Souzai (Side Dishes)/惣菜

The term souzai can refer to any side dish, but it is often used to refer to a store-bought side dish. Every supermarket in Japan has a souzai section.
「惣菜」という言葉はどんな「おかず」でも指すことがありますが、お店で買った「おかず」を指すことが多いです。日本では、どのスーパーにも惣菜コーナーがあります。
I have a cold now, and I didn't want to make any dishes for supper tonight. So, I asked my wife to buy some souzai. Here are the souzai that she bought.
今、風邪を引いていて、夕飯に料理を作りたくなかったので、妻に惣菜を買ってくるよう頼みました。買ってきた惣菜は次のようなものです。
Shira ae (boiled vegetables dressed with mashed tofu):

Nira reba itame (liver and Chinese chive stir-fry):

Two menchi katsu (patties breaded and deep-fried), white-flesh fish fry, crab cream korokke (Japanese croquette), and oyster fry

The biggest characteristic of most souzai is that they are meant to be eaten with rice.
大半の惣菜の一番大きな特徴は、ご飯と一緒に食べるよう作られているということです。

Kagami Biraki (Mirror Opening)/鏡開き

This is the kagami mochi (mirror rice cakes) that I placed at the kitchen counter on December 28 last year.
去年の12月28日にキッチンのカウンターに置いた鏡餅です。

You will see that the kagami mochi are not traditional, real ones, but a plastic container that contains some rice cakes (eight in the photo). The daidai (bitter orange) is not a real one, either. Such fake kagami mochi are now very popular.
この鏡餅は伝統的な本当の鏡餅ではなく、餅がいくつか(写真では8つ)入ったプラスチック容器です。橙も本物ではありません。このような偽の鏡餅は今では一般的です。

Kagami biraki (literally, mirror opening) falls on today, January 11th. This is the day when the kagami mochi offered to the gods before the New Year (usually on December 28 or 30) are eaten by family members. My family had these mochi for lunch.
今日、1月11日は鏡開きです。この日に、新年の前(通常は12月28日または30日)に神様にお供えした鏡餅を家族で食べます。今日、家族でこの餅を昼食に食べました。
And, this is the ornament for the New Year that I hang on the front door.
そして、玄関に吊るした新年の飾りです。

Such ornaments are also removed on this day.
このような飾りもこの日に取り外します。
Edited to add: In some areas, ornaments are removed on January 7, and on January 15 in others.
補足:1月7日に飾りを外す地域もあり、1月15日に外す地域もあります。
Today, a festival called "saino kami" was held at the local Shinto shrine. In other areas, the festival is also called "dondo yaki".
今日は、地元の神社で「賽の神」というお祭りが行われました。他の地域では、「どんど焼き」とも呼ばれます。

Local people bring with them New Year's ornaments, kakizome (the first calligraphy writing of the New Year), and other items to burn, and they are given rice cakes and surume (dried squid) to heat over the fire.
地元の人たちは新年の飾り、書初め、その他、燃やすものを持ってきます。そして、お餅やスルメをもらって、火で焼きます。

Today's Purchases/今日、買った物


I went shopping today, like I do two or three times a week. Let me show you some of my today's purchases.
今日は買い物に行きました。週2、3回行きます。今日買った物の一部を見て下さい。
Aji (Japanese horse mackerel) sashimi:

Kinako (roasted soy bean powder):
きなこ:

Kinako is often mixed with sugar at a ratio of 1:1 (and a pinch of salt), and the mixture is used to have mochi (glutinous rice cakes).
きなこは砂糖と1:1の割合で混ぜる(塩も一つまみ)ことが多いです。それを餅を食べる時に使います。

They are both cheap, but very, very delicious!

I went a little extravagant today, and I bought this bottle of sake:
今日はちょっと贅沢に、このお酒を一本買いました。

Kakurei Namazake of Aoki Shuzo.
This small (750-ml) bottle costs 1,155 yen. It's rather expensive, but I like it. Namazake means unpasteurized sake, and is fruity.
青木酒造の鶴齢(かくれい)の生酒。
この小さいボトル(750 ml)で1,155円です。ちょっと高めですが、好きなんです。生酒とは加熱処理していない酒のことで、フルーティーです。

The Biggest Enoki Mushrooms/一番大きなエノキタケ

First of all, I want you to take a look at this:
まずはこれを見て下さい。

The biggest enoki mushrooms I have ever seen. Like I said before, these overgrown ones are not for sale; I got them from a friend who runs an enoki mushroom factory.
今まで見た中で一番大きなエノキタケです。前に言った通り、この大きくなり過ぎたエノキは売り物ではなく、エノキタケ工場を経営するお友達から頂いたものです。
Some of them are really huge, almost 3 cm in diameter.
本当に大きいのもあります。直径3センチ近く。

Besides, they are so beautiful!
それにとてもキレイです。
How can I not make miso soup with them?
味噌汁を作らないではいられません。

エノキと大根の味噌汁。

7-Herb Congee (Nana-Kusa Gayu)/七草粥




Today is January 7th. This is the day when we are supposed to have nanakusa gayu (7-herb congee). I wanted to make congee by using only the daikon leaves that were in the freezer, but my son insisted that we have traditional 7-herb congee. So, I had to go shopping to get a pack of seven herbs.
今日は1月7日。七草粥を食べる日です。冷蔵庫にある大根葉だけでお粥を作りたかったのですが、息子が本当の七草粥を食べたいとうるさいので、買い物をして、七草のパックを買ってきました。
The seven herbs are:
Water dropwort (seri, Oenanthe javanica)
Shepherd's purse (nazuna)
Cudweed (gogyō, Gnaphalium affine)
Chickweed (hakobera, Stellaria media)
Nipplewort (hotokenoza, Lapsana apogonoides)
Turnip (suzuna)
Daikon (suzushiro)

七草とは、せり、なずな、ごぎょう、はこべら、ほとけのざ、すずな、すずしろです。
Making congee from scratch (using uncooked rice) is rather cumbersome, so I usually make it from previously cooked rice.
お粥を最初から(お米を使って)作るのは面倒なので、私は普通、ご飯で作ります。

Grilled Kanpachi Kama (Amberjack Collars)/カンパチかま焼き

I grilled two kanpachi kama (amberjack collars) and other parts near the bone for supper tonight. I really like grilled kanpachi kama!
今日の夕飯にはカンパチのかまを2つと骨に近い部分を焼きました。カンパチかま焼きは本当に大好きです!


Recipe:
1. Sprinkle some salt over the collar. The amount of salt should be 2-3% of the collar in weight. Let the collar stand in the fridge for a few hours.
2. Wipe off the salt with paper towels.
3. Grill the collar.
レシピー:
1. かまに塩を振る。塩の量は重さでかまの2-3%とする。かまを数時間、冷蔵庫に置いておく。
2. 塩をキッチンペーパーでふき取る。
3. かまを焼く。

Gyudon (Beef Bowl)/牛丼

I made gyudon (beef bowl) for supper tonight for no particular reasons other than that thinly sliced beef was for sale at a supermarket.
今日の夕飯には牛丼を作りました。スーパーで牛肉の薄切りが特売だったから、という以外特に理由はありません。

This time, I tried a dashi, soy sauce, and mirin ratio of 10:1:1. Thus, I used:
300 ml dashi
30 ml soy sauce
30 ml mirin
30 ml sake
今回は、出汁、醤油、みりんの割合を10:1:1にしました。つまり、
出汁300 ml
醤油30 ml
みりん30 ml
酒30 ml
です。
You may also want to try 3:1:1 and 4:1:1 ratios if you prefer heavy seasoning.
濃い味付けが好きであれば、3:1:1、4:1:1という割合もいいでしょう。
