Making Natsumikan Ponzu Again/再び、夏みかんポン酢を作る

Today, I squeezed all the last natsumikan my father sent us to make ponzu. As you can see, most of them were rather small, and had blemishes and bruises all over them (and were not suited for making natsumikan peels simmered with sugar). The recipe is the same as that that I described here.
今日は、父が送ってくれた最後の夏みかんを絞って、ポン酢を作りました。見て分かる通り、大半は小さ目で、傷やシミだらけ(なので、夏みかんの皮の砂糖煮には不向き)でした。レシピはここに書いたのと同じです。
I used the squeezer only once. I knew my hands were a better tool for sequeezing the citrus fruit.
絞り器は一回しか使いませんでした。手でやったほうが、この柑橘系果物をよく絞れるのは分かっていました。

From 48 small-size natsumikan,
小さい夏みかん48個から、
I was able to get about 900 ml juice.
果汁が900 ml程取れました。
To 400 ml juice, I added 400 ml soy sauce, plus some shredded kombu and some (15 g) katsuobushi. At this point, I forgot to add 100 ml mirin (with alcohol removed by boiling).
果汁400 mlにしょう油400 mlと刻み昆布を少しと鰹節を少し(15 g)入れました。この時点では、(煮切った)みりんを100 ml入れるのを忘れていました。

 
I have to add the mirin soon! I'm looking forward to using the ponzu, because home-made ponzue is usually tastes great.
みりんを早く入れないと!通常、自家製のポン酢はとっても美味しいので、このポン酢を使うのが楽しみです。

Aji Sashimi and Ara Jiru/アジの刺身と、あら汁

Today, I went to the A-COOP store again, hoping to get some interesting mushrooms and other foodstuffs. I found numeri sugitake again. This time, the bag has a lable that clearly indicates the variety on it.
今日は、面白いきのこや他の食材があるかなあ、と思い、またA-COOPに行って来ました。また「ぬめりすぎたけ」がありました。今度は、はっきり品種が書かれたラベルが貼ってありました。
I also bought a bag of brown enoki and a pack of "miso pea" (= peanuts).

I found sashimi-grade aji sold for 78 yen each! I bought four of them.
刺身用のアジが78円で売ってました!4尾買いました。
Before I went to the A-COOP store, I went to the 100-yen shop, where I bought these:
A-COOPに行く前に、100円ショップに行き、こんなのを買いました。
Inaka (lit. country) soba, a pair of chopsticks for my son, spicy takana (a type of green), and mulukhiya seeds.
田舎そば、息子用の箸一膳、ピリ辛高菜、モロヘイヤの種。

I should have selected aji more carefully! The second one from the top was rather small.
もっと注意してアジを選ぶべきでした!上から2番目のが小さめです。
I'm not very good at making sashimi, and managed to fillet the aji and made them into sashimi. Sorry for the poor presentation. The sashimi tasted very good.
私は刺身を作るのはあまり上手ではないです。どうにか3枚におろし、刺身にしました。見栄えが悪くて、すみません。刺身はとても美味しかったです。
I also made ara jiru (soup with fish trimmings). Sorry, a photo of the leftovers.

My Son's Birthday/息子の誕生日

My son's birthday is in April. Last night, to celebrate his birthday, we went to the local kaiten zushi (conveyor-belt sushi restaurant) here in the Shiozawa area of Minami Uonuma city.
息子の誕生日は4月です。昨晩は、誕生日祝いに、南魚沼市の塩沢地域にある回転寿司に行きました。

We sat at a table in the zashiki (Japanese-style room with tatami mats). My son ordered sushi a la carte. So did my daughter.
座敷に座りました。息子と娘は寿司を一品づつ注文しました。 
I ordered the day's recommendations.
私は、その日のお薦めを注文しました。
My daughter also ordered a mini ikura don set, and gave the ramen to my wife,
娘はミニイクラ丼セットも頼んで、ラーメンを妻にあげて、
and had the mini ikura don.
ミニイクラ丼は自分で食べました。
At my suggestion, my son ordered engawa and kohada. (I forgot to take a photo of the engawa.)
私の勧めで、息子はエンガワ(縁側、えんがわ)とコハダ(こはだ)も頼みました(エンガワの写真を撮るのを忘れました)。
He said he liked the engawa for its unique texture.
エンガワの独特の食感が気に入ったそうです。

We ordered some other sushi, but I didn't bother to take photos of them. I wanted to go back home soon because I wanted to have some sake at home.
他にも寿司を幾つか注文しましたが、わざわざ写真に撮りませんでした。私は早く家に帰って、家でお酒を飲みたかったです。

I had this sake, Funaguchi Kikusui Ichiban Shibori, the first genshu (unprocessed sake) commercialized in Japan.
このお酒、ふなぐち菊水一番しぼりを飲みました。日本で始めて商品化された原酒(げんしゅ)です。




For an appetizer, I selected sardines in miso sauce, previously bought at the 100-yen shop..
酒の肴には、100円ショップで買っておいた、いわしの味噌煮を選びました。

My Orangettes/私のオランジェット

My natsumikan peels simmered with sugar taste great, but I wanted to have something similar to orangettes again. So, I made them in a very simple way yesterday, and today, I made another batch.
私の夏みかんの砂糖煮はとても美味しいのですが、オランジェットに似たものをもう一度食べたくなったので、昨日、簡単な方法で作り、今日もまた作りました。

First I melted about 60 g chocolate for about 1 minute in the 700-W microwave.
まずは約60 gのチョコを700Wの電子レンジで約1分加熱しました。 
Then, I added a generous amount of previously made natsumikan peels.
次に、作っておいた夏みかんの皮をたっぷり載せました。
Then, I mixed them all with a pair of chopsticks.
次に、箸で全部混ぜました。
They may not look appetizing at all, but actually, they tasted so great that my children finished them off in no time at all (sad).
全然美味しくなさそうですが、実際はとっても美味しくて、子供たちがあっという間に平らげてしまいました(悲)。

My Rented Field, Spring 2013/借りている畑、2013年春

Yesterday, I spent the whole morning tilling the soil and adding bark compost, organic lime, and chemical fertilizer all at once. 
昨日は、畑を耕し、バーク堆肥、有機石灰、化学肥料をすべて一度に混ぜました。

川岸はまだ殺風景でした。  

My field is at the center of the photo, measuring about 6 x 5 m = 30 m2.
私の畑は写真の中央、約6 x 5 m = 30 m2です。
3 bags (3 x 40 = 120 L) bark compost, 1/2 bag (20/2 = 10 kg) organic lime, and 1/2 bag (20/2 = 10 kg) chemical fertilizer.
バーク堆肥を3袋(3 x 40 = 120 L)、有機石灰を1/2袋(20/2 = 10 kg)、化学肥料を1/2袋(20/2 = 10 kg)。
Some people say that adding compost and lime at once should be avoided because they cause a chemical reaction, while others say otherwise. I chose organic lime in an attempt to avoid this possible problem rather than magnesium or slaked lime. (I'm no expert on this matter.)
堆肥と石灰を一度に加えると、化学反応を起こすので、よくないと言う人もいますし、問題ないと言う人もいます。私は、苦土石灰や消石灰ではなく、有機石灰を選んでこの問題を避けようとしました(この件に関しては専門家ではないので、よく分かりません)。
For this work, I used this three-pronged hoe only.
この作業には、この三つ又の鍬だけを使いました。
I have another regular one, but I found the one above easier to use.
通常の鍬も持っていますが、このほうが使いやすいです。

You may think that a field of this size is nothing as compared with much larger fields. You may be right, but for a larger field, you will definitely need a cultivator.
こんな大きさの畑は、もっと大きな畑と比べたら、何でもないと思うかもしれません。それはそうですが、これより広い畑なら、耕運機が絶対必要です。
I was really glad that it was cloudy in the morning. I don't want to work outside for hours when it's sunny and hot.
午前中は曇りで本当に良かったです。晴れで暖かい時は何時間も外で仕事したくないです。

Tamogitake and Numeri Sugitake/タモギタケとヌメリスギタケ

Yesterday, I went to the local A-COOP store, where I found these two mysterious mushrooms. The varieties not indicated on the labels. I later called the producer to ask her what they were. My son was right. They were tamogitake and numeri sugitake (Pholiota adiposa).
昨日は、地元のA-COOPに行ったのですが、そこでこんな奇妙はきのこを2種類見つけました。ラベルに品種が書いてありません。後で生産者に電話して、何なのか尋ねました。息子は合ってました。タモギタケとヌメリスギタケです。 

I asked my son how he wanted to have these mushrooms. His request: takikomi gohan for tamogitake and clear soup for numeri sugitake.
息子にこのきのこをどう食べたいか尋ねると、リクエストは、タモギタケは炊き込みご飯、ヌメリスギタケは澄まし汁。

I made takikomi gohan in my usual way: first parboiling the mushroom with water, soy sauce, sake, and mirin for a few minutes, adding the liquid to the rice cooker pot, but NOT adding the mushroom.
炊き込みご飯は私の普段の作り方で作りました: きのこを水、しょう油、お酒、みりんで数分茹でて、液は炊飯器に入れますが、きのこは入れません。
We had kogomi (fiddleheads) for the first time in this season.
今シーズン、初めてこごみを食べました。
I didn't collect them, but I bought them...
採ったのではなく、買ったのです...。

After the rice is cooked, I placed some mushrooms on top of the rice.
ご飯が炊けてから、ご飯の上にきのこを少し載せました。

Vegetable Gardening, Spring 2013/野菜作り、2013年春

First of all, my lunch today:
最初に、今日の昼食:
Leftover tempura batter, pan-fried that night, and kept in the fridge.
天ぷらの衣の残りをフライパンで当日焼いて、冷蔵庫に入れておきました。
 
It turned into a tasty okonomiyaki in an instant.
すぐにおいしいお好み焼きに変身しました。 
I bought six bags of bark compost, one bag of chemical fertilizer, and one bag of organic lime.
バーク堆肥を6袋、化学肥料を1袋、有機石灰を1袋買いました。
I decided to plant the asparagus, fukinoto, and myoga roots in these spots.
アスパラガス、フキノトウ、ミョウガの根をここに植えることにしました。
Not the right places to plant them, though.
最適な場所ではないですが。

I will plant some sweet potato seedlings here.
ここにはサツマイモの苗をいくつか植えます。
I planted the shiso and other seeds in planter boxes, so I can move them to where I want them later.
シソの種などはプランターに植えました。後で好きな所に動かせるように、です。
