Today, I got this amount of non-standard (jumbo) enoki mushrooms from an acquaintance who runs an enoki factory.
今日は、エノキ工場を経営している知人から、規格外の(ジャンボ)エノキをこんなにもらいました。
Some of them went into miso soup, together with tofu.一部は豆腐と一緒に味噌汁に入れました。
The rest was used to make takikomi gohan. The recipe is almost the same as this one.
残りは炊き込みご飯にしました。レシピはこのレシピとほぼ同じです。
The main dish was grilled salmon.
メインデッシュは、焼鮭。
Humble supper, as usual. (We had some other dishes, of course, like simmered kabocha.)
いつも通り質素な夕飯です(もちろん、カボチャの煮物など他の料理も食べました)。

Looks tasty! Do the larger mushrooms taste the same as the standard ones?
Yangsze: Thanks for your compliment. Yes, they do taste the same, and because of their size, they are much slimier, which is good for use in miso soup, but not so good for use in takikomi gohan. I should have dried them first to make them less slimy before using them in takikomi gohan.
