Oboro Dofu/おぼろ豆腐

For lunch today, I made my first attempt to make oboro dofu (< tofu) using home-made soy milk. "Oboro" means haze, as in "oboro zuki yo" (a night with a hazy moon).
今日の昼食には、初めて、自家製の豆乳でおぼろ豆腐を作ってみました。「おぼろ」とは、「おぼろ月夜」などの「おぼろ」、つまりhazeという意味です。

Oboro dofu is a poetic name for fluffy bits of curdled soy milk in a pot. If you get the bits of soy milk together, you will get yose dofu (yose < yoseru (to get together)); if you ladle them in a bowl or tub, you will get kumi dofu (kumi < kumu (to ladle)); and if you put them in a sieve, you will get zaru dofu (zaru = sieve). If put in a mold with holes, with cotton cloth in it, to drain, oboro dofu will turn into momen (cotton) dofu.
おぼろ豆腐とは、鍋で固まったふわふわした豆乳を指す、詩的な言葉です。それを寄せれば、寄せ豆腐ができ、お椀や桶に汲めば、汲み豆腐ができ、ざるに入れれば、ざる豆腐ができます。木綿の布を敷いた、穴付きの型に入れて、水を切れば、おぼろ豆腐は木綿豆腐になります。

Two days ago, I bought a bag of 1-kg locally grown soybeans for 1,000 yen.
二日前、地元で採れた1キロの大豆を1袋買いました。

I used 100 g of them.
100 g使いました。

And, I put 1,000 ml of water in the pot. Almost 2 cm lower than the lower limit. To make tofu, you need soy milk with a soybean solid content of at least 8%, preferably 10-12%.
そして、ポットには水を1,000 ml入れました。下限線より2センチ近く下です。豆腐を作るには、大豆固形分が少なくとも8%、できれば10~12%の豆乳が必要です。

Soy milk was done.
豆乳はできました。

This is the nigari (bittern) I used.
使ったにがりです。



Use 1% nigari to make tofu? But, it is by weight or by volume??
I relied on the instruction manual supplied with the soy milk maker: 2.5 g nigari for 1,000 ml soy milk. Dissolve the nigari in 50 ml water.
I reheated the soy milk to 75C. According to several sites, a temperature of 70 to 75C should be fine.
豆腐を作るにはにがりを1%使う?でも重さで?それとも体積で?
豆乳メーカーの取扱説明書に頼りました。豆乳1,000 mlに対してにがり2.5 g。にがりを50 mlの水に溶かす。
豆乳を75Cまで温めました。幾つかのサイトによれば、70~75Cの温度がいいそうです。

I added almost all the nigari solution, and then stirred very gently.
にがり溶液を殆ど全部入れ、とても優しくかき混ぜました。

Two or three minutes passed, but the soy milk showed no signs of being curdled. I was a little upset, and made some more nigari solution, and added it. The soy milk was curdled immediately.
2、3分経ちましたが、豆乳は固まる気配がありませんでした。ちょっと焦って、にがり溶液をもう少し作って、入れました。豆乳はすぐに固まりました。

Results:

I'm not very happy with the results.
結果には満足していません。

Natural Peppermint Oil/天然はっか油

Today, around noon, I went to HAYAKAWA, a shop specializing in antiques and crafts, as well as used clothing, to buy a very special item: Natural peppermint oil produced here in the Muikamachi area of Minami Uonuma city.
今日は昼頃、骨董品や古布を扱うお店「はやかわ」に、とても特別な品を買いに行ってきました。南魚沼市の六日町地域で作られた「天然はっか油」です。


10 ml natural peppermint oil in a glass spray bottle costs 1,260 yen (including tax). You can have the bottle refilled for 840 yen (including tax).
The large bottle on the right contains peppermint distilled water, which I got free of charge.
ガラスのスプレー瓶に入った天然はっか油が10 mlが1,260円です。840円(税込み)で詰め替えしてもらえます。
右側の大きな瓶には、はっか蒸留水が入っています。無料で頂きました。

Okara Hamburgers/おからハンバーグ

As part of supper tonight, I made okara hamburgers.
今日の夕飯にはおからハンバーグを作りました。

The main ingredients were 300 g ground pork and the okara I got from making soy milk from 125 g dry soybeans.
主な材料は豚の挽き肉300 gと、乾燥大豆125 gから豆乳を作った時にできたおからです。

The other ingredients were:
1 egg
1 large onion, finely chopped and microwaved
Panko (Japanese bread crumbs)
(No salt or pepper)

他の材料は
卵1個
玉ねぎ大1個(みじん切りにしてレンジで火を通したもの)
(塩やコショウは、なし)

I fried one small and four large ones in the frying pan, with a small amount of oil.
小さいの一つと大きいの4つをフライパンで少量の油で焼きました。

The rest went to the freezer.
残りは冷凍庫へ。

At the high okara-to-meat ratio, the hamburgers were crumbly.
肉に対するおからの割合が多いので、ハンバーグは脆(もろ)かったです。

The sauce was a mixture of 3 tbsp each of soy sauce, mirin, and sake, as usual, which was heated in the frying pan after removing the hamburgers.
ソースはいつも通り、しょう油、みりん、お酒を大さじ3杯ずつ混ぜたもの。ハンバーグをどけた後のフライパンで火を通しました。

They were good enough for me, but I think I should have used more pork and less okara.
十分美味しかったですが、豚肉を多くして、おからを減らすべきでした。

Microcomputer unit
You can see from top to bottom: heating element, no-water burning prevention sensor, grinder, and boil-over prevention sensor.
The grinder is not detachable, so you have to be very careful not to hurt yourself when washing. You also have to be careful not to let water enter the microcomputer unit.
マイコン部
上から順に、ヒーター、空だき防止センサー、カッター、ふきこぼれ防止センサーが見えます。
カッターは取り外しできないので、洗う時は怪我をしないように注意する必要があります。また、マイコン部に水が入らないよう注意する必要があります。

I don't think that the supplied measuring cup is calibrated properly. The scale below reads 260 g, and the cup weighs 55 g, so the soaked soybeans should weigh 205 g, but actually, the soybeans are well over the 200 g line indicated on the cup.
付属の計量カップの目盛りは正しくないと思います。下のはかりは260 gを指しています。カップの重さは55 gなので、大豆の重さは205 gのはずですが、実際はカップに示された200 gの線よりかなり上にあります。

I wanted to follow recipe 1, which calls for 350 g soaked soybeans and 5 1/2 cup (1,100 ml) water to make thick soy milk.
However, if you put more than 200 g soaked soybeans in the pot, the microcomputer unit does not fit in the pot, because of the long heating element.
私はレシピー1(濃い豆乳を作るため、浸し大豆を350 g、水を5 1/2カップ(1,100 ml)使う)を試したかったのですが、
浸し大豆を200 g以上ポットに入れると、ヒーターが長過ぎて、マイコン部がポットにフィットしません。

So, I put only 200 g soaked soybeans, and added 1,100 ml of water. The water level was about 0.7 cm lower than the lower limit indicated on the pot.
そこで、浸し大豆を200 gだけ入れ、水を1,100 ml入れました。水位は、ポットにある下限線より0.7 cmくらい下でした。

Insert the power cord female plug into the socket, and all the six lamps will light. Press the Tonyu (Soy milk) button once, and only the Kanso mame (Dry bean) lamp will now light. Press the Tonyu button again, and only the Hitashi mame (saoked bean) lamp will now light. Press the Start button.
電源コードのプラグを差込口に差し込むと、ランプが6個すべて点灯します。豆乳ボタンを一回押すと、乾燥豆ランプだけが点灯します。豆乳ボタンをまた押すと、浸し豆ランプだけが点灯します。スタートボタンを押します。

Soy milk is made from soaked beans in 25 minutes (and dry beans in 35 minutes).
When soy milk is made, the beep sounds.
浸し大豆では、25分で豆乳ができます(乾燥大豆なら35分)。
豆乳ができると、ピーピーと音が出ます。

I washed the microcomputer unit immediately .
マイコン部をすぐに洗いました。

I placed the supplied sieve on top of the supplied container.
付属の容器の上に付属のザルを載せました。

The sieve is too small to contain all the soy milk at once.
ザルは小さ過ぎて、豆乳を全部一度に入れられませんでした。

I had to wait a few minutes until I could transfer the rest.
残り全部を入れるのに数分待たされました。

I washed the pot and the "mixer" (cylindrical part) immediately.
ポットと「ミキサー」(円筒状の部品)をすぐに洗いました。

I transferred the okara (soy pulp) to the bowl that already contained the okara from the first batch.
おからは、最初に作った時にできたおからを入れたお椀に入れました。

Soy milk in the container. The container is not calibrated, so I can't tell exactly how much soy milk I got. Probably 1.2 liters or so.
容器内の豆乳。容器には目盛りがないので、どのくらいできたかはっきり分りません。多分1.2リットルほどです。

This is almost all the parts contained in the box.
箱に入っていた部品のほぼすべてです。

This is the recipe I tried to follow (lower one). As I mentioned earlier, it calls for 350 g soaked soybeans and 5 + 1/2 cups = 1,100 ml water to make thick soy milk, but you can't put more than 200 g soaked soybeans in the pot! How can this happen? Did the recipe writer really use this soy milk maker to make this recipe??
これが試そうと思ったレシピー(下の方)です。前述したとおり、濃い豆乳を作るため、浸し大豆を350 g、水を5 + 1/2カップ = 1,100 ml使うようになっていますが、ポットには浸し大豆を200 g以上入れられません。何でこうなるんでしょう?レシピーを書いた人は本当にこの豆乳メーカーを使ってレシピーを作ったのでしょうか??

The instruction manual does not contain a description of how to make oshiruko! What is this supposed to mean??
取扱説明書にはお汁粉の作り方の記述がありません。一体どういうことでしょうか??

I made one batch of corn soup according to the instruction manual, and the resultant corn soup was very thin. We had to add some store-bought cream stew roux and some sliced onion (microwaved).
取扱説明書どおりにコーンスープを一回作りましたが、とても薄かったです。市販のクリームシチューのルーと玉ねぎの千切り(電子レンジで火を通したもの)を入れました。

No wonder that my father (82) was unable to decipher the instruction manual. No clear-cut, step-by-step instructions. Sadly, such instruction manuals are more a rule than an exception.
父(82歳)が取扱説明書を解読できなかったのは無理ありません。明確かつ、順を追った説明がないので。悲しいことに、このような取扱説明書はよく見かけます。

Okara (Soy Pulp)/おから

This post is continued from the March 1 post on a soy milk maker.
豆乳メーカーに関する3月1日の投稿の続きです。

I have made three batches of soy milk so far. My father is quite generous, and he told me that I could have the soy milk maker, and asked me to order another for him. So, the soy milk maker is now mine!
今まで豆乳を3回も作りました。父はとても太っ腹で、この豆乳メーカーを私にあげるから、新しく注文してくれ、と頼まれました。と言うわけで、この豆乳メーカーは私の物になりました!


This evening, I cooked the okara from three batches of soy milk.
今日の夕方、豆乳3回分でできたおからを料理しました。

Unlike store-bought okara, this okara contained a lot of soy milk because I didn't bother to squeeze it out, so I tried to evaporate the water for some time.
店で売っているおからと違い、豆乳を絞らなかったので、おからには豆乳がいっぱい含まれていました。しばらく、水分を蒸発させました。

I just added julienne carrot, dried shiitake, and chopped naga negi, and seasoned with 2 tbsp each of soy sauce, mirin, and sake and 2 tsp instant dashi.
ニンジンの千切り、干しシイタケ、長ネギのみじん切りだけ入れて、しょう油、みりん、お酒を大さじ2杯づつ、出汁の素を小さじ2杯で味付けしました。

After simmering on low heat for about 20 minutes, the okara was still watery.
20分くらい弱火で煮ても、おからはまだ水ぽかったです。

I later added some sesame seed oil for flavoring.
後で香り付けにごま油を少し入れました。

Just Before Hina Matsuri/ひな祭りの直前に

Yesterday (March 2), one day before Hina Matsuri (Doll Festival), my daughter came down with the flu (sigh)!
昨日(3月2日)、ひな祭りの前日に、娘がインフルエンザにかかりました(ため息)。

Anyway, I went shopping to buy some ingredients for tonight's supper that would please her.
とにかく、娘が喜ぶような夕飯の材料を買いに行きました。

Clams, shelled prawns from Vietnam, a pack of premade gomoku chirashi zushi (< sushi) ingredients, and sashimi-grade sweet shrimp from Canada
はまぐり、ベトナム産のむきえび、五目ちらし寿司の素、カナダ産の刺身用甘えび

And, some sweets
それからお菓子も

Ebi fries, Caramel Corn, "Kanjuku O" (lit. Sweet-and-Mature King)bananas,
Bisco biscuits, "chou cream" (cream puff), and Choco Ball
エビフライ、キャラメルコーン、甘熟王バナナ

Note that the Caramel Corn is of Hina Matsuri version, peach flavored.
キャラメルコーンはひな祭りバージョンで、もも味です。

Hamaguri osuimono (clear soup with clams)
はまぐりのお吸い物

Both are common dishes served on Hina Matsuri Day.
ともに、ひな祭りの日にはよく出される料理です。

Soy Milk Maker/豆乳メーカー

The other day, my father (82) asked me to order a soy milk maker for him. I ordered one and had it delivered to his house in Chiba prefecture. Two days ago, I got a call from my father, saying he couldn't use the maker. I knew this was going to happen. I had even suggested that I have it delivered to my house, learn how to use it, and send it to his house. I suggested he send me the maker and everything, so I could learn how to use it. The soy milk maker arrived today, and I made one batch before noon. It was quite easy to make soy milk with this automatic soy milk maker.
先日、父(82歳)から、豆乳メーカーを注文してくれるよう頼まれました。注文して、千葉県に住む父の家に届けてもらいました。二日前、父から「豆乳メーカーが使えない」という電話がありました。こうなるだろうとは分っていました。私の家に届けてもらって、使い方を覚えて、それから父の家に送ろうか、とも言ってあったのですが。私が使いかたを覚えられるよう、豆乳メーカーなどすべて私の家に送ってくれるよう言いました。今日、豆乳メーカーが届き、昼前に豆乳を一回作りました。この自動豆乳メーカーを使えば、豆乳を作るのはとても簡単でした。


35 minutes later, I got this amount (about 1.4 liters) of soy milk from 100 g dry soy beans.
35分後、100 gの乾燥大豆からこれだけ(約1.4リットル)の豆乳ができました。


I later strained the soy milk and got this amount of okara (soy pulp).
後で、豆乳を漉して、これだけの「おから」ができました。
