Nemagari Take/根曲がり竹

Slender bamboo shoots called nemagari take are a delicacy that can be savored only around this time of year. They are good in simmered dishes and miso soup, but I like them simply grilled with skin on.

I peeled them and had them with mayo and ponzu.

That looks simply amazing. I refuse to eat canned bamboo for any reason - but I've never had the real deal - I don't think I even had any when I visited China in 1999, it must have been the wrong time of year (November).

Nancy Heller: As you say, canned bamboo shoots can't compare with fresh ones.
