Nukadoko Bread, Final Post/ぬか床、最終

I made another attempt. Yesterday, I made a dough properly this time, leaving out rice flour.
Thus, 125 g bread flour, 25 g nukadoko, and 68 ml water (flour to nukadoko ratio = 5:1).
また試しました。昨日、今度はちゃんと生地を作りました。米粉は抜かしました。
というわけで、強力粉125 g、ぬか床25 g、水68 ml(粉とぬか床の割合=5:1)。
  
This morning, I checked the dough, and found it had not risen properly. I decided to give up my attempt to make nukadoko bread.
今朝、生地を調べると、ちゃんと膨らんでませんでした。ぬか床パンを作るのはあきらめることにしました。
I decided to make a flatbread instead.
代わりにflatbread(平らなパン)を作ることにしました。 
Grilled for 10 min. in my 1000-W toaster oven.
1000Wのオーブントースターで10分焼きました。

I had it, and found it was not very good. I had imagined that nukadoko would give the bread a nice flavor, like that of whole-grain bread. I decided to give up making nukadoko bread altogether.
食べてみましたが、あまり美味しくなかったです。ぬか床が、全粒粉パンのようないい風味を出してくれると想像していたのですが。ぬか床パンを作るのは完全に諦めました。
 
I have found a better thing to do today. Making amazaka (lit. sweet sake)! I have to buy some koji (rice malt)!
今日、もっといいことを見つけました。甘酒を作ることです!麹を買わないと!

My wife had the nukadoko bread for lunch without a problem. She said that the smell of the nukadoko didn't bother her.
妻は昼食にこのぬか床パンを問題なく食べました。ぬか床の臭いは気にならないそうです。

Ruminating Roy: Thanks! The amazake is in the making, and will be fully fermented around 9 o'clock tonight. It's now 16:34 in Japan.
