Follow-up on my Home-Made Ponzu/自家製ポン酢のその後
I made ponzu in early January. See posts dated Jan. 6 and 7 for details. So far, my family have used the home-made ponzu occasionally. Yesterday, I chopped the leftover mekabu (sporophyll of wakame seaweed) finely, and had it with katsuobushi (dried bonito shavings) and the home-made ponzu. The ponzu is good enough, has turned somewhat mellower, but to be honest, I'm not very satisfied with the flavor. I prefer my instant ponzu, made by simply combining yuzu juice, soy sauce, and dashi (that is, water + instant dashi) at a ratio of 1:1:1. Maybe I should try a 1:1:1 ratio next time, but then I suspect that the resultant ponzu won't keep so long.

Soba (Buckwheat Noodles) at Tabata-ya/田畑屋のそば
Last evening, my family went to Tabata-ya, a local buckwheat noodle restaurant here in the Shiozawa area of Minami Uonuma city. Reason: They hold a fair for four days in a row, offering all of their dishes at half the regular prices, except drinks, in the noon session for the first two days and in the evening session for the last two days. They call the fair "Naoe Kanetsugu Kansha (Thanks-Giving) Fair". Probably, the soba-ya (buckwheat noodle restaurant) has made a considerable profit by attracting many tourists from over all Japan, thanks to NHK's last period drama, Ten Chi Jin (Heaven, Earth, and Man), which featured Naoe Kanetsugu as the main character.

My son, wife, and I ordered four servings of "hegi soba". Hegi soba is a specialty of the Uonuma region of Niigata prefecture. It contains funori (a type of seaseed) as a bonding agent, and is very sleek and resilient in texture, providing good nodogoshi ("throat-feel"), and greenish in color. Funori is also used to starch fabric. Shiozawa and surrounding areas are famous for their fabric production. Hegi means a wooden, rectangular tray in which to serve soba (buckwheat noodles), such as the one shown below. Another characteristic of hegi soba is that the noodles are made into manageable coils and arranged beautifully in a hegi, as shown below.

Soba-ya style tempura has more batter on it, and in some cases, more batter is sprinkled over a piece of tempura while it is being deep-fried, so that it gets more batter on the surface. This step is described as "hana wo sakaseru" (producing flowers).

Mekabu/めかぶ
Mekabu is the sporophyll of wakame seaweed. It has recently become very popular as a healthy food, and I have refrained from buying it simply because it is touted as a healthy food. Yesterday, however, I purchased one pack just out of curiosity.
めかぶとは若布(わかめ)の胞子葉(ほうしよう)のことです。最近、健康食品として人気があります。私は、単に健康食品と宣伝されているという理由で、買うのを控えていました。でも昨日は、好奇心から1パック買ってみました。

Separate the edible parts from the inedible (very hard) stems.

食べれない(とても堅い)茎から食べられる部分を分けます。

Put the edible parts in a pot of boiling water. They turn to vivid green instantly. Drain immediately.
食べられる部分を沸騰しているお湯に入れます。すぐに鮮やかな緑になります。すぐに水を切ります。

My wife said she wanted to have the mekabu in miso soup, together with potato, so I decided to make miso soup with it. I simmered potato cubes in a pot. I put some mekabu in the individual bowls.
妻は、めかぶをジャガイモと一緒に味噌汁にして食べたいと言うので、めかぶで味噌汁を作ることにしました。さいの目に切ったジャガイモを鍋で煮ました。めかぶを各お椀に少し入れました。

And I poured some miso soup with potato cubes into each bowl.

Tonkotsu Ramen/豚骨ラーメン
Yesterday, I thought I would make tonkotsu ramen for lunch today. So, last night, before I went to bed, I made half-boiled seasoned eggs (hanjuku ajitsuke tamago). The recipe can be found here.
昨日は、今日の昼食に豚骨ラーメンを作ろうと思い、昨晩、寝る前に半熟味付け玉子を作りました。レシピはここにあります。

I used two I-Wrap bags to soak the eggs in the broth. I-Wrap bags are quite versatile, and I like cooking with them.
玉子を汁に漬けるのにアイラップを2枚使いました。アイラップはかなり万能で、私がアイラップを使って料理をするのが好きです。

Here are the noodles and a packet of tonkotsu broth:
麺と豚骨スープが一袋:

The noodles are gokuboso (superfine), with a cooking time of 1 minute, and the tonkotsu broth is made by the manufacturer of the noodles. This single packet cost as much as 68 yen! I almost gave up buying it!
麺は極細で、茹で時間は1分です。豚骨スープはこの麺の製造メーカが作ったもので、この1パックで68円もします!買うのを止めようかと思いました!
The labels of both products include "seasonings (amino acids, etc.)". In Japan, it is so hard to find a food product that does not contain them.
両方ともラベルには「調味料(アミノ酸等)と書かれています。日本では、これらを含まない食製品を探すのは難しいです。

I hadn't realized that the tonkotsu broth was actually tonkotsu soy sauce flavored until I opened it. The packet clearly says it's "tonkotsu shoyu aji" (pork bone soy sauce flavored). Look at the brown not white broth.
開けてから初めて、この豚骨スープは実際は豚骨醤油スープだと分かりました。パックには、はっきり「豚骨醤油味」と書いてあります。白色ではなく茶色のスープを見て下さい。

The half-boiled seasoned egg turned out fine.
半熟味付け玉子はうまくできました。

The toppings were thin slices of ham (substitute for chashu), half-boiled seasoned egg, beni shoga (pickled red ginger), and white negi (substitute for green negi).
具は、ハムの薄切り(チャーシューの代わり)、半熟味付け玉子、紅しょうが、白ネギ(青ネギの代わり)。

As always, the noodles were very good,

I wasn't very much fascinated by the broth. Considering the price, however, I finished off the broth. To reduce my salt intake, I usually refrain from finishing off the ramen broth.
スープにはあまり感動しませんでした。でも、値段を考えて、スープを飲み干しました。塩分摂取量を減らすため、普通はラーメンのスープを飲み干すのは控えています。

Our First Skiing This Season/今シーズン初めてのスキー
Sorry, not a food-related post. This afternoon, my two children, a friend of my daughter's, and I went skiing for the very first time this season. It was sunny, and we all had a very good time! The scenery was spectacular. As always, none of the photos below can justify the beauty of the scenery.

Miso Ramen/味噌ラーメン
For lunch today, I made miso ramen, using the Kitakata ramen gift that I mentioned previously in my Jan. 18 post. Miso ramen is often topped with stir-fried vegetables, so I had it with the leftover stir-fried vegetables from last night's supper. I kept the stir-fried vegetables separate from the ramen, however. I don't think it's a good practice to put large amounts of ingredients on top of ramen.
今日の昼食には、以前、1月18日の投稿で述べた喜多方ラーメンを使って、味噌ラーメンを作りました。味噌ラーメンには、野菜炒めを乗せることが多いので、昨晩の夕飯の野菜炒めの残りと一緒に食べました。ただし、野菜炒めはラーメンとは別にしました。ラーメンの上に大量の具材を乗せるのはいい方法だとは思いません。

I measured the width of the noodles before cooking them, and it was almost 3 mm.
麺を茹でる前に幅を測ってみました。3 mm近くありました。

I'm not a big fan of miso ramen, because the broth is usually flavored with garlic.
味噌ラーメンはスープがニンニクで味付けしているのが普通なので、あまり好きではありません。
今日の昼食には、以前、1月18日の投稿で述べた喜多方ラーメンを使って、味噌ラーメンを作りました。味噌ラーメンには、野菜炒めを乗せることが多いので、昨晩の夕飯の野菜炒めの残りと一緒に食べました。ただし、野菜炒めはラーメンとは別にしました。ラーメンの上に大量の具材を乗せるのはいい方法だとは思いません。

Ramen of my Style/自分流のラーメン
Today, I went shopping before noon, and bought several foodstuffs that I needed to make ramen, among others: Negi, ramen noodles, and naruto (a type of fish paste with a pink spiral pattern in it).

今日は昼前に買い物に行って、ラーメンを作るのに必要な食材をいくつか買ってきました。ネギ、ラーメンの麺、ナルトです。

Of the three types of ramen noodles that the manufacturer offers, I selected gokuboso (superfine):
メーカーが出している3種類のラーメンのうち、極細を選びました。

The cooking time is 1 minute, as opposed to 3 minutes for the Kitakata ramen noodles I previously mentioned.
茹で時間は1分です。前に述べた喜多方ラーメンは3分ですが。

So, I have to make all the preparations before cooking the noodles.
なので、麺を茹でる前に準備をすべてする必要があります。

For the broth, I combined together:
1/2 tsp normal (bonito-flavored) dashi
1 tsp chicken dashi
25 ml soy sauce
300 ml boiled water
(soy sauce and water ratio: 1:12)
スープには、次のものを混ぜました:
通常の(カツオ味の)出汁 小さじ半分
鶏がらだし 小さじ1
醤油 25 ml
沸騰したお湯 300 ml
(醤油とお湯の割合: 1:12)

When the noodles are done, I have to work really fast before the noodles get soggy and soft ("nobiru" in Japanese (lit. to extend)). The Japanese are generally very particular about the texture of noodles, and I am no exception. Besides, superfine noodles will become soggy and soft quickly.
麺が茹だったら、麺が伸びないうちにすごく早く動かないといけません。一般的に日本人は麺の食感にとてもうるさく、私も例外ではありません。それに、極細麺はすぐにのびてしまいます。

Very good!
とても美味しいです!

The broth was rather salty. Next time, I will reduce the amount of soy sauce.
スープはかなり塩辛かったです。今度は醤油の量を減らします。
