Thinking of Good Uses for Okara (Soy Pulp)/

As part of supper tonight, I was making potato salad. While doing so, I hit upon a good idea: Adding some okara to the potato salad!

Right: Type of potato salad I often make
Left: Potato salad plus okara at a ratio of 2:1

I mixed them well. I tasted some, and found it was very good! Even my daughter, who is usually a picky eater, said it was good!

I think I'll make okara ice cream in a day or two.

That's a great idea! I have recently become allergic to soybeans (although I can still eat them if they are fermented, like natto or shoyu) so I am sad that I can't make all these wonderful okara recipes. Well, I guess I can make them for my family, but it means that I can't eat them!

I suspect okara will work well in other mayonnaise-type foods.

YSC: I think I'm lactose intolerant. Or maybe I am allergic to cow's milk. I wasn't so in my teens and 20s, so I wonder what has become of me. Anyway, soy milk is a good alternative to cow's milk for me.

I still have a lot of okara left in the freezer, so I have to think of more good uses for okara!

Hi Hiroyuki san,

I hope you and your family and friends are safe. Take care.

Jan: Thanks for your kind words. We are safe now, but with so many afterquakes and another major earthquake that hit Nagano (and Niigata), I don't know what will happen any minute!

Hiroyuki san,

May you and your family and friends stay safe. I will pray for you and the Japanese people. Please know that a lot of people in the rest of the world have Japan in our thoughts.

Rina M, Jan, and Kiki: Thank you all for your respective comments.
The earthquake that hit my area at 3:59 today was nothing as compared with the greatest earthquake in Japanese history that hit the Tohoku and other areas yesterday.
My heart goes out to all the victims there, especially the fish dealer I know of in Kamaishi city, Iwate prefecture. I am worried if they are safe.
