Traditional Umeboshi, Low-Salt Umeboshi, and Umeboshi-Style Ume Pickles/伝統的な梅干し、低塩梅干し、梅干し風梅漬け

June is ume picking season in Japan. I got tens of kilograms of ume from my father's two ume trees.
日本では、6月は梅収穫の時期です。父の梅の木、2本から梅が数十キロも取れました。

Unripe ume in early June and ripe ume in late June.
青梅は6月初旬、熟した梅は6月下旬です。

Unripe ume are used to make ume syrup and ume shu (ume liqueur) while ripe ume are used to make umeboshi. (You can make ume syrup and ume shu from ripe ume, too.)
青梅は、梅シロップや梅酒を作るのに使い、熟した梅は梅干しを作るのに使います。(熟した梅で梅シロップや梅酒を作ることもできます。)

Yukari
ゆかり
Yukari is a registered trademark of Mishima Shokuhin Co., Ltd. This word is often used to mean the akajiso (red perilla) that has been used to color umeboshi. It's very tasty and often used as a kind of furikake.

ゆかりは、三島食品株式会社の登録商標です。梅干しを色付けするのに使った赤紫蘇を指すのによく使われる言葉です。ゆかりはとても美味しくて、ふりかけのように使うことが多いです。

Liquid that comes out of ume after being mixed with salt. Used as a seasoning.
梅を塩と混ぜた後に出てくる液体。調味料として使います。

Low-salt umeboshi
減塩梅干し
5% salt and 10% sugar
塩分5%、砂糖10%

The right and left ones are the same except the water content. Not colored with red perilla.
左右の梅干しは、水分量以外は同じものです。赤紫蘇で色付けしていません。

Umeboshi-style ume pickles
梅干し風梅漬け 
They are actually a byproduct of ume syrup making. I made ume syrup with an ume to sugar ratio of 2:1 (common ratio is 1:1). After I separated the ume from the syrup, I added 5% salt and red perilla.
実際は、梅シロップ作りの副産物です。梅と砂糖を2:1(通常は1:1)の割合で梅シロップを作り、梅とシロップを分けてから、塩を5%、赤紫蘇を加えました。

To make umeboshi, you must dry pickled ume in the sun for about three days, but these pickles need no drying.
梅干しを作るには、漬けた梅を3日間程度、天日干しする必要がありますが、この梅漬けは、干す必要がありません。

Note: I dried both the traditional and low-salt umeboshi in the food dehydrator. That's why I have been able to make umeboshi before the rainy season ends.
注:私は、伝統的な梅干しも減塩梅干しも食品乾燥機で乾燥させました。というわけで、梅雨が終わる前に梅干しを作ることができました。

So, which of these three I like the best? The umeboshi-style ume pickles, of course. They are easy to make, they need not be dried in the sun, and they taste really good! Besides, you can get ume syrup as a byproduct.
では、この中で私が一番好きなのはどれか、というと、もちろん、梅干し風梅漬けです。作るのは簡単だし、日干しする必要はないし、本当に美味しいからです。それに、副産物として、梅シロップもできます。

Making Low-Salt Umeboshi/低塩梅干しを作る

As I mentioned briefly, I started to make low-salt umeboshi on June 18, following my father's recipe,  described here.
ちょっと述べたように、6/18に低塩梅干しを作り始めました。ここで述べた父のレシピに従いました。

1,100 g + 560 g = 1,660 g of ume, plus 5% salt and water enough to cover the ume.
梅1,100 g + 560 g = 1,660 g、塩5%と、梅がかぶるだけの水。
On June 23, I decided to dry them in the sun.
6/23、日干しすることにしました。
Bubbling, a clear sign of fermentation.
泡立っています。明らかに発酵しています。


It was a sunny day.
晴れの日でした。
I later replaced the sieve with a flat one.
後で、ザルを平らなものに変えました。

I wanted to dry them in the sun for three consecutive days, but I was unable to.
3日間連続で日干ししたかったのですが、できませんでした。

Today (June 28), I transferred the ume to a glass jar, added some vinegar and shochu (about 2 tbsp each) and 5% sugar (instead of 20%).
今日(6/28)、梅をガラス瓶に移し、お酢と焼酎を少し(それぞれ大さじ2杯程度)と砂糖を5%(20%ではなく)を入れました。
I will taste them tomorrow morning.
明日の朝、味見してみます。

On the early morning of June 29, my father and I tasted the umeboshi.
6/29の早朝、父と梅干しを食べてみました。
I also tasted the low-salt umeboshi my father made last year (right).
父が去年作った低塩梅干し(右)も食べてみました。
My father just can't remember how much sugar he added. (The recipe calls for 20% sugar.) Both umeboshi were equally sour and were not sweet, so I decided not to add additional sugar.
父は砂糖をどれくらい入れたか思い出せないそうです(レシピでは砂糖が20%必要)。どちらの梅干しも同様に酸っぱく、甘くないので、砂糖はもう足さないことにしました。

Umeboshi Made by My Parents/両親が作った梅干し

Just wanted to share some photos of the umeboshi made by my parents.
両親が作った梅干しの写真です。
Well, one day, my father said he wanted to buy some umeboshi at a supermarket, but I talked him out of it by telling him that there were jars of umeboshi in the kitchen.
ある日、父がスーパーで梅干しを買いたいと言い出したのですが、私は台所に梅干しが入った瓶があると言って、止めさせました。

At lunchtime today, I took out three umeboshi from each jar, so that three of us (my parents and me) could taste them.
今日の昼食時、各瓶から梅干しを3個取り出し、3人(両親と私)で味見しました。
The umeboshi from each jar were quite tasty, especially the ones from the bigger jar. They were quite salty, however, so I think I'll remove some salt from some of them and soak them in honey.
どちらの瓶の梅干しはとても美味しかったです。特に大きな瓶の梅干しが美味しかったです。でもとても塩辛いので、少し塩を抜いて、はちみつに漬けようと思います。

Frozen Eggplants and Frozen Cucumbers/冷凍なすと冷凍きゅうり

On April 17, the weeping cherry tree in the yard of my parents' house was in full bloom.
4/17、実家の庭のしだれ桜(ざくら)は、満開になりました。

I have been given an assignment by my mother: Do something about the frozen eggplants and frozen cucumbers, which have been sitting in the freezer for months (years?)
母から課題を与えられました。冷凍庫に何か月(何年?)も置いてある冷凍なすと冷凍きゅうりをどうにかすることです。

First, I thawed some of them and tasted them. They were quite salty, so I soaked them in water to remove salt,
まず、一部を解凍して味見すると、かなり塩辛かったので、水に漬けて、塩分を抜きました。
and finely chopped them.
そして細かく刻みました。

I put them in a frying pan, heated them to evaporate moisture, and added white sesame seeds, katsuobushi, and mentsuyu (noodle soup) concentrate. Not yet tasty enough...。
I later added soy sauce, sugar, and vinegar. I thought that the vinegar boosted up the flavor.
フライパンに入れ、加熱し水分を飛ばし、白ごま、鰹節、濃縮タイプの麺つゆを加えました。まだ美味しくならない...。
後でしょう油、砂糖、お酢を入れました。お酢で味が良くなったと思います。

I served the final product to my parents, who said it was very delicious.
最終的に出来上がった物を両親に出しました。とても美味しいと言ってくれました。

I will make a similar pickle again. I still have lots of frozen eggplants and cucumbers left in the freezer.
似たような漬物をまた作るつもりです。まだ冷凍庫に冷凍なすときゅうりがいっぱいあるので。

Ingredients:
4 frozen eggplants
4 frozen cucumbers
20 g katsuobushi
Generous amount of white sesame seeds
50 ml soy sauce
1 tbsp sugar
1 tsp instant dashi
30 ml vinegar
材料:
冷凍なす 4本
冷凍きゅうり 4本
鰹節 20 g
白ごま たっぷり
しょう油 50 ml
砂糖 大さじ1
出汁の素 小さじ1
お酢 30 ml

Directions:
1. In a frying pan, put katsuobushi and sesame seeds, turn on the gas to low and heat them for 1 min. or so.
1. フライパンに鰹節とごまを入れ、火を付け弱火にして、1分程度加熱する。
2. Squeeze frozen eggplants and cucumbers, chop them, and squeeze them again.
2. 冷凍なす、きゅうりを絞り、刻んで、再度絞る。
3. Add them to the pan. Heat for 4-5 min. to evaporate excess moisture.
3. フライパンに入れる。4~5分加熱し、余分な水分を飛ばす。
4. Add the seasonings except the vinegar.
4. お酢以外の調味料を入れる。
5. Taste to see it is seasoned sufficiently. Add more seasonings if necessary.
6. Add vinegar. Taste again.
5. 味見して、味付けが十分か確かめる。必要に応じて、調味料を足す。
6. お酢を入れる。再度味見する。
7. Let it cool, and transfer to a container.
7. 冷まして、容器に移す。
I hope my parents like it.
両親が気に入ってくれるといいのですが。

Follow-up on My Low-Salt Umeboshi/低塩梅干しの続き

This is the last bag of my low-salt umeboshi, which I had kept in the freezer. I thawed them in the fridge, added 10% sugar, instead of 20%, and put them back in the fridge. They now look like this.
私が作った低塩梅干しが入った最後の袋です。冷凍庫に入れてありました。冷蔵庫で解凍し、砂糖を10%(20%ではなく)入れ、冷蔵庫に戻しました。こんな感じになりました。
 
I have found that 20% sugar is just too much, making the umeboshi wrinkled up, so I have decided to add only 10%. The resultant umeboshi are plumper and less sweet, and therefore, much more suitable as an accompaniment to hot plain rice.
2割の砂糖は多過ぎで、梅干しがしわくちゃだらけになってしまうことが分かっています。そこで、1割しか入れないことに決めています。できた梅干しはふっくらしていて、甘さも控えめで、温かいご飯のお供により適しています。

I hope I can present an improved version of my low-salt umeboshi in the next ume season.
次の梅の季節には、低塩梅干しの改良版をお見せできればと思っています。

Making Low-Salt Umeboshi, Day 9, Final Post for Now/低塩梅干し作り、9日目、今のところ最終投稿

Yesterday (Day 8), I made several decisions after discussing with my wife, who is the major consumer of umeboshi in my family. We agreed that the umezuke (pickled ume), made by adding 20% sugar to ume pickled in salt water for 5 days but not dried for 4 days,
昨日(8日目)は、妻(我が家では一番梅干しを食べる人)と話してから、色々と決断をしました。意見が合ったのは、梅漬け(塩水に5日間漬けたが、4日間干していない梅に砂糖を20%足したもの)は、
were not bad after all. In fact, they were quite tasty. So, I decided to follow my father's recipe until the end.
悪いものではなかった、ということ。実際、とても美味しいです。というわけで、父のレシピに最後まで従うことにしました。

In Japan, we are now in tsuyu (rainy season), and yesterday was really a lucky day for me. As I described in the preceding post, I started to dry some of the ume in the sun early in the morning (before 7), while leaving the others indoors. At around noon, I checked the ume outdoors, and was surprised to see that they had turned reddish.
日本では、今、梅雨(つゆ)で、昨日は本当にラッキーな一日でした。先に述べたように、梅の一部を朝早く(7時前)に日干しし始めました。残りは室内に置いたまま。昼頃、屋外の梅を見て、赤っぽくなっているのにびっくりしました。
I immediately started to dry the other ume in the sun. Notice the difference in color.
すぐに、残りの梅も日干ししました。色の違いを見てください。
Unfortunately, the ones that I started to dry in the sun after noon did not turn reddish at around 3:30, probably because of less intense sunlight.
残念ながら、昼過ぎに日干しし始めた梅は3:30頃でも赤っぽくなりませんでした。太陽の光が弱かったせいだと思います。 
Ume that I started to dry in the sun early in the morning:
朝早くから日干しし始めた梅: 
I decided to end the drying process yesterday. Rain was expected for today (and it's raining right now).
干す段階は昨日で終わらせることにしました。明日は雨の予報(現に今、降っています)。

I followed my father's recipe for 200 g of the ume first.
父のレシピをまず200 gの梅で試しました。 
Add 40 g sugar, and some shochu with an alcohol content of 35%.
砂糖を40 g、アルコール度数35%の焼酎を少し入れます。 
(Again, I used 25% shochu.)
(私はまた25%の焼酎を使いました。)

Shake the container gently to mix them.
容器を優しく振って、混ぜます。
 
This morning, I checked the low-salt umeboshi.
今朝、低塩梅干しを見てみました。
I tasted one, and found it was quite good.
一つ味見しましたが、美味しかったです。


Yesterday, I decided to leave the other dried ume (> 5 kg) unprocessed, put them in four I-Wrap bags, put two of them in the freezer and the other two in the vegetable compartment of the fridge.
For these ume, we can select from three options: 1. Have them as they are, without adding salt or sugar; 2. Add 3% salt to make them taste like conventional umeboshi (I found that 6% was too much for me); and 3. Add 20% sugar, by following my father's recipe.
昨日は、残りの干した梅(5キロ以上)は処理しないことに決め、アイラップ4つに分け、2つは冷凍庫に、もう2つは冷蔵庫の野菜室に入れました。
この梅に関しては、選択肢が3つ: 1.塩も砂糖も足さずにそのまま食べる、2.塩を3%足し、普通の梅干しのような味にする(6%は私には多過ぎました)、3.父のレシピ通り、砂糖を20%足す。

The umeboshi that I made by adding 6% salt were too salty for my taste, as I described above, so I rinsed them in water to remove some excess salt.
塩を6%足して作った梅干しは、上述の通り、私の口には塩辛すぎるので、水洗いして余分な塩を少し取りました。

Making Low-Salt Umeboshi, Day 8/低塩梅干し作り、8日目

Yesterday, I transferred the ume from the Tupperware container to an I-Wrap bag, and put it in the fridge. Last night, I tasted one, and found it was quite salty. To be more precise, I had the feeling that when sourness and saltiness were combined, the human taste bud might get them mixed up and mistakenly sense the sourness as saltiness.
This morning, I took the bag out of the fridge,  
昨日は、タッパー容器の梅をアイラップに移し、冷蔵庫に入れました。昨晩、一つ味見しましたが、かなり塩辛いと思いました。正確に言うと、酸味と塩味が合わさると、人間の舌は、2つを混同し、酸味を塩味だと誤って感知するのではないかと思いました。
今朝、袋を冷蔵庫から出して、
 
and had one with a bit of hot rice.
一つ、温かいご飯と一緒に食べました。 
Salty for sure but has turned slightly mellow.
確かに塩辛いですが、ちょっと熟した感じです。 
After having the salty umeboshi, I started to think that my father's low-salt umeboshi were not bad after all. I asked my wife to taste the salty version as soon as possible and tell me her opinion.
この塩辛い梅干しを食べてから、父の低塩梅干しも結局悪くないなあと思い始めました。妻に、できるだけ早く、塩辛いほうを食べてみて、意見をきかせて、と頼みました。

Today, it's sunny, so I started to dry some of the ume in the sun.
今日は天気なので、梅の一部を日干しし始めました。  
I will leave the others indoors to see if the two versions will differ in flavor and texture.
残りは室内に置いて、味と食感が変わるか調べようと思います。
