Iri Tamago/炒り卵


Iri < Iru (to roast, to toast, etc.)
Tamago = Egg
As the word iri implies, iri tamago is quite different from scrambled eggs.
炒り < 炒る (to roast, to toast, etc.)
= Egg
炒りという言葉通り、炒り卵はスクランブルエッグとはかなり異なります。

A common way to make iri tamago is to break and beat eggs, add some sugar and salt, for example, 1 tbsp sugar and 1/3 salt for 3 eggs, pour in a small pot (rather than a frying pan), with no oil in it, and cook over very low heat, constantly stirring with more than one pair of cooking chopsticks.  When the eggs are nearly done, remove from the heat, and continue stirring until done.
一般的な炒り卵の作り方としては、卵を割り、溶き、砂糖と塩を(例えば、卵3個に対して砂糖大さじ1、塩小さじ1/3)、油を入れていない小鍋(フライパンではなく)に入れ、ごく弱火で箸を二膳以上使ってよくかき混ぜながら、火を通し、ほぼ火が通った段階で、火から下ろし、完全に火が通るまでかき混ぜ続けます。

The other day, I wanted to add some canned corn to my Chinese harusame salad, but I noticed I had none in the storage space, so I decided to make some iri tamago and add it instead.  I thought I'd make iri tamago in a proper way, but at the last minute, I changed my mind and refrained from adding sugar and salt.  I also added some oil to a pot before pouring eggs.
先日、中華春雨サラダに缶詰のコーンを入れたかったのですが、貯蔵スペースにないことに気付きました。そこで、炒り卵を作って、代わりに入れることにしました。炒り卵を正しい方法で作ろうと思ったのですが、土壇場で考えを変え、砂糖と塩を入れるのは止めました。また、鍋に卵を入れるまえに油を少し入れました。

I must make iri tamago one day. It looks delicious. Is it the method used to make this rice bowl with ground meat, fried egg and something else (I think the topping is divided into three or four sections with different "ground" ingredients). I don't remember the name...

okasan: A very common technique in Japanese cuisine. My usual way of making iri tamago is quite different from it, because I use only one pair of chopsticks, a frying pan with some oil in it, and beaten eggs with some soy sauce and instant dashi in them (but no sugar or mirin).

Soboro is another dish that I think is an ultimate egg dish. My criteria for an ultimate egg dish are:
Simple to make, yet very, very tasty!
