Which to Use, Momen or Kinu/木綿と絹のどっちを使う?

Yesterday, I bought two packs of tofu, one momen (cotton) and one kinu (silken) (also called kinu goshi). Note that momen (cotton) cloth is actually used to make momen tofu, but silk cloth is not used to make silken tofu. Hot soy milk mixed with some coagulant (such as bittern) is strained through cotton cloth to make momen tofu while hot soy milk mixed with some coagulant is not strained to make kinu tofu. Kinu refers to the smooth texture of tofu made this way.
One thing I want to say about tofu is that it's a great source of protein. It's not a substitute for meat, and it deserves its own uses.
昨日は、豆腐を2パック買いました。木綿をひとつと絹(絹ごしとも)をひとつ。木綿の布は実際に木綿豆腐を使うのに使われますが、絹の布は絹ごし豆腐を作るのには使われません。凝固材(にがりなど)を混ぜた、暖かい豆乳を木綿の布で漉して木綿豆腐を作り、凝固材を混ぜた、暖かい豆乳を漉さずに絹豆腐を作ります。絹とは、このように作られた豆腐の滑らかな食感を表しています。
豆腐に関して言いたいことは、豆腐は素晴らしいタンパク源だということです。肉の代わりではなく、豆腐独特の使い方があります。

The weight of one "cho" of tofu varies from region to region. In Tokyo, it is 300-350 g, and here in Niigata, it is 350 to 400 g. The two packs of tofu above are heavier, 450 g each.
豆腐一丁の重さは地域により異なります。東京では、300~350 g、新潟では350~400 gです。この二つのパックはもっと重く、それぞれ450 gです。

My wife made mapo tofu (called "mabo dofu" in Japanese) for supper tonight. She asked me which of momen and kinu she should use. Momen is usually used to make mapo tofu, but some people like to use kinu for its smooth texture. After all, she used momen tofu.
今晩の夕食に妻は麻婆豆腐を作りました。私に木綿と絹のどちらを使おうか聞きました。普通は、麻婆豆腐を作るのには木綿を使いますが、滑らかな食感の絹を使うほうが好きな人もいます。結局、木綿豆腐を使いました。


Edited to add: I personally hate the stupid term, kinu goshi (lit. silk strained), which will make you mistakenly think that silk cloth is used to make kinu tofu. And, why do we say momen, instead of momen goshi? Sounds very illogical.
Anyway, tofu is a very interesting topic to discuss, and I'd like to talk about more in future posts.
追記: 個人的には「絹ごし」という馬鹿げた用語は好きではありません。絹豆腐を作るのに絹の布を使っていると間違って思ってしまいます。それに、何で「木綿ごし」と言わず、木綿というのでしょう?とても非論理的です。
ともかく、豆腐はとても興味深い話題なので、将来もっと語りたいと思います。

Ebi Mayo/エビマヨ

Ebi mayo is another Chinese-style dish popular in Japan. I wanted to make this dish by following Shu Tomitoku's recipe
エビマヨも日本では人気のある中華料理です。私は周富徳さんのレシピーでこの料理を作りたいと思いました。

Ingredients (4 servings)

12 shrimp
Some salt and sake with which to rub shrimp

*Some salt and pepper
*Potato starch (katakuriko) to coat the shrimp
*Some sesame seed oil
*1/2 egg white

**1 cup mayonnaise
**3 tbsp ketchup
**3 tbsp condensed milk
**2 tbsp evaporated milk
**2 tsp gin
**Some salt and finely chopped parsley

Coarsely chopped cashew nuts

材料(4人分)

海老12尾
海老をもむのに使う塩とお酒少々

*塩コショウ適量
*片栗粉 まぶす程度
*ごま油少々
*卵白1/2個

**マヨネーズ 1カップ
**ケチャップ 大3
**コンデンスミルク 大3
**エバミルク 大2
**ジン 小2
**塩&パセリみじん切り 少々

Directions:
1. Devein shrimp, rub with salt and sake, and rinse with water.
2. Mix with the ingredients preceded by an asterisk (*).
3. Make a cut in the back of each shrimp, open the shrimp, and roll in firmly from the tail to the head, with the back inside.
(NOTE: I don't understand the original Japanese. The above English is a literal translation of the Japanese.)
4. Mix together all the ingredients preceded by two asterisks (**).
5. Coat the shrimp with potato starch, deep-fry in oil at 180C or higher.
6. Mix with the ingredients in 4. while the shrimp are still hot.
7. Sprinkle coarsely chopped cashew nuts.

作り方:
1. 背ワタを取って、塩、酒でもみ、水で洗う。
2.*で示した材料を混ぜる。
3.エビの背に包丁を入れ、開き背を内側にして尾から頭に向けて、しっかり巻き込む。
4.**で示した材料も混ぜる。
5.エビに片栗粉をまぶして、180度以上の油で揚げる。
6.熱いうちに4.の材料とまぜる。
7.粗みじん切りしたカシューナッツを振りかける。

I didn't follow the recipe exactly: I didn't rub the shrimp with salt and sake, I didn't devein the shrimp, I didn't follow step 3 because I wasn't sure what the step meant, I replaced evaporated milk with milk, I reduced the amount of mayonnaise to a half, as well as the other ingredients marked with two asterisks, etc., etc.
私はこのレシピーを正確には従いませんでした。海老を塩と酒でもまず、海老の背わたはとらず、3は省き(何を言っているのかよく分からないので)、エバミルクはミルクで代用し、マヨネーズは半分に減らし、残りの**で示した材料も半分にしました、などなど。

According to other sites, the condensed milk keeps the mayonnaise from separation.
別のサイトによると、コンデンスミルクはマヨネーズの分離を防ぐそうです。

I shelled the shrimp, removed the tails from them, dried the tails and shells in the microwave, and ground them in my Milser (a small blender). I later added some white sesame seeds and some salt. Simple furikake was made!
海老の皮をとり、尾もとり、尾と皮を電子レンジで乾燥させ、ミルサー(小さなミキサー)で挽きました。後で白胡麻と塩を少し足しました。簡単なふりかけができました!





Confession: My first attempt was not a success: I overcooked the shrimp. Considering the high fat content of this dish, I don't think I'll make another try. My wife said she preferred ebi chili because it was spicy. I agree with her on this point.
告白: 初めての試みは成功しませんでした。海老に火を通し過ぎました。
この料理は脂肪分が多いので、もう一回作ろうとは思いません。
妻は、エビチリのほうが辛いので好きだと言いました。私も賛成です。

For lunch today, I had the leftover ebi mayo with a slice of toasted bread, mizuna (a type of green), and the furikake that I made last night. It wasn't bad.
今日の昼食には、残りのエビマヨをトーストしたパン、水菜、昨晩作ったふりかけと一緒に食べました。悪くはないです。

Aoki Shuzo's Kakurei in Exchange of Ice Cream/アイスクリームと交換で青木酒造の鶴齢

Last night, my two children went to the Ski Carnival held in Chateau Shiozawa, one of the ski resorts here in Shiozawa. They had a wonderful time, and they both got a lot of gifts by lottery there.
Among others, my daughter got this:
昨晩、二人の子供たちはシャトー塩沢(地元のスキー場)のスキーカーニバルに行って、楽しい時を過ごしました。それに抽選で景品をたくさんもらいました。
その中でも、娘はこれ当てました:

Kakurei of Aoki Shuzo. The sheet of wrapping paper says Chateau Shiozawa Tourism Association.
青木酒造の鶴齢です。熨斗(のし)には、シャトー塩沢観光協会と書かれています。

It's a small bottle (720 ml), not a big one (1,800 ml).
大瓶(1,800 ml)ではなく、小瓶(720 ml)です。

The alcohol content is 15% to 16%, which is typical for Japanese sake (Nihon shu, seishu).
アルコール分は、15%以上、16%未満。お酒(日本酒、清酒)としては一般的です。
DO YOU THINK I GOT THIS BOTTLE FOR FREE?? My daughter requested (demanded?) some ice cream in exchange of this sake!
私がこのお酒をタダでもらえたと思いますか?娘はこのお酒の代わりにアイスクリームが欲しいと言いました(要求した?)。

Yukimi Daifuku is a great hit from LOTTE.

Magic Furikake/魔法のふりかけ

I know this post is quite repetitious; I have posted about my magic furikake somewhere in my blog before, as well as in the Japan Forum on eGullet. But, because I have improved the recipe a little, I'd like to share it with you.
Note: When I have little or no appetite, a mouthful of hot rice with some magic furikake will work up my appetite, like a charm. That's why I call my furikake magic furikake.
この投稿は繰り返しだとは分かっています。前にも、このブログのどこかに私の魔法のふりかけのことを書きましたし、eGulletのJapan Forumにも書きました。でもレシピーを少し改良したので、また説明したいと思います。
注: 食欲が殆どない時に、暖かいご飯と魔法のふりかけを一口食べると、うそのように、食慾が出てきます。というわけで、私のふりかけを魔法のふりかけと呼んでいます。
Here are some of the cans I happen to have in the storage space:
保管スペースにたまたまあった缶詰をいくつか。

Top, from left to right: Whole tomatoes, diced tomatoes, and sweet corn
Middle: Yude azuki (boiled adzuki), sanma kabayaki (saury grilled and seasoned with kabayaki sauce (soy-based sweet sauce), and tuna flakes
Bottom: All three are saba no mizu ni (mackerel simmered in water).

中: ゆであずき(茹で小豆)、さんま蒲焼、ツナフレーク
下: 3つとも鯖(さば、サバ)の水煮です。

Some of the ingredients for magic furikake:
魔法のふりかけの材料をいくつか:

White sesame seeds, pepper (black pepper or "table pepper", which is a mixture of white and black peppers, if I remember correctly, and is probably available in Japan only), and two cans of mackerel
A can of mackerel contains about 200-180 g simmered mackerel.
白胡麻(しろごま)、胡椒(コショウ、こしょう)(黒コショウか「テーブルコショウ」(確か、白コショウと黒コショウのミックス、たぶん日本でしか入手できないと思います)、サバ缶2つ。
サバ缶ひとつには、煮たサバがおよそ200~180グラム入っています。

The other ingredients are:
3 tbsp soy sauce
3 tbsp mirin
その他の材料は:
しょう油大さじ3
味醂(みりん)大さじ3

I was surprised to find that one of the cans required a can opener!
Dispose of the liquid, and put the mackerel in a pan.
(Or, keep the liquid and use it for other purposes.)
一方の缶は缶切りが必要だと知り、びっくりしました。
液は捨て、サバをフライパンにあけます。
(または、液をとっておき、他の用途に使って下さい。)


Add some pepper and some sesame seeds. I cannot say how much sesame seeds, just as much as you want!
コショウと胡麻を入れます。胡麻はどのくらいか言えません。入れたいだけ入れて下さい!

On the counter top, mash the mackerel with a spatula.
カウンターで、へらを使ってサバをつぶします。

Put the pan on the stove and heat, constantly stirring, for about 3-5 min., until moisture is gone.
コンロにかけ、混ぜながら、水分がなくなるまで約3~5分、加熱します。

Add soy sauce and mirin. (I used jozo chomiryo (fake mirin), not hon mirin.)
しょう油とみりんを入れます。(私は本味醂ではなく、醸造調味料(偽者のみりん)を使いました。

Keep heating for 1-2 min., constantly stirring, until moisture is gone.
水分がなくなるまで1~2分混ぜながら、加熱します。

When it has cooled, transfer to a container. It can keep for one week or much longer in a fridge.
冷めたら、容器に移します。冷蔵庫に入れれば、1週間、またはそれ以上もちます。

My furikake is more like tsukudani than furikake because it is soft and moist.
For those of you who don't know what tsukudani is, here is one example:
私のふりかけは、柔らかくて水分があるので、ふりかけというより、佃煮のようです。
佃煮が何か分からない人のために、これが一例です。

Nori tsukudani, which is seasoned with say sauce, sugar, and other seasonings.
海苔の佃煮です。しょう油、砂糖などの調味料で味付けされています。

Furikake, etc./ふりかけなど

I told someone that I would post photos of some of my favorite furikake, and here is one photo.
好きなふりかけの写真を載せると或る人に言ったので、一枚載せます。

Top, left to right: Ryoku Ou Yasai (Green and Yellow Vegetable) Furikake of Ohmoriya Co., Ltd., which contains ten kinds of green and yellow vegetables.
The remaining four are products of the same series, Mazekomi Wakame of Marumiya Corporation. They are salmon, cod roe, takana (a type of leaf vegetable), and wakana (another type of leaf vegetable) flavors.
Strictly speaking, these four products are not furikake (something that you sprinkle on rice); they are meant to be mixed with rice (to make rice balls), as the word Mazekomi (mix in) implies.
Bottom, left to right: Noritama, Sukiyaki, and Aji Doraku (all of which are products of Marumiya Corporation) and Yukari Goma Iri (red perilla with sesame seeds) and Nameshi (containing three types of leaf vegetables) of Mishima Shokuhin Co., Ltd.
Yukari is a registered trademark of Mishima Shokuhin Co., Ltd.
Strictly speaking, Yukari and Nameshi are not furikake; they are meant to be mixed with rice.
Noritama remains a long-selling product, so is Sukiyaki. I have liked them both since childhood.

「ゆかり」は三島食品株式会社の登録商標です。
厳密に言うと、「ゆかり」と「菜めし」はふりかけではなく、ご飯と混ぜるものです。
「のりたま」と「すきやき」はロングセラーです。小さい時から好きでした。

I bought a pack of these wagashi today 50 yen off the regular price: Domyoji sakura mochi (with tsubu an in them) and kinako (toasted soybean powder) kusa (mugwort) mochi (with tsubu an in them).
今日は、和菓子を1パック、通常価格から50円引きで買いました。道明寺さくら餅(つぶあん)と「きなこ草餅」(つぶあん)です。

I think these kinako kusa mochi are a cheaper substitute for uguisu mochi. I don't remember having had decent uguisu mochi in my entire life. You have to go to a wagashi shop to get uguisu mochi.
このきなこ草餅はうぐいす餅の代わりだと思います。これまで、まともなうぐいす餅を食べた記憶がありません。うぐいす餅は和菓子屋に行かないと買えません。

I also bought one pack of boiled firefly squid (hotaru ika in Japanese). They are now in season.
「ボイルほたるいか」も1パック買いました。今が旬です。

Hina Matsuri (Doll Festival) This Year/今年の雛祭り

Hina Matsuri falls on Tomorrow, March 3. This is my daughter's hina doll set:

Chirashi zushi is more appropriate for Hina Matsuri, but my daughter still prefers inari zushi.
雛祭りには散らし寿司のほうが合っているのですが、娘はまだ、稲荷寿司のほうが好きです。

And, she prefers modern sweets like these to traditional ones.
それに、昔ながらのお菓子より、今風のお菓子のほうがすきです。
