Follow-up on my Home-Made Ponzu/自家製ポン酢のその後

I made ponzu in early January. See posts dated Jan. 6 and 7 for details. So far, my family have used the home-made ponzu occasionally. Yesterday, I chopped the leftover mekabu (sporophyll of wakame seaweed) finely, and had it with katsuobushi (dried bonito shavings) and the home-made ponzu. The ponzu is good enough, has turned somewhat mellower, but to be honest, I'm not very satisfied with the flavor. I prefer my instant ponzu, made by simply combining yuzu juice, soy sauce, and dashi (that is, water + instant dashi) at a ratio of 1:1:1. Maybe I should try a 1:1:1 ratio next time, but then I suspect that the resultant ponzu won't keep so long.
1月の初め、ポン酢を作りました。詳しくは1月6日、7日付けの投稿をご参照下さい。これまで、時々、家族でこの自家製ポン酢を使ってきました。昨日は、残っためかぶを細かく刻み、鰹節とこの自家製ポン酢で食べました。このポン酢はまあまあ美味しく、またいくらかまろやかになったのですが、正直言うと、この味にあまり満足していません。柚子果汁、醤油、出汁(水+出汁の素)を1:1:1で混ぜただけのインスタントポン酢のほうが好きです。今度は1:1:1の割合を試すべきかも知れませんが、そうしたら、今度はあんまり日持ちしないのではないかと思います。

Soba (Buckwheat Noodles) at Tabata-ya/田畑屋のそば

Last evening, my family went to Tabata-ya, a local buckwheat noodle restaurant here in the Shiozawa area of Minami Uonuma city. Reason: They hold a fair for four days in a row, offering all of their dishes at half the regular prices, except drinks, in the noon session for the first two days and in the evening session for the last two days. They call the fair "Naoe Kanetsugu Kansha (Thanks-Giving) Fair". Probably, the soba-ya (buckwheat noodle restaurant) has made a considerable profit by attracting many tourists from over all Japan, thanks to NHK's last period drama, Ten Chi Jin (Heaven, Earth, and Man), which featured Naoe Kanetsugu as the main character.
昨晩は、家族で田畑屋(南魚沼市の塩沢地域にある蕎麦屋さん)に行きました。その理由は、四日連続でフェアを行っていて、最初の二日は昼の部、後の二日は夜の部で、ドリンク以外はすべての料理が通常の価格の半分で提供しているからです。店では「直江兼続感謝フェア」と呼んでいました。多分、このそば屋は、先のNHKの大河ドラマ「天地人」のおかげで多くの観光客を日本中から呼び込み、かなり儲けたからだと思います。そのドラマで直江兼続が主人公として出ています。

My son, wife, and I ordered four servings of "hegi soba". Hegi soba is a specialty of the Uonuma region of Niigata prefecture. It contains funori (a type of seaseed) as a bonding agent, and is very sleek and resilient in texture, providing good nodogoshi ("throat-feel"), and greenish in color. Funori is also used to starch fabric. Shiozawa and surrounding areas are famous for their fabric production. Hegi means a wooden, rectangular tray in which to serve soba (buckwheat noodles), such as the one shown below. Another characteristic of hegi soba is that the noodles are made into manageable coils and arranged beautifully in a hegi, as shown below.
私、息子、妻は、へぎそばを四人前頼みました。へぎそばとは、新潟県の魚沼地域の特産品です。つなぎとして布海苔(ふのり)という海草が入っています。ツルツル、シコシコ、腰があり、喉越しが良く、色は緑っぽいです。布海苔は織物に糊付けするのにも使われます。塩沢およびその周辺地域は織物の生産で有名です。へぎとは、下に示すよう、そばを盛り付ける長方形の木製の枠のことです。へぎそばのもうひとつの特徴は、 下に示すよう、そばを食べやすい大きさに巻いて、へぎに美しく並べることです。

My son and I each ordered a plate of tempura, while my wife ordered a plate of vegetable tempura (cheaper than tempura, which includes kisu (a type of fish) and prawn) and my daughter ordered a chahan (fried rice) set.
私と息子は、それぞれ天ぷらを一皿頼みました。妻は野菜天ぷらを一皿(キスや海老が入った天ぷらより安い)を、娘はチャーハンセットを頼みました。

As I mentioned somewhere on eGullet, there are at least two types of tempura, soba-ya style tempura and tempura-ya style tempura. Soba-ya style tempura has more batter on it, and in some cases, more batter is sprinkled over a piece of tempura while it is being deep-fried, so that it gets more batter on the surface. This step is described as "hana wo sakaseru" (producing flowers).
eGulletのどこかで述べたように、天ぷらには少なくとも2種類あります。そば屋の天ぷらと天ぷら屋の天ぷらです。そば屋の天ぷらは衣が多く、場合によっては、天種(てんだね)を揚げている間に、さらに衣を落とし、表面に衣をつけることもあります。これは「花を咲かせる」と表現します。

The prawn was still raw. I'm not sure whether this was intentional or not.

Soba yu, which is simply hot water used to cook buckwheat noodles. It contains rutin, and is said healthy. At a soba-ya, it is common to have some soba yu together with leftover soba dipping sauce after you have had soba.
蕎麦湯です。そばを茹でるのに使ったお湯のことです。ルチンが含まれ、健康にいいと言われます。そば屋では、そばを食べ終わった後に、残りの麺つゆと一緒に蕎麦湯を飲むのが普通です。

You pour some soba yu into your bowl of dipping sauce, and drink it.
蕎麦湯を麺つゆの器に注ぎ、飲みます。

Mekabu/めかぶ

Mekabu is the sporophyll of wakame seaweed. It has recently become very popular as a healthy food, and I have refrained from buying it simply because it is touted as a healthy food. Yesterday, however, I purchased one pack just out of curiosity.
めかぶとは若布(わかめ)の胞子葉(ほうしよう)のことです。最近、健康食品として人気があります。私は、単に健康食品と宣伝されているという理由で、買うのを控えていました。でも昨日は、好奇心から1パック買ってみました。

Separate the edible parts from the inedible (very hard) stems.

食べれない(とても堅い)茎から食べられる部分を分けます。

Put the edible parts in a pot of boiling water. They turn to vivid green instantly. Drain immediately.
食べられる部分を沸騰しているお湯に入れます。すぐに鮮やかな緑になります。すぐに水を切ります。

My wife said she wanted to have the mekabu in miso soup, together with potato, so I decided to make miso soup with it. I simmered potato cubes in a pot. I put some mekabu in the individual bowls.
妻は、めかぶをジャガイモと一緒に味噌汁にして食べたいと言うので、めかぶで味噌汁を作ることにしました。さいの目に切ったジャガイモを鍋で煮ました。めかぶを各お椀に少し入れました。

And I poured some miso soup with potato cubes into each bowl.
そして、各お椀にさいの目に切ったジャガイモの入った味噌汁を注ぎました。

Tonkotsu Ramen/豚骨ラーメン

Yesterday, I thought I would make tonkotsu ramen for lunch today. So, last night, before I went to bed, I made half-boiled seasoned eggs (hanjuku ajitsuke tamago). The recipe can be found here.
昨日は、今日の昼食に豚骨ラーメンを作ろうと思い、昨晩、寝る前に半熟味付け玉子を作りました。レシピはここにあります。

I used two I-Wrap bags to soak the eggs in the broth. I-Wrap bags are quite versatile, and I like cooking with them.
玉子を汁に漬けるのにアイラップを2枚使いました。アイラップはかなり万能で、私がアイラップを使って料理をするのが好きです。

Here are the noodles and a packet of tonkotsu broth:
麺と豚骨スープが一袋:

The noodles are gokuboso (superfine), with a cooking time of 1 minute, and the tonkotsu broth is made by the manufacturer of the noodles. This single packet cost as much as 68 yen! I almost gave up buying it!
麺は極細で、茹で時間は1分です。豚骨スープはこの麺の製造メーカが作ったもので、この1パックで68円もします!買うのを止めようかと思いました!
The labels of both products include "seasonings (amino acids, etc.)". In Japan, it is so hard to find a food product that does not contain them.
両方ともラベルには「調味料(アミノ酸等)と書かれています。日本では、これらを含まない食製品を探すのは難しいです。

I hadn't realized that the tonkotsu broth was actually tonkotsu soy sauce flavored until I opened it. The packet clearly says it's "tonkotsu shoyu aji" (pork bone soy sauce flavored). Look at the brown not white broth.
開けてから初めて、この豚骨スープは実際は豚骨醤油スープだと分かりました。パックには、はっきり「豚骨醤油味」と書いてあります。白色ではなく茶色のスープを見て下さい。

The half-boiled seasoned egg turned out fine.
半熟味付け玉子はうまくできました。

The toppings were thin slices of ham (substitute for chashu), half-boiled seasoned egg, beni shoga (pickled red ginger), and white negi (substitute for green negi).
具は、ハムの薄切り(チャーシューの代わり)、半熟味付け玉子、紅しょうが、白ネギ(青ネギの代わり)。

I wasn't very much fascinated by the broth. Considering the price, however, I finished off the broth. To reduce my salt intake, I usually refrain from finishing off the ramen broth.
スープにはあまり感動しませんでした。でも、値段を考えて、スープを飲み干しました。塩分摂取量を減らすため、普通はラーメンのスープを飲み干すのは控えています。

Our First Skiing This Season/今シーズン初めてのスキー

Sorry, not a food-related post. This afternoon, my two children, a friend of my daughter's, and I went skiing for the very first time this season. It was sunny, and we all had a very good time! The scenery was spectacular. As always, none of the photos below can justify the beauty of the scenery.
すみませんが、食関連の投稿ではありません。今日の午後、二人の子供たち、娘の友達と私とで、今シーズン初めてスキーに行きました。晴れで、みんなとても楽しい時を過ごしました。景色は素晴らしかったです。いつも通り、どの写真も景色の美しさを表現することはできません。

Miso Ramen/味噌ラーメン

For lunch today, I made miso ramen, using the Kitakata ramen gift that I mentioned previously in my Jan. 18 post. Miso ramen is often topped with stir-fried vegetables, so I had it with the leftover stir-fried vegetables from last night's supper. I kept the stir-fried vegetables separate from the ramen, however. I don't think it's a good practice to put large amounts of ingredients on top of ramen.
今日の昼食には、以前、1月18日の投稿で述べた喜多方ラーメンを使って、味噌ラーメンを作りました。味噌ラーメンには、野菜炒めを乗せることが多いので、昨晩の夕飯の野菜炒めの残りと一緒に食べました。ただし、野菜炒めはラーメンとは別にしました。ラーメンの上に大量の具材を乗せるのはいい方法だとは思いません。

I measured the width of the noodles before cooking them, and it was almost 3 mm.
麺を茹でる前に幅を測ってみました。3 mm近くありました。

I'm not a big fan of miso ramen, because the broth is usually flavored with garlic.
味噌ラーメンはスープがニンニクで味付けしているのが普通なので、あまり好きではありません。

Ramen of my Style/自分流のラーメン

Today, I went shopping before noon, and bought several foodstuffs that I needed to make ramen, among others: Negi, ramen noodles, and naruto (a type of fish paste with a pink spiral pattern in it).

今日は昼前に買い物に行って、ラーメンを作るのに必要な食材をいくつか買ってきました。ネギ、ラーメンの麺、ナルトです。

Of the three types of ramen noodles that the manufacturer offers, I selected gokuboso (superfine):
メーカーが出している3種類のラーメンのうち、極細を選びました。

The cooking time is 1 minute, as opposed to 3 minutes for the Kitakata ramen noodles I previously mentioned.
茹で時間は1分です。前に述べた喜多方ラーメンは3分ですが。

So, I have to make all the preparations before cooking the noodles.
なので、麺を茹でる前に準備をすべてする必要があります。

For the broth, I combined together:
1/2 tsp normal (bonito-flavored) dashi
1 tsp chicken dashi
25 ml soy sauce
300 ml boiled water
(soy sauce and water ratio: 1:12)
スープには、次のものを混ぜました:
通常の(カツオ味の)出汁 小さじ半分
鶏がらだし 小さじ1
醤油 25 ml
沸騰したお湯 300 ml
(醤油とお湯の割合: 1:12)

When the noodles are done, I have to work really fast before the noodles get soggy and soft ("nobiru" in Japanese (lit. to extend)). The Japanese are generally very particular about the texture of noodles, and I am no exception. Besides, superfine noodles will become soggy and soft quickly.
麺が茹だったら、麺が伸びないうちにすごく早く動かないといけません。一般的に日本人は麺の食感にとてもうるさく、私も例外ではありません。それに、極細麺はすぐにのびてしまいます。

とても美味しいです!

The broth was rather salty. Next time, I will reduce the amount of soy sauce.
スープはかなり塩辛かったです。今度は醤油の量を減らします。

Kitakata Ramen/喜多方ラーメン

Today, I got this box of Kitakata ramen as a gift. Kitakata ramen is one of the Three Great Ramen in Japan, together with Sapporo ramen and Hakata ramen.
今日は贈り物としてこの喜多方ラーメンをもらいました。喜多方ラーメンは、札幌ラーメン、博多ラーメンとともに、日本の三大ラーメンです。

Seven packs of ramen noodles, together with four pouches of soy sauce-flavored broth and three pouches of miso-flavored broth:
ラーメンの麺が7パックに、醤油味のスープが4袋と味噌味のスープが3袋:

Note that the broth of Kitakata ramen is usually soy sauce-flavored.
喜多方ラーメンのスープは普通、醤油味です。
Kitakata ramen is characterized by its thick, flat, and curly noodles, among others.
喜多方ラーメンの特徴の一つは、太めの平打ち縮れ麺です。

In general, Kitakata ramen noodles have high kasuiritsu* (38-43%), in contrast to 30-35% for regular ramen noodles, giving them a sleek, mochi-mochi (mochi-like) texture.
*The percentage of water added to flour when making noodles.
一般的に喜多方ラーメンの加水率*は38~43%と高く、ツルツル、モチモチした食感になっています。一般的なラーメンの麺の加水率は30~35%です。

I had one pack for lunch today. Sorry, as you can see, no toppings. Common toppings for Kitakata ramen include chashu (Japanese version of char siu), menma (a kind of simmered bamboo shoots), and chopped negi (Japanese scallion). The noodles were sleek as I had imagined but not as resilient as I had imagined, and the broth was salty as I had imagined.
今日の昼食に1パック食べました。ご覧の通り、具は、なしです。喜多方ラーメンの一般的な具としては、チャーシュー、メンマ、刻んだネギがあります。麺は思った通りツルツルでしたが、思ったより腰はありませんでした。スープは思った通り、塩辛かったです。

Salt-Grilled Buri Kama (Yellowtail Collar)/ぶりかまの塩焼き

As I mentioned in a previous post, I bought a pack of buri ara (yellowtail trimmings) on Jan. 11.
前に述べたように、1月11日にブリのアラを1パック買いました。

Whenever I see packs of buri ara or kanpachi ara sold at the supermarket I frequent, I am tempted to buy one because I really like it and because it is cheap! And, I actually almost always buy one pack even when I have already decided what to make for supper that evening.
I usually put meat and fish in the hikari (optical) partial freezing compartment of the fridge:
よく行くスーパーでブリのアラやカンパチのアラが売っていると、好きだし、安いので、買いたくなってしまいます。実際、その日の夕飯に何を作るか決まっていても、必ずと言っていいほど、買ってしまいます。
普通、肉や魚は冷蔵庫の光パーシャル冷凍室に入れています。

This compartment has a UV LED at the top:
この冷凍室には上にUV LEDがついています。

The manufacturer says that the compartment is kept at -2C, at which protein-degrading enzymes can be active, instead of -3C, at which they are not, so that the proteins in meat and fish can be decomposed into amino acids, while the UV LED prevents the growth of bacteria. I have yet to confirm the benefit of optical partial freezing, but I DO like this compartment because once I put packs of meat and fish in it, I don't have to worry much about their expiration dates and I can use them when I want to use them without spending much time on thawing.
メーカによれば、このパーシャル室はタンパク質分解酵素が活動できる-2C(活動できない-3Cではなく)に保たれているので、肉や魚のたんぱく質がアミノ酸に分解され、またUV LEDが細菌の繁殖を防ぐそうです。まだ光パーシャル冷凍の効果は確認していませんが、このパーシャル室は好きです。肉や魚のパックをここに入れれば、消費期限をあまり気にしなくていいし、使いたい時に、解凍にあまり時間をかけずに使えるからです。
Last night, I sprinkled and rubbed the kama and another part of buri with a teaspoon of salt (2% of the weight of the kama and the other part), and put them in the fridge.
This morning, I wiped the salt and moisture from the surface.
First I grilled the non-kama part in the toaster oven for 6 min.
昨晩、かまと他の部分に塩を小さじ1(かまと他の部分の重さの2%)振って、揉んで、冷蔵庫に入れました。
今朝、表面の塩と水分を拭きました。
まず、かまではない部分をオーブントースターで6分焼きました。

Then I grilled the kama for 10 min.

SO GOOD! I love buri kama (and kanpachi kama)!
すごく美味しいです。ぶりかま(それに、かんぱちかま)は大好きです!

Sazae no Tsuboyaki (Turban Shell Cooked in its Own Shell/サザエの壷焼き(つぼ焼き)

As I mentioned in the Local Sushi Shop in Niigata thread on eGullet, my son likes sazae no tsuboyaki very much.
There are two types of sazae no tsuboyaki:
1. Put some soy sauce and sake in sazae, grill sazae, and when it's done, the diner takes out the flesh and eats it, except the sunabukuro (lit. sand bag).
2. First take out everything from the shell, remove the sunabukuro (and other inedible parts), cut the edible parts into small pieces, put them back in the shell, season with soy sauce and sake (top it with a quail egg), grill it, and serve.
I bought two sazae today, and tried sazae no tsuboyaki of the latter type for the first time.
eGulletのLocal Sushi Shop in Niigataスレッドで述べたように、息子はサザエの壷焼きが大好きです。
サザエの壷焼きには2種類あります:
1.醤油と酒をサザエに入れ、焼いて、焼けたら、食べる人が身を取り出して食べる(砂袋を除き)。
2.殻からすべて取り出し、砂袋(および他の食べれない部分)を取り去り、食べれる部分を小さく切って、殻に戻し、醤油と酒で味付けし(鶉の卵を乗せ)、焼いて、出す。
今日、サザエを二つ買って、初めて後者のタイプのサザエの壷焼きを試しました。

I tried to follow the instructions provided here (Japanese only), but I failed to take out the flesh from the shell.
ここ(日本語のみ)に書かれた方法に従おうとしましたが、殻から身を出すことができませんでした。

I gave up making sazae no tsuboyaki of the latter type, simply put some soy sauce and sake in the shell, and grilled in the toaster oven.
後者のタイプのサザエの壷焼きを作るのは諦め、単に醤油と酒を殻に入れ、オーブントースターで焼きました。

I learned only today that the sunabukuro is the part with some concentric circles, not the dark green part.
砂袋とは濃い緑の部分ではなく、同心円のある部分だと今日初めて知りました。

Note that at this sushi shop, the flesh and innards are cooked before being put back in the shell and the fire is set immediately before being served to the customer.

I personally prefer sazae sashimi to tsuboyaki.
