Getting Soy Milk and Okara (Soy Pulp) into My Diet/豆乳とおからを食事に取り入れる

Since I got a soy milk maker in early March, I have enjoyed using soy milk and okara in cooking.
3月初めに豆乳メーカーをもらってから、豆乳とおからを料理に使うことを楽しんでいます。

Here are some examples.
例をご紹介します。

Cottage cheese:
カッテージチーズ:
Heat 400 ml soy milk to around 60C.
Add 40 ml vinegar, and stir.
豆乳を400 ml、60度くらいまで温める。
お酢を40 ml加え、かき混ぜる。

Strain in a few minutes.
数分後、漉します。

I got more than 250 ml "whey".
「ホエー」が250 ml以上とれました。
I took a sip, and found it very sour (naturally!). I put it in the fridge, and disposed of it down the sink a few days later. You might say, "Mottainai (what a waste)." According to one site, it's good when mixed with honey.
ちょっと飲んでみましたが、とても酸っぱかったです(当たり前ですが)。冷蔵庫に入れ、数日後、流しに捨ててしまいました。「もったいない」と言われるかも知れません。或るサイトによると、ハチミツを混ぜると美味しいそうです。

The other day, I made cheesecake for my son's birthday. I replaced 1/4 of yogurt with soy milk. No one noticed that there was soy milk in the cake.
先日、息子の誕生日にチーズケーキを作りました。ヨーグルトの1/4を豆乳に代えましたが、誰もケーキに豆乳があることに気付きませんでした。

I find okara more useful than soy milk. Okara is often regarded as refuse, but I have a feeling that a soy milk maker is actually an okara maker and soy milk is a by-product.
おからのほうが豆乳より有用だと思います。おからは、よく「かす」、「くず」と思われていますが、私としては、豆乳メーカーは実際はおからメーカーで、豆乳こそ副産物だと感じています。

Potato salad with okara has become my family's default potato salad, and it's very tasty.
我が家では、ポテトサラダには、おからを入れるのが普通になりました。とても美味しいです。

A 1:1 mixture of mayonnaise and okara is now one of our favorite dressings.
マヨネーズとおからを1:1で混ぜて作ったドレッシングも大好きです。

My Father's Temae Miso/父の手前味噌

The word temae (lit. hand + before/in front of) has a number of meanings. It can be used to refer to the first person (and even the second person in some situations). Thus, temae miso literally means my/our miso, but it actually means self-praise, because almost everyone wants to boast of the miso they make themselves.
(The theme of episode 2 of the TV drama, Osen, is miso.)

手前という言葉には色々な意味があるますが、一人称を(状況によっては二人称も)指すのにも使われます。したがって、手前味噌とは元々は自分の味噌のことですが、実際は自慢という意味です。誰でも自分で作った味噌を自慢したくなるからです。
テレビドラマ「おせん」の第二話のテーマは味噌です。)

Today, I got 13-kg of home-made miso from my father.
今日、父から自家製の味噌を13キロもらいました。
I tried to put all the miso in the fridge and the freezer.
味噌を全部、冷蔵庫と冷凍庫に入れようとしました。
But, I gave up the attempt halfway through. I think I'll store the rest (more than half) in a cool, dark place.
でも、途中で諦めました。残り(半分以上)は冷暗所に保管しようと思います。

It's not true that miso can never go bad. It may be true of traditional, very salty miso, but modern less salty miso can go bad if not properly stored.
味噌は決して腐らないというのは間違いです。昔ながらのとても塩辛い味噌はそうかも知れませんが、現代風のあまり塩辛くない味噌は、正しく保存しないと腐ってしまうことがあります。

I think I'll use my father's temae miso in a variety of dishes!
父の手前味噌を色んな料理に使おうと思います!

Very Substantial Kitsune Udon/とても具沢山のきつねうどん

For supper tonight, I made very substantial kitsune udon.
今日の夕飯には、とても具沢山のきつねうどんを作りました。


As you can see from the results of a Google image search for kitsune udon in Japanese, most kitsune udon is much less substantial.
きつねうどんのGoogleイメージ検索の結果から分かるよう、大抵のきつねうどんは具がずっと少ないです。

I must add some important notes about kitsune udon:
In Kanto (Eastern Japan), kitsune udon/soba means udon/soba with seasoned abura age in it, and tanuki udon/soba means udon/soba with tiny bits of deep-fried tempura batter (tenkasu or agedama) in it.
At least in Osaka in Kansai (Western Japan), kitsune means udon with seasoned abura age in it, and tanuki means soba with seasoned abura age. In Osaka, many udon shops serve tenkasu free of charge, and there can be no such things as tanuki udon.
きつねうどんに関して重要な注意事項があります。
関東では、きつねうどん/そばとは、味付けした油揚げの入ったうどん/そばのことで、たぬきうどん/そばとは、天カス(揚げ玉)が入ったうどん/そばのことです。
関西の少なくとも大阪では、きつねとは味付けした油揚げの入ったうどんのことで、たぬきとは味付けした油揚げの入ったそばのことです。大阪では、天カスを無料で置いているうどん屋が多く、たぬきうどんというものはありません。

To make things even more complicated, in Kyoto in Kansai (Western Japan), tanuki udon is udon with thinly sliced abura age and grated ginger in broth thickened with katakuriko (potato starch), as you can see from here.
さらに複雑なことに、ここで分かるように、関西の京都では、たぬきうどんとは、片栗粉でとろみをつけた汁に細かく切った油揚げと、おろした生姜が入ったうどんのことです。

In general, soba is preferred in Kanto, while udon is preferred in Kansai. There are, of course, personal preferences, though. Finally, the broth in Kanto is dark-colored due to the use of dark soy sauce (and dried bonito), while it is light-clored in Kansai because of the use of light soy sauce (and kombu).
一般的に、関西ではうどんが好まれ、関東ではそばが好まれます。もちろん、個人的な好みがありますが。最後に、関東の汁は、濃口しょう油(それに鰹節)を使っているので、色が濃いですが、関西の汁は、薄口しょう油(それに昆布)を使っているので、色が薄いです。

Moyashi Tempura Don/もやし天ぷら丼

For lunch today, I made moyashi tempura don (short for donburi), using the leftover moyashi tempura that I showed in the preceding post.

Note: Tempura donburi is usually abbreviated as tendon.

Ratio for tendon sauce:
Dashi:soy sauce:mirin:sugar = 2:1:1:0.1

今日の昼ご飯には、前の投稿で見せた、残りのもやし天ぷらを使って、もやし天ぷら丼をつくりました。

注: 天ぷらどんぶりは普通、天丼(てんどん)と略されます。

天丼のたれの割合:
出汁:しょう油:みりん:砂糖 = 2:1:1:0.1

I reheated the moyashi tempura in the toaster oven.
もやし天ぷらはオーブントースターで温めました。

Sadly, I had only a small amount of rice left in the rice cooker.
悲しいことに、炊飯器にはご飯がほんの少ししか残っていませんでした。

The moyashi tempura don was good enough for me, but I must add that tendon usually contains at least one piece of prawn tempura.
もやし天ぷら丼はまあまあ美味しかったですが、天丼には普通、海老天(えびてん)が一つは入っています。

Restaurant Yukiguni/レストラン雪国

For my son's birthday, my family went to Restaurant Yukiguni (Japanese only), directly run by YUKIGUNI MAITAKE Co., Ltd. (company that produces maitake mushrooms and moyashi (bean sprouts), among others).
I had long wanted to visit this place because their portion sizes are big according to reviews in Tabelog (Japanese only). Besides, I was interested in their "Yukiguni moyashi tempura", which I happened to learn from a TV program.
息子の誕生日に、家族でレストラン雪国に行きました。「雪国まいたけ」(舞茸やもやしなどを作っている会社)直営の店です。
前からここに行きたいと思っていました。食べログのレビューでは、一人前の量が多いそうです。それに、テレビ番組で知った「雪国もやしの天ぷら」に興味がありました。

My daughter ordered cream spaghetti.
娘はクリームスパゲティを注文しました。

My son ordered maitake don (donburi with maitake tempura).
息子は舞茸丼を注文しました。

My wife and I each ordered their most popular meal: Kinoko jiru teishoku (set meal with mushroom soup, chicken karaage, maitake fry, salad, and pickle).
妻と私はそれぞれ人気一番のメニュー「きのこ汁定食」(きのこ汁、鶏のから揚げ、舞茸フライ、サラダ、漬物)を注文しました。

The amount of mushroom soup is incredible!
きのこ汁は信じられない量です!

This is Yukiguni moyashi tempura.
これが「雪国もやしの天ぷら」です。

Each moyashi is coated and deep-fried individually.
もやし一本、一本に衣をつけ揚げています。

As you can see, the dish actually served contains more moyashi tempura than in the photo on the menu! Just incredible!
ご覧の通り、実際に出されたお皿には、メニューの写真より多くのもやし天ぷらが入っています。信じられません!


The four of us shared two cakes.

At first glance, I thought the cheesecake was crust-less, but I was wrong.
一見したところ、チーズケーキはクラストがないと思いましたが、違いました。

The four of us were unable to finish off the one serving of moyashi tempura, so I asked the server if I could bring the rest home. She kindly gave me a plastic container, a rubber band, and a plastic bag.
四人でも一人前のもやし天ぷらを食べ切れなかったので、店員さんに残りを持って帰ってもいいか訊きました。親切にプラスチック容器と輪ゴムとプラスチック袋をくれました。


Very satisfying meal! We were all full!
とても満足の行く食事でした!みんなお腹いっぱいになりました。

The heroine, Ando Natsu, is played by Kanjiya Shihori, who played Miwa in the TV drama, "Bartender".

Iron Chef/料理の鉄人

Bartender/バーテンダー

Bartender is another favorite of mine.
バーテンダーも好きです。

In Episode 1, Ryu makes a very special mizuwari (whisky and water) for Miwa.
In Episode 2, Ryu makes a gin fizz for Kuzuhara, his rival, that contains wasanbon (fine-grained Japanese sugar).
In Episode 3, Ryu makes a martini for a swindler.

第一話では、溜は美和にとても特別な水割りを作ります。
第二話では、溜は葛原(ライバル)に和三盆の入ったジンフィズを作ります。

Kuitan/喰いタン

The TV drama, Kuitan (Gluttonous Detective), was not only amusing, but it was also very informative. For example, you can learn a lot about differences in food culture between Kanto (Eastern Japan; area in and around Tokyo) and Kansai (Western Japan; area in and around Osaka) from Episode 6 of Kuitan 2.
テレビドラマ「喰いタン」(食いしん坊探偵)は、面白いだけでなく、とても勉強になります。例えば、喰いタン2のエピソード6では、関東と関西の食文化の違いをたくさん知ることができます。

At 3:15, Kuitan finds a takoyaki machine. Osaka is famous for takoyaki. In fact, it is said that every household in Osaka has a takoyaki machine.
At 6:41, Kurara places a tray on the table that contains kitsune (lit. fox, seasoned abura age) udon in light-colored broth, Osaka-style okonomiyaki, and a bowl of rice. Other dishes shown include kushi katsu (skewered cutlets), niku-jaga (meat*-potato stew), and dashimaki tamago, which is less sweet than atsuyaki tamago in Kanto.
*The default meat in Kansai is beef, not pork. When the people in Kansai say "niku" (meat), they mean beef. In Kanto, niku means pork.

Follow-up on my Rare Cheesecake with Okara/おから入りチーズケーキのその後

My two children had some of the cheesecake, and neither asked for another helping. My wife remarked, "It's too sweet, and it's like melted ice cream." Then, I hit upon a good idea! Freezing!
子供二人はチーズケーキを少し食べましたが、お代わりは欲しがりませんでした。妻がこう言いました、「甘過ぎるし、溶けたアイスみたい」。そこで、私はいい考えが浮かびました。冷凍する!

Rare Cheesecake with Okara/おから入りレアチーズケーキ

I made rare (unbaked) cheesecake today.

Ingredients:
200 g cream cheese
80 g sugar
2 eggs
5 g gelatin
and very "soy-milky" okara, shown below.

今日は、レアチーズケーキを作りました。

材料:
クリームチーズ 200 g
砂糖 80 g
卵 2個
ゼラチン 5 g
そして、この豆乳たっぷりのおから

About 150 ml, which is probably half soy milk and half okara.
約150 mlで、多分半分は豆乳で半分はおからです。

You will need an electric whisk.
電動の泡だて器が必要です。

Directions:
1. Separate yolks and whites of eggs into two bowls.
2. In the bowl containing whites, add 40 g sugar, and make meringe.
3. In the bowl containing yolks, add 40 g sugar and okara, and whisk well.
4. Cut cream cheese into small pieces, microwave for 30-40 sec. to soften, add to the bowl mentioned in 3., and whisk well.
5. Dissolve gelatin in water, and add to the bowl.
6. Add meringe to the bowl, and mix lightly.
7. Transfer the contents of the bowl into a mold.
8. Put the mold in the fridge.

作り方:
1. 卵を黄身と白身に分けて、それぞれボールに入れます。
2. 白身の入ったボールに砂糖を40 g入れ、メレンゲを作ります。
3. 黄身の入ったボールに砂糖を40 gとおからを入れ、泡だて器でよく混ぜます。
4. クリームチーズを小さく切り、電子レンジで30~40秒温め、柔らかくし、3.のボールに入れ、泡だて器でよく混ぜます。
5. ゼラチンを水に溶かし、ボールに入れます。
6. ボールにメレンゲを入れ、軽く混ぜます。
7. ボールの中身を型にあけます。
8. 型を冷蔵庫に入れます。

About 2-3 hours later.
2~3時間後。

Then I realized that the cheesecake didn't set! Anyway, I had some.
チーズケーキが固まっていないことに気付きました。とにかく、少し食べてみました。

Obviously, I failed to evenly distribute the gelatin. I had undissolved bits of gelatin in my mouth! Next time, I will be more careful!
ゼラチンを均一に混ぜることができませんでした。口の中に溶けていないゼラチンの粒々が!次回はもっと注意します!

Hanjuku Cheese/半熟チーズ

This is my very first attempt to make hanjuku cheese.
(Hanjuku literally means half-boiled.)

Ingredients:

200 g cream cheese
150 ml soy milk
3 eggs
80 g sugar
50 g hakurikiko (low-gluten wheat flour)

You will need an electric whisk.

Directions:
1. Separate yolks and whites of eggs into two bowls.
2. In the bowl containing whites, add 40 g sugar, and make meringe.
3. In the bowl containing yolks, add 40 g sugar, and whisk well.
4. Cut cream cheese into small pieces, microwave for 30-40 sec. to soften, add to the bowl mentioned in 3., and whisk well.
Edited to add on June 13, 2015: Add milk little by little in this step.
5. Sift flour, add to the bowl, and mix well.
6. Add meringe to the bowl, and mix lightly.
7. Transfer the contents of the bowl into cups.

半熟チーズを初めて作りました。

材料:

クリームチーズ 200 g
豆乳 150 ml
卵 3個
砂糖 80 g
薄力粉 50 g

電動の泡だて器が必要です。

作り方:
1. 卵を黄身と白身に分けて、それぞれボールに入れます。
2. 白身の入ったボールに砂糖を40 g入れ、メレンゲを作ります。
3. 黄身の入ったボールに砂糖を40 g入れ、泡だて器でよく混ぜます。
4. クリームチーズを小さく切り、電子レンジで30~40秒温め、柔らかくし、3.のボールに入れ、泡だて器でよく混ぜます。
2015年6/13追記: ここで牛乳を少しずつ入れます。
5. 薄力粉をふるい、ボールに入れ、よく混ぜます。
6. ボールにメレンゲを入れ、軽く混ぜます。
7. ボールの中身をカップにあけます。

I transferred about 1/3 of the contents into six aluminum foil cups, and baked them in my 1000-W toaster oven for 11 min. in total.
私は中身の約1/3をアルミ箔のカップ6個に入れ、1000Wのオーブントースターで、合計11分焼きました。

3 minutes later.
3分後。

I placed a sheet of aluminum foil on top to prevent them from scorching.
焦げないよう、上にアルミ箔を一枚載せました。

Done!
完成!

The texture was about right.
食感はだいたい良かったです。

I transferred another 1/3 into a frying pan, and put on the lid. Later, I flipped it. I did the same with the remaining 1/3.
もう1/3はフライパンに入れ、蓋をしました。後で裏返しました。残りの1/3も同じように焼きました。

Both the baked and pan-fried versions tasted very good for the first attempt.
初めてにしては、オーブントースターで焼いたほうも、フライパンで焼いたほうもとても美味しくできました。

The original recipe (Japanese only) says to put boiling water in the tray, and bake for 60 min. at 150C.

元のレシピー (Japanese only)では、鉄板に沸かした湯を張り、150℃で60分焼く、と書かれています。

200 g cream cheese
200 ml milk
4 yolks
30 g granulated sugar
1 tbsp lemon juice
4 whites
50 g granulated sugar

Some Leave, Others Remain/去る者、残る者

MONKEY MAJIK is a band of four, two Canadians and two Japanese.

Sorry, for no particular reasons, I can't bring myself to posting about food for now.
