Rare Cheesecake/

This post of Indirect Heat, Miso cheesecake, has made me realize that I haven't made "rare" (unbaked) cheesecake for quite some time. So, I made some rare cheesecake today. Note that my rare cheesecake is base-less.

Ingredients:
1 box (250 g) cream cheese
200 g plain yogurt
40 g sugar
1 tbsp yuzu juice
5 g gelatin
50 ml water to dissolve gelatin

The original recipe, written on the inside of the cream cheese box, says to heat the cream cheese for about 30 seconds in a 500-W microwave, but I cut mine into small pieces, put them in a bowl, add sugar, mixed, and left them at room temperature for about 1 hour until soft.

Notice my Shigefusa kitaeji petty knife. Cooking is fun with this knife.

If you want to follow the manufacturer's recipe exactly, use 60 g sugar (instead of 40), use 1 tbsp lemon juice instead of yuzu juice, and use 10 (90 g) biscuits and 40 g butter for the base. Put the biscuits in a vinyl bag, crush them by pounding, and mix with room temperature butter. Place them on the bottom of a 18-cm round mold.

About one hour later, the cream cheese became soft.

As you may know, a yuzu has a lot of seeds in it.

Yuzu juice and seeds:

Add yogurt, yuzu juice, and dissolved gelatin in this order, mixing well each time.

Transfer to a 18-cm round mold (in my case, a plate), and put in the fridge for 2-3 hours.

Sorry, I can't take appetizing photos of my rare cheesecake!

It was tasty, but my daughter and I thought that it would have been better without the yuzu flavor.

Urasa Kiku Matsuri (Urasa Chrysanthemum Festival)/

Sorry, not a food-related topic again. I went to the Urasa Kiku Matsuri (Urasa Chrysanthemum Festival) today. Urasa is the name of a place in Minami Uonuma city. This festival is held every year inside the grounds of Fukoji, also known as Bishamondo, from October 31 through November 10 this year.

About 1,000 pots of chrysanthemums are on display.

There was a strong wind blowing on the site, causing many leaves to fall. They reminded me of snowflakes falling in the winter.

Minami Uonuma Ichiba Matsuri (Market Festival)/

As I mentioned in the previous post, I went to the Sixth Minami Uonuma Ichiba Matsuri today.

At 8:55 a.m., the opening ceremony was held.

I like this festival because they are very generous with free samples.

This year, they offered crab soup for 100 yen per bowl. Unfortunately, no monk fish soup this year.

I forgot what the fish was! Young yellowtail or something.

I also bought a pack of mentaiko (spicy cod roe) for 1,000 yen.

I simmered the fish heads with daikon in a 8:1:1 mixture of water, soy sauce, and mirin.

This dish is basically the same as "buri daikon". Buri means adult yellowtail, and buri daikon is a very popular dish in winter.

I simply grilled the other fish parts in the toaster oven after sprinkling with salt.

Today, I went to the Minami Uonuma Ichiba Matsuri (Market Festival).

Many events were held there, but for me, the main event was the Maguro Kaitai (Tuna Cut) Show.

I later learned in the show that this tuna was a bigeye tuna, and weighed 71 kg.

Other tunas were already cut, and were ready for auctions.

One head and two kama (collars):

I took some videos of the show. Sorry for the poor quality of the videos. I only have a digital camera, and I had to take videos with my right hand only in a crowd. I had a bag in my left hand.

The show began at 9:30, and this big guy cut off the fins first (not taken in the video) and then the head. He then started at the back side, cutting off a big fillet.

Another person is scrapping off the flesh from the backbone. Such flesh is called nakaochi. Nakaochi actually means backbone, but it usually means the flesh on it.

The big guy then cuts off one kama (collar). Such a fatty kama is called kama-toro.

He shows the audience a fatty part and says, "Mechakucha umai!" (absolutely delicious).

The guy holds the nakaochi (backbone) and says that this is the real nakaochi.

My Kind of Yakisoba/

I made yakisoba for supper tonight at the request of my daughter. My kind of yakisoba is substantial one. Besides yakisoba noodles, my yakisoba (for 4 servings) typicall contains:
1/4 cabbage
1/2 carrot
1 onion
1 pack moyashi (bean sprouts)
200-300 g pork.

So, it's very hard to pan-fry pork first, followed by vegetables and then by noodles, and stir them all, so I usually pan-fry vegetables first, transfer them to a plate, pan-fry pork, transfer it to the plate, and then loosen noodles in the pan by adding some water, putting on the lid, and heating for some time. Then, I add the vegetables and the pork, stir them all, and add the supplied yakisoba sauce.
