One of the reasons why I have decided to freeze the nukadoko (rice bran pickling bed) is that my family, including me, are not great fans of nukazuke. It's not that we hate it; it's simply that we are satisfied with having a few slices of nukazuke a meal. Because of the high sodium content of nukazuke, I prefer suzuke (vinegar pickles) to nukazuke, and I can have as many slices of suzuke as I want because of the relatively low sodium content.
ぬか床を冷凍することにした理由の一つは、私を含め、家族全員、ぬか漬けがそれ程好きではないからです。嫌いなわけではないですが、一食に数切れ食べれば満足です。ぬか漬けは塩分が高いので、酢漬けのほうが好きです。それに塩分が比較的少ないので、酢漬けは食べたいだけ食べれます。

Put 300-400 g eggplants in an I-wrap bag, add one bag of powder, and add 300 ml water. Put the I-wrap bag in the fridge.
なすを300~400 g、アイラップに入れて、粉を一袋入れ、水を300 ml入れます。冷蔵庫に入れます。
You can have lightly pickled eggplants in half a day to a day.
なすの浅漬けが半日~1日で食べられます。

What I Had for Lunch and Supper on the First Day of Shiozawa Matsuri/塩沢まつりの初日の昼食と夕飯に食べた物
Every year, on July 14 through 16, Shiozawa Matsuri is held on and around Bokushi Dori (Street). That means that the people around here are now in a festive mood, and I am no exception.
On July 14, I had this marvelous assortment of sashimi for lunch all by myself.
毎年7月14日~16日まで、牧之通り周辺で塩沢まつりが行われます。と言うわけで、この辺の人はお祭り気分になっています。私も例外ではありません。
7月14日、一人でこのお刺身の盛り合わせを昼食に食べました。
This assortment is for 3 servings.
I had it with two leftover onigiri (laugh).
この盛り合わせは三人前です。
残りのおにぎり二個と食べました。
I rinsed the tsuma (garnish), shredded daikon and kombu, with water and put it in miso soup the next morning.
ツマ(大根の千切りと昆布)は水で洗って、次の日の朝、味噌汁に入れました。
For supper, I bought these at the supermarket, Harimaya, and had them in their parking area, where tables and chairs were provided. I later bought another beer (sorry, not beer but third-category beer, which is cheaper).
夕飯にはスーパーの「はりまや」で買って、テーブルと椅子が置かれた駐車場で食べました。後でビールをもう一本買いました(ビールではなく、第三のビールでした、失礼)。

Aji no Nanban Zuke and Chicken Karaage/アジの南蛮漬けと鶏の唐揚げ
Today, I finally got around to making aji no nanban zuke for supper tonight.
今日はやっと夕飯にアジの南蛮漬けを作ることができました。
Yesterday, I bought one pack of aji for 198 yen, which contained eight aji of various sizes.
昨日、アジを1パック、198円で買いました。色々な大きさのアジが八尾入っていました。
They were all too big to be called ko aji or mame aji, so I filleted them in a usual way, and cut each fillet into two or three parts.
どれも小あじ、豆あじと呼べる大きさではないので、普通に三枚におろし、切り身をそれぞれ二つ、三つに切りました。
One Tupperware container was not enough to contain the deep-fried aji, and I had to use two!
揚げたアジを入れるのにタッパーの容器一つでは足りず、二つ使いました。
The nanban sauce is a 3:3:1 mixture of vinegar, soy sauce, and sugar.
I didn't add any red peppers, because I used some "kagura nanban", a local vegetable similar to green peppers but hot like red peppers, together with green peppers and onions.
南蛮ソースはお酢、しょう油、砂糖を3:3:1で混ぜたもので、赤唐辛子は入れませんでした。「神楽南蛮」という、ピーマンに似ていて、赤唐辛子のように辛い地元の野菜を、ピーマンと玉ねぎと一緒に使ったので。
I also made chicken karaage, using two breasts.
胸肉を使って鶏の唐揚げも作りました。
I personally prefer chicken breast karaage, but most Japanese think chicken thigh karaage is superior.
個人的には鶏の胸肉の唐揚げのほうが好きなのですが、大抵の日本人は腿の唐揚げのほうが優れていると思っています。
About one hour or so later, the nanban zuke already looked delicious.
一時間程度で、南蛮漬けはもう美味しそうになりました。
And, it was delicious.
そして、本当に美味しかったです。

My Nukadoko on July 14/私のぬか床、7月14日
In the July 1 post, I briefly mentioned that the daikon nukazuke made in my nukadoko, which I kept in the vegetable compartment of the fridge, tasted really bad.
7月1日に、冷蔵庫の野菜室に入れたぬか床で作った大根のぬか漬けが本当にまずかったと簡単に触れました。
In fact, after I tasted a few slices, I decided to throw the whole nukazuke away. It was that awful.
数切れ食べた後、すべて捨てることにしました。それ程まずかったです。
One site recommends storing nukadoko in the fridge once it is fully fermented, and it also recommends taking it out from the fridge about once a week and keeping it at room temperature. I now doubt if the writer of the site actually practices what s/he writes.
或るサイトでは、ぬか床が完全に発酵したら、冷蔵庫に保存することを薦めていて、また、一週間に一度程度、冷蔵庫から出して、室温で保存することも薦めています。今となっては、このサイトの作者が書いていることを実際に実践しているのか疑わしいです。

この頃、暑い日が続き、ぬか床の温度を管理するのがとても難しくなってきました。昨日、とうとう、ぬか床を冷凍庫に保存することにしました。
I transferred all the contents of the container to an I-wrap bag.
容器の中身をすべてアイラップに移しました。
I put the I-wrap bag in another one, and stored it in the freezer. I will start nuka zuke again when it gets cooler.

Kyushoku Center (School Lunch Center), Continued/給食センター(続き)
This new kyushoku center caters for one junior high school and two elementary schools. Before the center was built, the junior high school and one of the elementary schools had their own kitchen on their respective premises, and the main reason why I wanted to participate in this event was that I wanted to know if anything had changed for the worse because of the change from the school kitchen system to the central kitchen system. On that particular day, the center made 1,130 meals in total. I learned from the nutrition teacher that the staff start making meals at 8:15 and finish making meals for the two elementary schools no later than 11:45 (and usually around 11:30) and finish making meals for the junior high around 12:00. Apparently, there seem to be no major changes for the worse. Reason: This particular kyushoku center is relatively small, and caters for only three schools, so the period from the time the meals are made until they are eaten can be kept short. In some large kyushoku centers that cater for more schools, the time difference is rather long.
The cost of the ingredients of the day's school lunch was 307 yen per meal, which must be covered by the parent under the School Lunch Program Law, while the equipment, labor, fuel, and other costs are covered by the municipality.
この新しい給食センターは中学校一校と小学校二校の給食を賄います。このセンターができる前は、中学校と、小学校二校のうち一校は敷地内に調理室がありました。私がこの会に参加したかった主な理由は、自校方式からセンター方式への変更で何か悪い方向に変わったかどうかを知りたかったからです。その日は、センターでは合計1,130食を作りました。栄養教諭からきいたところ、職員は8:15に作り始め、小学校二校の給食は遅くとも11:45までに(通常は11:30頃)作り終わり、中学校の給食は12:00頃に作り終わるそうです。見たところ、悪い変化はないようです。理由: この給食センターは比較的小さく、三校の給食しか作っておらず、給食ができてから食べるまでの時間を短く抑えられます。もっと多くの学校の給食を作る大きな給食センターでは、時間差はかなり長くなります。

Kyushoku Center (School Lunch Center)/給食センター
Today, I participated in the event to visit the kyushoku (school lunch) center and have a school lunch, organized by the Kyoyo (Culture) Committee of the PTA of my son's junior high school. The kyushoku center was completed in August last year.
今日は、息子の通う中学校のPTAの教養委員会が主催する、給食センター見学試食会に参加しました。給食センターは去年の8月に完成しました。

After the talk, the participants watched how the lunch was made. The kitchen is on the first floor, and we had to watch from the conference room on the second floor.

Iwashi no Ume Shiso Fries/イワシの梅シソフライ
I finally bought two "iwashi no ume shiso fries" (and two ebi cream korokke) yesterday.
昨日、やっと「イワシの梅シソフライ」二つ(と海老のクリームコロッケを二つ)買いました。
Iwashi = Sardine
Ume in this case means umeboshi.
イワシ = Sardine
この場合、梅とは梅干のことです。
