Ko Aji no Nanban Zuke/小あじの南蛮漬け

I bought a pack of ko aji (small horse mackerel) on the day the flood took place (July 30), and put it in the optical partial freezing compartment of the fridge. Today (August 3), I finally got around to use them to make nanban zuke. One great advantage of a partial freezing compartment is that once I put some food in it, I can forget about its expiration date for weeks.
洪水が起きた日(7月30日)に小あじを1パック買って、冷蔵庫の光パーシャル室に入れました。今日(8月3日)、やっとそれを使って南蛮漬けを作ることにしました。パーシャル室の大きな利点の一つは、そこに食品を入れたら、数週間は消費期限を気にしなくていいことです。
At first, I thought I would try the technique explained in this video at 1:25 and after to clean the ko aji, but I decided to cut off the head with the deba. Well, I thought it was a kind of scary to have them whole... (Don't laugh!)
I found one aji had a small sardine in its mouth!
最初はこのビデオで1:25から説明されている方法で小あじをさばこうと思ったのですが、出刃で頭を落とすことにしました。丸ごと食べるのがちょっと怖い気がして...。(笑わないで下さい!)
口に小さなイワシをくわえたアジがありました!
Be sure to remove the blood. That being said, I failed to remove it completely (because the aji had been partially frozen?).
必ず血合いを取って下さい。と言うものの、完全に取れませんでした(パーシャル冷凍したせい?)。
And, make sure you don't hurt yourself with the back fin.
それから、背びれで怪我をしないように注意して下さい。
I later cut big ko aji in half. I put all the ko aji in an I-wrap bag, added 2 tsp katakuriko (potato starch), and shook the bag to evenly coat the aji.
Deep-fry at a low temperature (160-170C) for 10 min. so that even the backbone becomes soft enough.
後で大きい小あじは半分にしました。小あじ全部をアイラップに入れ、片栗粉を小さじ2入れて、アイラップを振って、まんべんなく衣をつけました。
背骨も十分柔らかくなるよう、低温(160~170C)で10分間、揚げます。
As usual, my marinade is a 3:3:1 mixture of vinegar, soy sauce, and sugar (75 ml, 75 ml, 25 ml this time).
いつも通り、タレはお酢としょう油と砂糖を3:3:1で混ぜたものです(今回は75 ml、75 ml、25 mlにしました)。
”Where are the ko aji?", you might ask. Here they are.
「小あじはどこ?」と言われるかも。ここです。
I'm sure the ko aji no nanban zuke will be much tastier tomorrow!
この小あじの南蛮漬けは明日はきっともっと美味しくなってるでしょう!

Shibazuke/しば漬け

On the night of July 28, I started making shibazuke by following this recipe (Japanese only). Luckily, I found this recipe later, which is a translation of the first one, saving me from the tedious work of translation!
7月28日の夜、このレシピでしば漬けを作り始めました。運良く、後で、このレシピを見つけ、翻訳という退屈な作業をしないで済みました!
The reason for the dark color of the myoga is that they had been frozen. The myoga had been frozen for a whole year!
茗荷の色が濃いのは、冷凍してあったからです。丸一年、冷凍していた茗荷です!
I used two 2-liter PET (polyethylene terephthalate) bottles as weights.
重石として2リットルのペットボトルを2つ使いました。
On the morning of July 29, I got this much water coming out of the vegetables.
7月29日の朝、これだけの水が野菜から出ていました。
I searched for aka jiso in and around my yard, and found only this amount.
家の庭の周りで赤ジソを探したのですが、これだけしか見つかりませんでした。
I had to buy some more aka jiso! I had one very serious problem: My house was flooded below floor level!

For Those Who Are Interested in Itadori Jam and Itadori Drink/イタドリジャムとイタドリジュースに興味のある方へ

In May, I was planning to make itadori jam, as well as itadori drink (inspired by Sissi's Rhubarb Soft Drink). I almost made the former, but I gave up the attempt before adding sugar. Reason: I tasted a few slices of boiled itadori, I was sure I could never like the itadori flavor even if I added sugar.

For those who are interested in making itadori jam, go to the first post linked to above, and for those who are interested in making itadori drink, first click here, which explains how to make it in Japanese, with photos.
Here's a brief description of how to make it:

1. Wash itadori stems and leaves.
You don't have to peel the skin from the stems.
2. Cut into appropriate size and put in a juicer.
3. Put the liquid into a container.
The liquid is separated into a pink part (top) and a green part (bottom).
4. Transfer the pink part into a bottle. Freeze for storage.

To drink, completely thaw and mix with water and honey.

The site says that itadori drink is effective in relieving fatigue.

5月、イタドリジャムとイタドリジュース(Sissi'さんのRhubarb Soft Drinkからヒントを得て)を作ろうと計画していました。イタドリジャムを作る寸前だったのですが、砂糖を入れる前に諦めました。理由は、茹でたイタドリを少し味見したのですが、砂糖を入れても、絶対好きになれないと確信したからです。

作り方の簡単な説明です:

1. イタドリの茎と葉を洗う。
茎の皮を剥く必要はない。
2. 適当な大きさに切って、ジューサーに入れる。
3. 液体を容器に入れる。
液体はピンクの部分(上)と緑の部分(下)に分かれる。
4. ピンクの部分を瓶に入れる。保存するには冷凍する。

飲む時は、完全に解凍して、水とハチミツを混ぜる。

このサイトには、イタドリジュースは疲労回復に効果があると書かれています。

Rainbow Trout Catching/ニジマスつかみどり

My children and I went to Shakunage Ko Matsuri (Shakunage Lake Festival) today, where an event "fish catching" was held at 13:00 and 15:00.
今日は、子供たちと「しゃくなげ湖まつり」に行ってきました。13:00と15:00に「魚つかみ」というイベントが行われました。

My children caught a total of nine large rainbow trouts and four small ones.
子供たちは全部で大きなニジマスを九尾と小さなのを四尾つかまえました。
I usually clean rainbow trouts using a deba, but today, I searched for a good way, and found this one. Scroll down and view the video. Very clever! You don't need a knife to clean a rainbow trout.
普段は、出刃を使ってニジマスをさばくのですが、今日はいい方法を探して、こんな方法を見つけました。スクロールダウンして、ビデオを見て下さい。ニジマスをさばくのに包丁は要りません。
I grilled all the big ones in my reliable toaster oven, three at at time, for twenty minutes each time. To prevent the fins from scorching, place some salt on the fins. Such salt is called kazari (decorative) jio (< shio) or kesho (cosmetic) jio. I didn't bother to apply kazari jio. 大きいのは、オーブントースターで、一回に三尾づつ、それぞれ20分かけて焼きました。ヒレが焦げるのを防ぐには、塩をヒレにつけて下さい。このような塩は飾り塩とか化粧塩と呼ばれます。私はわざわざ化粧塩はつけませんでした。

Edited to add: I sprinkled a total of 2 tsp salt on both sides of the trouts, rubbed each trout with my hands, let them stand for a few minutes, and wiped off water with paper towels before grilling.
追記: ニジマスの両面に塩を合計小さじ2杯かけて、手でニジマスをひとつづつもんで、数分おいて、水分をキッチンペーパーで拭いてから焼きました。

In Japan, peaches are usually sold protected by cushioning as in this photo.
日本では、桃は普通、写真のようにクッション材で保護されて売られています。

Naga negi:
長ねぎ:
Naga negi are popular in Kanto (Eastern Japan), while ao negi (lit. green onions) are popular in Kansai (Western Japan). I am a Kanto person, and I seldom buy ao negi.
Note that only the white part of naga negi is used.
関東では長ねぎが一般的で、関西では青ねぎが一般的です。私は関東人なので、青ねぎは殆ど買いません。
長ねぎの白い部分しか使いません。

My wife bought it when she visited Niigata city. It has a funny name, but is actually peanuts coated with cocoa powder.
妻が新潟市に行った時に買って来ました。面白い名前ですが、実際はピーナッツをココアパウダーで包んだものです。

プレミアムロールケーキ(150円)はコンビニチェーン「ローソン」でしか買えません。Monde Selectionの金賞を2年連続受賞しています。
It's an un-rolled "roll cake". It was very good!
巻いてない「ロールケーキ」です。とても美味しかったです!

I bought two packs of salt-grilled tai (sea bream) heads and other trimmings.
鯛の頭やアラの塩焼きを2パック買いました。
Few foods make me happier than such cheap salt-grilled fish heads, kama (collars), and trimmings.
こんな安い魚の頭、カマ、アラの塩焼きほど幸せにしてくれるものはあまりないです。
My family got this sushi from a nephew:
甥からこのお寿司をもらいました。
Sasa maki zushi (sushi wrapped in bamboo leaves), a specialty of Toyama.
富山名産の笹巻寿司です。
Each piece of sushi with a saba (mackerel) topping is wrapped in a pre-cut bamboo leaf.
鯖が載った寿司がそれぞれ、予め切ってある笹の葉で巻かれています。
To our surprise, the nephew also gave us this incredible assortment of foods.
驚いたことに、甥はこんなにすごい盛り合わせもくれました。

My father-in-law gave us these wonderful aji no hiraki (horse mackerel cut open and dried).

This year, doyo no ushi no hi (the day of the ox in midsummer) falls on July 21. On this day, it is customary to have unagi (eel). So, I bought one pack of unagi no kabayaki.
(This particular year, we have another doyo no ushi no hi, which falls on August 2.)
今年は土用の丑の日は7月21日で、この日には鰻を食べる習慣があります。というわけで、鰻の蒲焼きを1パック買いました。
(今年は、土用の丑の日がもう一日、8月2日にあります。)
But, we didn't have the eel yesterday, because I had already decided to make inari zushi and temaki zushi.
でも昨日はこの鰻を食べませんでした。すでに稲荷寿司と手巻き寿司を作ると決めていたので。

We are going to have these anago tempura as part of supper tonight!
今日の夕飯にはこの穴子の天ぷらを食べます!

Finally, a very big watermelon with a cavity in it.
最後に空洞のある、とても大きなスイカ。
Such watermelons are sold cheap as kuudou ka (lit. cavity fruit). I got mine for 980 yen.
このようなスイカは「空洞果」として安く売られます。私の買ったのは980円でした。
I don't know how watermelons are sold in other countries/areas, but in Japan, all watermelons undergo ultrasound examination before shipment to see if they have such a cavity in them.
他の国や地域ではスイカがどのように売られているか知りませんが、日本では、スイカはすべて出荷前に超音波検査を受けて、このような空洞がないか調べます。

Bibimbap Recipe/ビビンバのレシピー

Here is the recipe of the bibimbap that I had at the kyushoku center the other day.
先日、給食センターで食べたビビンバのレシピーです。

Ingredients for 4 servings:
100 g ground pork

A
1.5 tsp sesame oil
1 tbsp sugar
1.5 tbsp soy sauce
1 tsp sake
1 tsp garlic

50 g reconstituted zenmai (Japanese flowering fern)
20 g naga negi
120 g komatsuna
120 g moyashi (bean sprouts)
30 g carrot
50 g kimuchi

Directions:
1. Pan-fry ground pork with sesame oil, and season with the ingredients under A.
2. Add zenmai, mix, and add chopped naga negi.
3. Cut spinach (komatsuna, I suppose) into 3 cm lengths, boil for color, and cool. Cut carrot into 3 cm strips and boil. Boil moyashi quickly.
4. Cut kimuchi into manageable size.
5. Combine all ingredients.
6. Place some on top of rice and eat it.

4人分の材料
豚挽き肉 100 g

A
ごま油 小さじ 1 1/2
砂糖 大さじ1
しょう油 大さじ 1 1/2
酒 小さじ1
ニンニク 小さじ1

戻しぜんまい 50 g
長ねぎ 20 g
小松菜 
もやし 120 g
にんじん 30 g
キムチ 50 g

作り方:
1. 豚挽き肉をごま油で炒め、Aの調味料で味付けする。
2. ぜんまいを加え、混ぜ合わせ、ねぎのみじん切りを加える。
3. ほうれん草(小松菜だと思います)は3c程度に切り、色よくゆでて冷やし、にんじんも3 cm程度の千切りにしてゆでておく。もやしはさっとゆでておく。
4. キムチは食べやすい大きさに切っておく。
5. 材料を全部合わせる。
6. ごはんの上にのせて食べる。

I used about 350 g ground pork, and changed the amounts of seasonings and other ingredients accordingly, and I used tsuki kon (a type of konnyaku as thick as udon noodles) in place of zenmai.
私は豚の挽き肉を350 g程度使い、調味料や他の具材の量を変更しました。また、ぜんまいの代わりに「つきこん」(うどんくらいの太さのこんにゃく)を使いました。


My daughter said it was delicious!!
娘が「うまい」と言ってくれました!
