Hatsuga Genmai (Germinated Brown Rice)/発芽玄米

On October 19, I finally decided to use up the 10 go of genmai (brown rice), which had been stored in the storage cabinet for a whole year. My plan was to cook half of it in a normal way and the other half as hatsuga genmai (germinated brown rice).

10月19日、収納キャビネットに丸一年保存していた玄米10合を使い切ることにしました。半分は普通に炊いて、残りの半分は発芽玄米として炊くという計画です。
発芽玄米を作るのは簡単です。レシピはここにあります。
Luckily, no rancid odor after one-year storage at room temperature.
運よく、室温で1年間保存していたのに、嫌な臭いはありませんでした。
Rinse in cold water, transfer to a container (mixing bowl in the photo), and put water at 30 degrees C or higher. Leave for 1-2 days until germination occurs, with several changes of water.
水洗いし、容器(写真ではボール)に移し、摂氏30度以上の水を入れ、1、2日、発芽するまで置いておく(途中、何回か水を替える)。
I cooked half of it in a normal way, by adding some more water just before starting to cook.
半分は普通に、炊き始める寸前に水をもう少し足して炊きました。

Not bad, although I had to chew it more than I would to eat white rice.
白米を食べる時より、よく噛まないといけませんが、悪くないです。

And, today (October 21), the rest of the genmai looked like this.
そして今日(10/21)、残りの玄米はこうなりました。



I liked it! Less chewy than the brown rice I had two days ago. I wouldn't mind having germinated brown rice two or three times a week!
おいしかったです!二日前に食べた玄米より柔らかかったです。週に2、3回なら発芽玄米を食べてもいいと思いました。

Simple Food. Rice and Vegetables with less spice in the curry or soup. I should follow the Japanese. We eat a lot of spice and chilli indeed.

seeandoh: In Japan, just the opposite is happening. Young people tend to like spicy food.

That is funny bu the reality. I am planning to start a small Salad Bar and Soup Lounge. I will try to use Organic vegetables as much as possible. Local veggies, fruits etc. People are more health conscious...not the young though I guess. They need some spice in life..!!
