucket) in Japan.
と言うわけで、日本には「バケツプリン」という物があります。
I had thought about making my version of "baketsu purin" for weeks, and I actually made "bowl purin" (pudding in a bowl) instead. Here is a report:
数週間、自分自身の「バケツプリン」を作ろうと思っていました。で、実際は「ボールプリン」を作りました。以下はそのレポートです。
"Bowl purin" (pudding in a bowl) 20 servings
Ingredients:
2 liters of milk
5 boxes of purin mix
1 can of fruit cocktail
1 pack of whipped cream
「ボールプリン」20人分
材料
ミルク2リットル
プリンミックス5箱
フルーツカクテル1缶
ホイップクリーム1パック
These are the boxes of purin mix I used:

One box makes 4 servings, and requires 400 ml of milk. Thus, you will need 400 ml x 5 = 2,000 ml of milk in total.
1箱は4人分で、牛乳が400ml必要なので、合計400 ml x 5 = 2,000mlの牛乳が必要です。
Fruit cocktail and whipped cream are optional but preferred, because otherwise you will soon get tired of eating purin only.
フルーツカクテルとホイップクリームはなくてもいいですがあったほうがいいです。でないと、プリンだけ食べるのにすぐ飽きてしまうので。
Put 2 liters of milk in a big pot, and add all purin mix. Keep stirring on medium heat until a boil. Turn the heat low, and keep stirring for one minute.
牛乳を2リットル、大きな鍋に入れて、プリンミックスをすべて入れる。沸騰するまで中火で混ぜ続ける。火を弱にして、1分間混ぜ続ける。

Put cold water in a dishpan, and put the pot in the dishpan to let it cool to some degree.
洗い桶に水を入れ、その中に鍋を入れ、ある程度冷ます。

Transfer into a bowl. When it has cooled down, put the bowl in the fridge. Because of the sheer volume, it may take quite a long time to set the purin. (I kept mine in the fridge for a whole day.)
ボールに移す。冷めたら、冷蔵庫にボールを入れる。量が多いだけに、プリンが固まるにはかなり時間がかかります。(私の場合、まる一日冷蔵庫に入れておきました。)

Place a large plate on top of the bowl, and reverse them upside down quickly.
大きな皿をボールの上に置いて、すばやく逆さにします。
Et voila!

I let my son and daughter decorate the purin. My son draw a number three to celebrate our third moving-in anniversary.
息子と娘にプリンをデコレートさせました。息子は引越し3周年を祝うため数字の3を描きました。

Verdict: Some dreams should never come true, and having baketsu purin should be one of them. Even my daughter, who likes anything sweet, didn't ask for another helping.
判決:夢のままのほうがいい夢もあり、バケツプリンを食べるということもその一つでしょう。甘いものは何でも好きな娘でもお代わりをしませんでした。
