Hash Browns Made by Using New Potatoes/

I have already talked about our hash browns here, so I will be brief again.

About 700 g potatoes, microwaved and mashed.
Equal amount of potatoes, diced into 5-mm cubes.
Mixed the cubed potatoes with the mashed.
Add salt and pepper and add an appropriate amount of potato starch to attain the right texture.
Scoop some with a large spoon, and shape into a ball first and then flatten it.

I made 48 pieces in total.

I decided to deep-fry one half of them.
The main dish was eel kabayaki, given to us by my wife's sister!

My daughter said there were delicious!

Miko: Thanks for a very short comment!

I have to think of lots of ways to consume potatoes before they go bad!

my favourite potato dish is scalloped potatoes made by my mother. (very decadent, not healthy..)
she slices the potato thinly and in a baking dish layers the potato slices with garlic, onion, salt and pepper and tops with swiss cheese, pours some heavy cream over the top and bakes in the oven. so delicious!

Stacy D: Thank your for your suggestion. I think I'll make something similar to your scalloped potatoes, without using an oven (I don't have a decent oven in the kitchen).

These look really delicious. I have never eaten hash browns actually...
Congratulations for your potato crops! The amount looks impressive.
Will you show us your potato salad? One of my favourite Japanese dishes! I often make it for my husband's bento and he is so happy! Tastes good only with Japanese mayonnaise though.
I'm looking forward to seeing what you will make with your potatoes.
