Tamago toji refers to a dish completed by pouring beaten eggs over the ingredients cooked in a pot.

とじ < とじる(to closeなど)
卵とじとは鍋で調理した具材に溶き卵をかけて完成させる料理のことです。
As part of supper tonight, I made tamago toji with 250 g pork and one big onion.
今日の夕飯には、豚肉250 gと玉ねぎ大1個で卵とじを作りました。
I wanted to use four or more eggs, but I found only six of them in the fridge, so I used only two. I will need four others for breakfast tomorrow.
卵は4個以上使いたかったのですが、冷蔵庫には6個しかなかったので、2個だけ使いました。明日の朝食に4個必要なので。
The broth was a 8:1:1 mixture of dashi, mirin, and soy sauce.
汁は出汁、みりん、しょう油を8:1:1の割合で合わせたものです。

Make a tamago toji dish according to your preference. It may or may not be soupy. Eggs may or may not be lightly beaten, and may or may not be fully cooked. The broth may be a 4:1:1 mixture of dashi, mirin, and soy sauce, or it may be much lighter, say, 12:1:1.
好みに合わせて卵とじ料理を作って下さい。スープっぽくしなくてもいいし、卵は軽く溶いてもいいし、完全に火を通さなくてもいいです。汁は出汁、みりん、しょう油を4:1:1で混ぜたのでもいいし、もっと軽くてもいいです(12:1:1など)。

I often do finish a nabe type dish with a beaten egg, just didn't realize that there is actually a terminology for it. なるほど!Tamago toji is a really good way to finish off a dish. I like it less cooked with more yolk intact!
okasan: In your case, you could say,
鍋の最後に卵でとじる
nabe no saigo ni tamago de tojiru
to pour eggs to finish off the nabe dish

One more egg dish! What a nice surprise! I am so crazy for eggs, eat lots of them (we eat with my husband much more eggs than any person we know but still less than the Japanese: I have read that the Japanese consume more than 300 eggs a year on average). I have never heard about this dish. Thank you for the linguistic explication.
By the way, I'm preparing an egg dish post too. I hope you will like the idea...

Sissi: Even though you have never heard about this dish, you have already made a specific tamago toji dish a number of times called oyakodon, right (laugh)?
300 eggs a year? That's almost one egg a day! But I think my family consumes much more!
