Mushroom Gathering/キノコ採り

Yesterday, my son and I went mushroom gathering in a mountain.
昨日は山にキノコ採りに息子と行って来ました。

Here in the Uonuma region of Niigata prefecture, they are usually called amandare.
新潟県の魚沼地域では、通常、アマンダレと呼んでいます。

Here in the Uonuma region of Niigata preferecture, they are usually called kataha.
新潟県の魚沼地域では、通常、カタハと呼んでいます。
They used to be liked by the locals, but not now, because they are now regarded as poisonous.
地元の人に好まれていましたが、今では、毒キノコとみなされています。
No one has yet identified the reason why the edible mushroom has suddenly become poisonous.
食用のキノコがなぜ突然毒キノコになったか、まだ分かりません。



On returning home, my son and I cleaned the edible mushrooms, mostly honey and hanaiguchi, in water, and put them in buckets of dense salt water to get rid of any worms that might be in them.
帰宅してから、息子と二人で食べられるキノコ(主にアマンダレとハナイグチ)を水で洗い、中に入る虫を出すため、濃い食塩水の入ったバケツに入れました。

息子が特定できなかったキノコ。本を参照して、いくつかは特定できました。

Enoki Tempura/エノキの天ぷら

I made enoki tempura for supper last night, together with sweet potato tempura, myouga tempura, and carrot-onion-small shrimp kakiage. The sweet potato tempura and the kakiage turned out very good, just as usual, but the enoki tempura and the myouga tempura turned out rather oily and were not as tasty as I had expected.
Anyway, I reheated some of the leftover tempura for lunch today.
昨日の夕飯にはエノキ天ぷらを始め、サツマイモの天ぷら、茗荷の天ぷら、にんじん、たまねぎ、小エビのかき揚げを作りました。サツマイモの天ぷらとかき揚げはいつも通りよくできたのですが、エノキと茗荷の天ぷらは脂っこくなり、思ったより美味しくなかったです。
今日の昼食には残りに天ぷらを温めて食べました。

Enoki Mushrooms/エノキタケ


Some people seem to eat enoki mushorooms raw, but they contain a hemolytic substance (a type of protein) and should not be eaten raw. When heated, the protein is decomposed and is safe to eat.
エノキを生で食べる人がいるようですが、エノキには溶血物質(たんぱく質の一種)が含まれているので、生で食べてはいけません。加熱すると、このたんぱく質は分解されるので、食べても大丈夫です。

Two days ago, I got five clusters of enoki from the owner of the enoki factory. Yesterday, I used three of them to make 1) enoki and daikon miso soup, 2) Japanese-style salad of boiled enoki, wakame, corn, fake crab meat, and sesame seeds, and 3) enoki gratin.
二日前、エノキ工場の経営者からエノキを5つもらいました。昨日は、そのうち3つを使って1)エノキと大根の味噌汁、2)茹でたエノキ、若布、とうもろこし、かにかま、ゴマの和風サラダ、3)エノキのグラタンを作りました。

Kuri Okowa (Glutinous Rice Cooked with Chestnuts)/栗おこわ


I like kuri okowa, much better than kuri gohan (regular rice cooked with chestnuts). Mochi gome, or glutinous rice (also called sweet rice, sticky rice, and waxy rice), provides such a wonderful texture, in contrast to crumbly chestnuts.
私は栗おこわが好きです。栗ご飯よりずっと好きです。もち米が、ぼろぼろくずれ易い栗とともにすばらしい食感です。

Last night, I made kuri okowa for the first time this season.
昨晩、今シーズン初めて栗おこわをつくりました。

Ingredients are:
4 go (4 x 180 ml) glutinous rice
20 chestnuts, peeled
2 tbsp sake
1 tsp salt
Appropriate amount of water
材料は
もち米4合
皮をむいた栗20個
酒大さじ2杯
塩小さじ1杯
水を適量

Konnyaku Balls/玉こんにゃく

Today, I bought two packs of konnyaku balls (tama konnyaku in Japanese).
今日は、玉こんにゃくを2パック買いました。


To cook these balls, first rinse them well in water to get rid of smell.
料理するには、まず水でよく洗って臭いをとります。
Drain them and put them in a pot.
水を切って、鍋に入れます。

Then, dry-heat them really well (for minutes). This step is crucial, and will generate a lot of noise. Be prepared, and alert those around you, if required.
次に、よーく(数分)乾煎りします。ここが大事で、またすごい音がします。覚悟して下さい。また必要なら、回りの人に言っておいて下さい。
Add soy sauce and dried squid (surume in Japanese).
醤油とするめを加えます。
I usually add some instant dashi instead of dried squid.
私は普通、するめの代わりに出汁の素を入れます。
Done.
完成。

Very easy to make, yet very tasty.
作るのはすごく簡単、でもすごく美味しいですよ。
