My Award-Winning Recipe for Dried Enoki Chahan (Fried Rice)/受賞したレシピ「干しえのきチャーハン」


I just wanted to announce that I have won the "Idea Award" in the "Recipe Contest", conducted by the Uonuma Kinoko and Sansai Promotion Association.

魚沼きのこ・山菜振興協議会開催の「レシピコンテスト」で「アイディア賞」を受賞しました。

My award-winning recipe for dried enoki chahan (fried rice):

Ingredients (one serving)

30 g dried enoki (300 g when fresh)
5 fake crabmeat sticks
2 eggs
2 chawan (bowls) of rice

1 tsp salad oil
1/2 tsp salt
1 tsp soy sauce
1 tsp sesame oil
Decoration such as green laver or long green onion

Directions:

1. Put dried enoki in a container, add a small amount of water, and heat in a microwave for tens of seconds to soften.

2. Cut fake crabmeat sticks into manageable sizes (for example, four equal parts).

3. Break eggs, put them in a bowl, and beat well.

4. Add rice (after rewarming if cold) to the bowl mentioned in 3., and mix well.

5. Put salad oil in a frying pan, and put it on the stove.

6. When the pan is heated, add the contents of the bowl, and stir well so that each and every rice grain is coated with egg.

7. When the egg is set, add dried enoki and fake crabmeat sticks, and mix well.

8. Add salt and mix well again.

9. Finally, add soy sauce and sesame oil, mix quickly, and turn off heat immediately.

10. Transfer to a plate, and top with decoration such as long green onion.

Cooking time: 5 min. (3 min for preparations and 2 min. for pan-frying)

受賞レシピー「干しえのきチャーハン」:

【材料・分量】 (1人前)

干しえのきたけ … 30g (生では300g)  かにかまぼこ … 5 本  卵 … 2 個

ご 飯 … 茶碗 2杯   サラダ油 … 小さじ 1   塩 … 小さじ 1/2

しょうゆ … 小さじ 1   ごま油 … 小さじ 1    青のりや青ネギなどの飾り

【作り方】

1.干しえのきたけは容器に入れ、少量の水を足し、電子レンジで数十秒加熱し、柔らかくする

2.かにかまぼこは、食べやすい大きさ(4等分など)に切る

3.卵は割って、ボールに入れ、よく溶く

4.3のボールにご飯を入れ(冷えている場合は温めてから)、よく混ぜる

5.フライパンにサラダ油を入れ、火にかける

6.フライパンが温まったら、ボールの中身を入れ、ご飯粒1つ1つにに卵の膜ができるように、よくかき回す

7.卵が固まったら、干しえのきたけ、かにかまぼこを入れ、よく混ぜる

8.塩を入れ、またよく混ぜる

9.最後にしょうゆとごま油を入れ、すばやく混ぜ火を消す

10.お皿に移し、青ネギなど飾りをのせる

【料理時間】  5分(準備:3分、調理:2分)

Kei Tora Ichi (Light-Truck Market)/軽トラ市

Today (August 1), the first-ever Light-Truck Market was held on Tsumugi Dori (Pongee Street) in the Shiozawa area of Minami Uonuma city, from 10:00 a.m. to 2:00 p.m.
In this market, light trucks and one-box cars (Japanese minivans), 50 of them this time, are opened up on this street, instead of stalls.
今日(8月1日)は、南魚沼市の塩沢地域にある「つむぎ通り」で、午前10:00~午後2:00まで、初めての軽トラ市が開かれました。
この市(いち)では、軽トラック(軽トラ)やワンボックスカーが(今回は50台)この通りに、屋台の代わりに出店します。

The street is closed to traffic for this market.
通りは市のため通行止め(歩行者天国)になります。

Tsumugi Dori meets Bokushi Dori (right) at this intersection.
つむぎ通りはこの交差点で牧之通り(右)と出会います。

Tsumugi Dori starts from Shiozawa Station on JR Joetsu Line.
つむぎ通りはJR上越線の塩沢駅から始まります。



I saw this man! He is Keiichi Ishizaka, President of the Ishizaka Mushroom Association, which produces and sells Ishizaka Maitake.
When I tasted Ishizaka Maitake for the first time in 1992, I was so impressed with its flavor and texture that I went to see him.
この方に会いました!石坂まいたけを生産、販売している石坂きのこ組合の組合長、石坂恵一さんです。1992年に初めて石坂まいたけを食べた時は、その風味と食感に感動し、この方に会いに行きました。

Ishizaka Maitake is usually sold for 2,000 yen per kg, but it was only 1,500 yen per kg there!
Of course, I bought 1 kg of it.
石坂まいたけは通常、キロ2,000円で売られていますが、ここではキロ1,500円でした。
もちろん、1キロ買いました。

This jumbo eringi was featured in the June 5 edition of the TV program, Manten Aozora Restaurant.
このジャンボエリンギは、テレビ番組満天☆青空レストランの6月5日放送分で取り上げられました。

Mint-flavored kuzu (kudzu) kiri of Aoki Shoten:
青木商店の薄荷葛きり:

As the name implies, kuzu kiri is made from kuzu ko (starch made from the root of the kuzu plant).
My daughter said it was very good.
名前の通り、葛きりは、葛粉(葛という植物の根から作る澱粉)で作ります。
娘はとても美味しいと言ってました。

Edited to add:
This particular kuzu kiri is made from kuzu ko, but other cheaper ones may be made from other starches.
追記:
この葛きりは葛粉からできていますが、他の安いのは他の澱粉でできていることがあります。

As I mentioned several times in the past, Hakka to is a specialty of the Shiozawa area.
前にも何回か述べたように薄荷糖は塩沢地域の名産物です。

Display of Fireworks/花火大会

The 3-day Shiozawa Matsuri ends with a display of fireworks on July 16. My daughter (10) took videos of many of the fireworks. This video is the most specutacular of all, which begins with a phenix firework.
三日間続く塩沢まつりは、7月16日の花火大会で終わります。娘(10歳)がその花火を一杯ビデオに撮りました。その中で、次のビデオが一番すごいです。フェニックスの花火で始まります。

Shiozawa Matsuri/塩沢まつり

Not just a cart; this cart is called an "odori yatai" (lit. dancing stall), where children perform traditional dances.
ただの車ではありません。この車は「踊り屋台」と呼ばれるもので、子供たちが伝統的な踊りを披露してくれます。

Luckily, we got free waffle samples from a cafe, soon to be open on Bokushi Street (Aug. 11)
運良く、牧之通りでまもなく(8/11)オープンするカフェのワッフルを無料で試食できました。

The frankfurter was very reasonable.

Osakayaki is a kind of okonomiyaki shaped like imagawayaki.
大阪焼きとは、今川焼きのような形のお好み焼きのようなものです。

The funny thing about osakayaki is that osakayaki cannot be found in Osaka!
大阪焼きの面白いところは、大阪には大阪焼きがないということです。

Not All Food Stalls Are the Same/どの屋台も同じというわけではない

In the Shiozawa area of Minami Uonuma city, Niigata prefecture, the Shiozawa Matsuri (Festival) is held on July 14 through 16.

Today, on July 15, my daughter went to the festival in the morning with a friend of hers. When she came home, she reported she liked two particular foods. One is spa bo (deep-fried spaghetti sticks), and the other is potato fry (french fries). She insisted that I should try the potato fry because it was hot and delicious. So, I decided to give it a try. My daughter, the friend, and I went to the festival again in the evening. (My daughter and I went to the festival yesterday, too.)
新潟県南魚沼市の塩沢地域では、塩沢まつりが7月14日~16日まで行われます。

今日(7月15日)、娘が午前中にお友達と一緒にお祭りに行きました。帰ってくると、気に入った食べ物が2つあったとのこと。一つはスパ棒で、もう一つはポテトフライでした。ポテトフライは温かくて美味しいので食べてみてと、しつこく言うので、試してみることにしました。娘と友達、そして私とでまた夕方にお祭りに行ってきました(娘と私は昨日もお祭りに行ってきました)。

This particular one is curry-flavored. My daughter told me that two other flavors were available, sugar and salt.
これはカレー味です。娘が言うには、砂糖味と塩味のもあるそうです。

これが娘が話していた屋台です。


I ordered two bags, and the owner started to squeeze potato paste(?) from the machine, and put the resultant potato sticks into the fryer.
私が2つ注文すると、店主はペースト状(?)のポテトを機械から押し出し、できたポテトの棒をフライヤに入れました。




Just as my daughter remarked, the potato fry was very hot and delicious.
娘の言うとおり、ポテトフライはとても熱くて美味しかったです。

My Own Style of Tsukemen (Dipping Noodles)/私流のつけ麺

I'm not going to talk about the tsukemen invented by Kazuo Yamagishi of Taishoken; I just want to talk about my style of tsukemen, which is much simpler.
大勝軒の山岸一雄さんが発明したつけ麺について話そうというわけではなく、自分自身のつけ麺を話したいと思います。私のはとてもシンプルです。

Luckily, I got these four packs of ramen noodles for half the regular prices from the supermarket I frequent the other day.
先日、運良く、よく行くスーパーでラーメンの麺を4パック、通常価格の半分で買えました。


Ramen noodles, boiled, drained, and rinsed and cooled:
茹でて、水を切って、洗って冷たくしたラーメンの麺:

I made the dipping sauce by combining dashi, soy sauce, and mirin at a ratio of 5:1:1, boiling for some time, and chilling in the fridge. Each diner added some vinegar, sesame seed oil, and chopped naga negi (Japanese scallion) to their dipping sauce.
つけ汁は、出汁、醤油、みりんを5:1:1で混ぜ、しばらく沸騰させて、冷蔵庫で冷やして作りました。食べる人がそれぞれ、お酢、ごま油、みじん切りした長ネギを自分のつけ汁に足しました。
