Direct-Flame Coffee Roasting with a "Perforated" Pot/穴の開いた鍋による直火コーヒー焙煎

Note: The following description applies to direct-flame not hot air coffee roasting.
注:下記の記述は直火(熱風ではなく)コーヒー焙煎に当てはまることです。
 
First of all, let me show you my ideal coffee roaster No. 1.
まずは、私が理想とするコーヒー焙煎機一号機を見て下さい。
I have attached a piece of bamboo as a handle to facilitate shaking.
簡単に振れるよう、柄として竹を付けました。

This time, I decided to test whether it could roast 400 g of coffee beans evenly.
今回は、コーヒー豆400 gをムラなく焙煎できるか試すことにしました。 
You have to place a lid or something similar on the top for the first 10 minutes of roasting to keep the moisture inside the pot high.
This time, I decided to cover about 3/4 of the top.
焙煎の最初の10分間は、上部に蓋などをして、鍋の内部の湿度を高く保つ必要があります。
今回は、上部の約3/4を覆うことにしました。 
Note: As for the milk can roaster, you need not cover the top, because of its great height. A great feature of the milk can roaster is that you don't have to worry about exhaust air control.
注: ミルク缶焙煎機の場合は、高さがあるので、上部を覆う必要はありません。ミルク缶焙煎機の偉大な特徴の一つは、排気のコントロールを心配する必要がないことです。

Start roasting with the heat set to medium or high, depending on the heating power of the burner. If your burner has a heating power of 2,600 kcal/h or greater, you may want to start with medium. I started with the heat set to high because of the large amount of coffee beans.
Make sure that chaff starts to come off in about 3-4 minutes. If earlier, you need to lower the heat.
It is very important to keep in mind that coffee roasting is a two-phase process, drying phase and chemical reaction phase.
I first thought that I'd dry the beans for 12 minutes, but first crack occurred at around 11:45, so I changed my mind and removed the lid. Then, I took this photo and replaced the gas cylinder with a new one.
コンロの火力によりますが、火を中か強にして焙煎を始めます。火力が2,600 kcal/h以上のコンロであれば、中火で始めたほうがいいと思います。私は、コーヒー豆の量が多いので、火を強にして始めました。
極めて重要な留意点は、コーヒーの焙煎は2段階の工程であることです。乾燥段階と化学反応段階です。
最初は12分間、豆を乾燥させようと思っていたのですが、1ハゼが11:45に起きたので、考えを変え、蓋を取りました。この写真を撮って、ガスボンベを新しいのに交換しました。
Also, keep in mind that first crack should occur at 12-14 minutes after the start of roasting.
また、1ハゼは焙煎開始後12~14分後にすべきだということにも留意して下さい。

First crack continues for about 1-2 minutes. At this point, the beans lose weight by about 15%. When you bring them to second crack, they will lose weight by up to 20%.
1ハゼは1~2分続きます。この時点で、豆は15%程度重さが減ります。2ハゼまで持っていくと、20%まで重さが減ります。

When you have roasted your beans to the desired level, cool them immediately. I have an electric fan (not shown).
豆を好みのレベルまで焙煎したら、すぐに冷やして下さい。私は電気扇風機(写真には写ってません)を持っています。

I roasted my beans for a total of about 16 minutes.
I got 325 g of roasted beans.
合わせて16分程度焙煎しました。
焙煎した豆が325 gできました。
18.8% weight reduction.
重さの減った割合は18.8%。

Look at all the chaff generated during roasting:

I'm really glad that my pot roaster can roast 400 g of coffee beans properly.
私の鍋焙煎機はコーヒー豆400 gをちゃんと焙煎できて、うれしいです。

But, I have a new mission!
Yesterday, I found this great toaster oven sold for 500 yen at the second-hand store. Of course, I grabbed it!
しかし、私には新たなミッションが!
昨日、リサイクルショップでこのすごいオーブントースターが500円で売っていました。もちろん、すぐ買いました!

ヒータは上に2つ、下に1つ。 
It has a temperature control!
温度調節もあります! 
I think I'll convert this toaster oven into a coffee roaster.
このオーブントースターをコーヒー焙煎機にしようと思います。

An Ideal Coffee Roaster for Me/私には理想的なコーヒー焙煎機

I previously used a 26-cm diameter shallow, alumite pot to try to roast 200 g of coffee beans, but I failed, as I described here. After much thought, I decided to give the pot another try, but this time after making some holes at the bottom.
ここに書いた通り、以前、直径26 cmの浅いアルマイト鍋を使って、コーヒー豆を200 g焙煎しようとしましたが、失敗しました。いろいろ考えた結果、その鍋をもう一度試すことにしました。今回は底に穴を開けてからです。
    
 
300 g (not 200 g) of Brazilian coffee beans:
コーヒー豆(ブラジル)、300 g(200 gではなく): 
For the first 10 minutes, I placed this semicircular lid on the top.
最初の10分は、この半円形のふたを上に置きました。 
After 15.5 min. roasting:
15.5分間の焙煎後:  
The beans are now 250 g in weight.
豆は重さ250 gになりました。 
16.7% weight reduction. Sounds perfect!
重さは16.7%減りました。完璧です!
 
I know I need to refine my pot roaster slightly so that I can shake it more easily, but I'm pretty sure this is going to be an ideal coffee roaster for me.
この鍋焙煎機をもっと簡単に振れるよう少し改良する必要がありますが、私にとっては理想的なコーヒー焙煎機になるだろうと確信しています。

Washoku, traditional dietary cultures of the Japanese, notably for the celebration of New Year/和食;日本人の伝統的な食文化-正月を例として-

In December last year, Washoku was added to UNESCO's Intangible Cultural Heritage list. It's very important to note that Washoku as the traditional dietary cultures of the Japanese has been recognized as a cultural asset, not any particular Japanese foods or dishes.

去年12月、和食がユネスコの無形文化遺産に登録されました。とても重要なことは、或る特定の日本の食品や料理ではなく、日本人の伝統的な食文化としての和食が文化遺産と認められたことです。

The Nomination file no. 00869 for inscription in 2013 on the Representative List of the Intangible Cultural Heritage of Humanity summarizes WASHOKU as follows:
WASHOKU is social practice based on a comprehensive set of skills, knowledge, practice and traditions related to the production, processing, preparation and consumption of food.

「無形文化遺産の代表的な一覧表への記載についての提案書」(農林水産省作成仮訳)では、和食を次のように要約しています。
「和食」は食の生産から加工、準備及び消費に至るまでの技能や知識、実践や伝統に係る包括的な社会的慣習である。

According to the leaflet introducing WASHOKU, published by the Government of Japan, WASHOKU has these four features:
Various fresh ingredients and using their natural tastes
Well-balanced and healthy diets
Emphasis of the beauty of nature in the presentation
Connecting to annual events

Followup on my Attempts to Make Better Coffee Roasters/もっと良いコーヒー焙煎機作りへの挑戦の続き

I've been playing with both of my kettle roaster and my milk can roaster, trying to determine their characteristics.
やかん焙煎機とミルク缶焙煎機の両方の特性を調べるため、いろいろと試しています。  
I have made holes on the bottom of the kettle, so it's now a direct-flame coffee roaster, just like a milk can roaster.
やかんの底には穴を開けたので、ミルク缶焙煎機同様、直火(じかび、ちょっか)式焙煎機となりました。
I have made this table, using corrugated cardboard boxes, in the garage.
車庫では、段ボール箱などを使って、この台を作りました。 
The electric heater on the right is for warming the gas cylinders, which will soon turn low in heating power due to evaporation heat while in use, especially when it's cold.
右側の電気ヒーターは、ガスボンベを温めるためです。ガスボンベは、使っているうちに気化熱のせいで火力がすぐに弱くなってしまいます(特に寒い時は)。
 
Today, I roasted three batches in total.
1. Mexican, roasted in my milk can roaster for 14 min.
220 g when green, 185 g when roasted, 15.9% reduction in weight
2. Mocha, roasted in my kettle roaster for 13 min.
270 g when green, 220 g when roasted, 18.5% reduction in weight
3. Brazilian, roasted in my milk can roaster for 15 min.
225 g when green, 190 g when roasted, 15.6% reduction in weight
今日は全部で3回焙煎しました。
1. メキシコ、ミルク缶焙煎機で14分焙煎。
生豆時220 g、焙煎時185 g、重量減少率15.9%
2. モカ、やかん焙煎機で13分焙煎。
生豆時270 g、焙煎時220 g、重量減少率18.5%
3. ブラジル、ミルク缶焙煎機で15分焙煎。
生豆時225 g、焙煎時190 g、重量減少率15.6%
 
 
Because of its shape, my kettle roaster confines heat, so that it roasts coffee rather quickly. First crack occurred 9 minutes after the start of roasting. It was hard for me to control the heat properly, and I ended up finishing roasting 13 minutes after the start of roasting.
I can't help thinking that the milk can roaster is the very best invention of Nakagawa-san, although he denies that. I want to have a roaster that can roast 300 g of coffee beans evenly, so I have a feeling that if I make a roaster with a can measuring 18-20 cm in diameter, it will be an ideal roaster for me.
私のやかん焙煎機は、その形状のため、熱がこもり、焙煎を早めにしてしまいます。1(いち)はぜは焙煎開始後9分で始まりました。熱を適切にコントロールするのが難しく、結局、焙煎開始後13分で焙煎を終了しました。
ミルク缶焙煎機は中川さんの最大の発明だと思わざるを得ません(中川さん自身は否定しますが)。私はコーヒー豆を300 g均一に焙煎できる焙煎機が欲しいので、直径18~20 cmの缶を使って焙煎機を作れば、私には理想的な焙煎機になるのではないかと感じます。
 
I tried the Brazilian coffee first. I brewed it with the Matsuya method.
まずはブラジルを試しました。松屋式で淹れました。  
Very good indeed! In fact, I'm not sure if I can find a coffee house that can serve coffee this good!
ホントにとても美味しかったです。こんなに美味しいコーヒーを出せる喫茶店を見つけられるか分かりません。

I have one big problem, though.
大きな問題が一つありますが。
My Hario Ceramic Slim can't grind coffee uniformly. That's another story.
ハリオのセラミックスリムでは、コーヒーを均一に挽けません。それはまた別の話ですが。

One-Year Anniversary of the Izakaya Horyo/居酒屋「豊漁」の一周年記念

Time flies! One year has passed since the iyakaya Horyo opened near my house, as I described here.
時が経つのは早いもので、家の近くに居酒屋「豊漁」がオープン(ここ参照)してからもう一年経ちました。
 
To commemorate the anniversary, the izakaya stages an anniversary sale on December 1 through 3.
一周年を記念して、居酒屋では12月1日~3日まで記念セールを行っています。

Using a Kettle as a Coffee Roaster/やかんをコーヒー焙煎機として使う

Yesterday (Nov. 30), I almost tried to roast 300 g of green coffee beans in this 18 cm diameter sieve.
昨日(11/30)は、この直径18 cmのざるで生豆(きまめ、なままめ)を300 g焙煎しようと思いました。
I thought of ways to attach a wooden handle to the sieve and wrap aluminum foil around the sieve. I was unable to find good ways, so I decided to go to the second hand store again, hoping to find other cheap items suitable for coffee roasting. I bought this 19 cm diameter kettle for 380 yen.
このざるに木の取っ手を付けて、アルミホイルをざるの周りに貼る方法を考えたのですが、いい補方法が見つからないので、またリサイクルショップに行って、コーヒー焙煎に適した何か安いものを探しました。この直径19 cmのやかんを380円で買いました。   
I also bought this big enameled pot for 1,500 yen.
この大きなホーロー鍋も1,500円で買いました。 
I liked this particular pot because it can be used as a steamer, too.
このポットは蒸し器としても使えるので気に入りました。 
Besides, I fell in love with these cute bears at first sight.
それにこのかわいいくまさんたちに一目ぼれしたので。

This year, major conbini chains have started to offer drip coffee at moderate prices (100 and 180 yen at 7-11 and Lawson, respectively). I've been interested to know how good their coffees would be. Both coffees were much worse than I had expected, especially the 7-11 one.
今年、大手コンビニチェーンはドリップコーヒーを手頃な値段で(セブンイレブン、ローソンではそれぞれ100、180円)販売するようになりました。どのくらい美味しいのかどうか興味がありましたが、どちらも期待よりはずっとまずかったです(特にセブンイレブンのは)。
 
Last night, my family had both Le Lectier and La France at the same time after supper.
昨晩は夕飯の後にルチェクチェとラフランスを同時に食べました。 
 
 
Generally, le Lectier is considered much tastier than la France, but my daughter said she prefers the latter.
一般的にルレクチェのほうがラフランスよりずっと美味しいと思われていますが、娘はラフランスのほうが好きだそうです。

本題に戻ります!
 
Today (Dec. 1), I tried to roast 315 g of Colombian coffee beans in the kettle shown above. But first, I "double roasted" 435 g of coffee beans I previously roasted.
今日(12/1)は、生豆(コロンビア)315 g、上のやかんで焙煎してみました。その前に、以前焙煎した豆を435 g「ダブルロースト」しました。

I wanted to dark roast them so that they would be suitable for iced coffee (coffee jelly, to be more precise), but probably due to the heat capacity of the portable burner, the beans wouldn't get darker. After all, I roasted them for about 12 minutes. The weight loss was only 10 g.
アイスコーヒー(正確に言えばコーヒーゼリー)に合うように深煎りしたかったのですが、カセットコンロの熱容量のせいか、色がこれ以上濃くなりませんでした。結局、12分程度焙煎しました。重さは10 g減っただけです。
 
Now, the main event of the day.
さて、今日のメインイベント。
 
315 g of green beans:
生豆315 g: 
Transferred to the kettle.
やかんに移しました。
This is how I shook the kettle.
やかんはこんなふうに振りました。 
With the lid on and the spout open.
蓋は付けて、注ぎ口は開けて。
 
I occasionally checked the beans inside from the spout.
時々、注ぎ口から中の豆をチェックしました。
Ten minutes later, I removed the lid, and started to shake the kettle again.
10分後、ふたを外し、またやかんを振り始めました。
I roasted them for about 15.5 minutes.
約15.5分焙煎しました。  
They are now 265 g in weight, so the weight loss is remarkable: 15.9%.
重さは265 gになったので、減った量はすごいです。15.9%です。
 
Rather uneven roast, as you can see from the photo, but considering this is the very first try with a kettle, I think this was a success.
写真も見て分かるよう、煎りむらがありますが、やかんを使っての初めての挑戦としては成功だと思います。
 
I may make some modifications to the kettle, like making holes at the bottom. Or, maybe I should remove the bottom and replace it with a net or something, as in this blog (Japanese only).
やかんをちょっと改造するかも知れません。底に穴を開けるとか。それとも、このブログのように、底を抜いて、網か何かを張ろうかとも思います。
