A Trip to Sanjo City, Part 2/

The Sanjo Kaji Dojo offers two permanent courses:  Wakugi (Japanese-style nail) making and knife sharpening.

The master started by wet-grinding the knives from the two ladies who came a little later than I did.  Their knives were in very bad conditions.
As for me, I took five of my knives with me.
Then, the master started teaching how to sharpen knives to the ladies, using rough, medium, and finishing whetstones, in this order.
Later, another master came in.  He said he was a plane maker.  I later learned he was more than 90 years old!  This master wet-ground all my knives except the Shigefusa kitaeji petty knife, and taught me how to sharpen knives by sharpening them himself.  Then, he told me to sharpen the petty knife with the finishing stone only.  He kindly taught me how to wrap knives in newspaper.

Surprisingly, they didn't charge me any fee for their service.  I had thought that the knife sharpening course would cost 300 yen per adult.  I later learned that the Dojo offers this course free of charge for the time being.

After I left the Dojo, I headed for STOCK BUSTER.

Fascinating! I wish I had a Japanese knife and knew how to sharpen it... I have heard it's not obvious at all.

Sissi: I'm still not good at sharpening knives. When I become confident in my knife sharpening skill, I think I'll post about how to sharpen knives in detail.
