My Type of Ramen/私の好きなラーメン

Ramen is said a national dish of Japan, but that doesn't mean that everyone in Japan likes ramen. I, for one, feel an aversion toward many contemporary ramen because they are just too salty and/or fatty for my taste, and I rarely go to a ramen shop these days. Today, I made ramen of my own style.
ラーメンは日本の国民食と言われていますが、日本の誰もがラーメンを好きなわけではありません。私自身は現在の多くのラーメンに対して嫌悪感を抱いています。私の口には塩辛過ぎたり、脂っこすぎたりするからです。最近はラーメン屋に行くことは殆どありません。今日は自分なりのラーメンを作りました。

I made thick slices of naruto.
なるとは厚く切りました。

The ramen soup is a 12:1:1 mixture of dashi, soy sauce, and mirin.
ラーメンのスープは出汁、しょう油、みりんを12:1:1で合わせたもの。

I also made vegetable stir-fry, which I served in a separate plate.
野菜炒めも作りました。別のお皿に盛りました。

Hi Hiroyuki, I just discovered your blog from egullet. I lived in Japan for a few years as a child (now I'm in California) but I still like to cook Japanese food for my family. I really like your recipes and the pictures. They are very homey yet inspiring and full of information. Please keep writing!

YSC: Thanks for your compliment! And, yes, this blog is intended to provide some insight into home-style Japanese cooking. I am more concerned about what I eat on a daily basis than what I eat on special occasions. But, I'm still learning Japanese cooking, and I'd like to show you some sophisticated dishes in the future!
