Farm Tool Market/農具市

As I mentioned briefly in Farm Tool Market at Ichinomiya Shrine/一宮神社農具市, today, March 12, is a special day for the people in the Shiozawa and other surrounding areas of Uonuma region of Niigata prefecture. I went to the Market today, before noon, feeling slightly guilty, considering all those who suffered from the greatest earthquake in Japanese history, which took place only yesterday.

Okara Ice Cream/おからアイスクリーム

Despite the greatest earthquake in Japanese history, which hit the Tohoku and other areas yesterday, I decided to make okara ice cream today.
東北地方などを襲った、日本史上最大の地震にもかかわらず、今日、おからアイスクリームを作ることにしました。

Ingredients:
3 eggs
80 g sugar
200 g okara, previously frozen and thawed
Note that my okara is quite watery (should I say "milky"), and probably contains 30-50 g soy milk.
Small amount of vanilla essence

You will need an electric whisk and 2 bowls.

Directions:

1. Separate yolks and whites of eggs.
2. In the bowl containing whites, add 40 g sugar, and make meringe.
3. In the bowl containing yolks, add 40 g sugar, and whisk well.
4. In the bowl mentioned in 3., add okara, and mix well.
5. In the bowl mentioned in 4., add meringe. Mix lightly. Add vanilla essence.
6. Transfer contents to a tupperware container and put in the freezer.

材料:
卵 3個
砂糖 80 g
おから 200 g(冷凍し、解凍したもの)
私のおからはとても水っぽく(豆乳っぽく?)、多分、30~50 gくらい豆乳が含まれています。
バニラエッセンス 少量

電動の泡だて器とボール2個が必要です。

作り方:

1. 卵を黄身と白身に分ける。
2. 白身の入ったボールに砂糖を40 g入れ、メレンゲを作る。
3. 黄身の入ったボールに砂糖を40 g入れ、泡だて器でよく混ぜる。
4. 3.のボールにおからを入れ、よく混ぜる。
5. 4.のボールにメレンゲを入れる。軽く混ぜる。バニラエッセンスを入れる。
6. 中身をタッパーに移し、冷凍庫に入れる。

I had some. Not bad, but not good, either. Later, after supper, my family had it, too, and said they liked it. My wife had a lot of it!
少し食べました。悪くはないですが、良くもないです。後で、夕食後に、家族も食べましたが、美味しいと言ってくれました。妻はいっぱい食べました。

Thinking of Good Uses for Okara (Soy Pulp)/おからのいい使い道を考える

As part of supper tonight, I was making potato salad. While doing so, I hit upon a good idea: Adding some okara to the potato salad!
今日の夕飯にポテトサラダを作っていました。そうしているうち、いいアイディアが浮かびました!ポテトサラダにおからを入れる!

I mixed them well. I tasted some, and found it was very good! Even my daughter, who is usually a picky eater, said it was good!
よく混ぜました。少し味見したら、とても美味しかったです。いつもは好き嫌いの激しい娘も美味しいと言ってくれました!


I think I'll make okara ice cream in a day or two.
一両日中にはおからアイスクリームを作ろうと思います。

Chicken Cheese Oba Maki/チキンチーズ大葉巻き

Oba (lit. large leaf) is another name for ao jiso (green perilla). Maki means roll.
I wanted to buy tonkatsu, but since my son is not a huge fan of it, I changed my mind and bought this instead:
大葉とは、青ジソの別名です。巻きとはrollという意味です。豚カツを買いたかったのですが、息子はあまり豚カツが好きではないので、代わりにこれを買いました。

Oboro Dofu/おぼろ豆腐

For lunch today, I made my first attempt to make oboro dofu (< tofu) using home-made soy milk. "Oboro" means haze, as in "oboro zuki yo" (a night with a hazy moon).
今日の昼食には、初めて、自家製の豆乳でおぼろ豆腐を作ってみました。「おぼろ」とは、「おぼろ月夜」などの「おぼろ」、つまりhazeという意味です。

Oboro dofu is a poetic name for fluffy bits of curdled soy milk in a pot. If you get the bits of soy milk together, you will get yose dofu (yose < yoseru (to get together)); if you ladle them in a bowl or tub, you will get kumi dofu (kumi < kumu (to ladle)); and if you put them in a sieve, you will get zaru dofu (zaru = sieve). If put in a mold with holes, with cotton cloth in it, to drain, oboro dofu will turn into momen (cotton) dofu.
おぼろ豆腐とは、鍋で固まったふわふわした豆乳を指す、詩的な言葉です。それを寄せれば、寄せ豆腐ができ、お椀や桶に汲めば、汲み豆腐ができ、ざるに入れれば、ざる豆腐ができます。木綿の布を敷いた、穴付きの型に入れて、水を切れば、おぼろ豆腐は木綿豆腐になります。

Two days ago, I bought a bag of 1-kg locally grown soybeans for 1,000 yen.
二日前、地元で採れた1キロの大豆を1袋買いました。

I used 100 g of them.
100 g使いました。

And, I put 1,000 ml of water in the pot. Almost 2 cm lower than the lower limit. To make tofu, you need soy milk with a soybean solid content of at least 8%, preferably 10-12%.
そして、ポットには水を1,000 ml入れました。下限線より2センチ近く下です。豆腐を作るには、大豆固形分が少なくとも8%、できれば10~12%の豆乳が必要です。

Soy milk was done.
豆乳はできました。

This is the nigari (bittern) I used.
使ったにがりです。



Use 1% nigari to make tofu? But, it is by weight or by volume??
I relied on the instruction manual supplied with the soy milk maker: 2.5 g nigari for 1,000 ml soy milk. Dissolve the nigari in 50 ml water.
I reheated the soy milk to 75C. According to several sites, a temperature of 70 to 75C should be fine.
豆腐を作るにはにがりを1%使う?でも重さで?それとも体積で?
豆乳メーカーの取扱説明書に頼りました。豆乳1,000 mlに対してにがり2.5 g。にがりを50 mlの水に溶かす。
豆乳を75Cまで温めました。幾つかのサイトによれば、70~75Cの温度がいいそうです。

I added almost all the nigari solution, and then stirred very gently.
にがり溶液を殆ど全部入れ、とても優しくかき混ぜました。

Two or three minutes passed, but the soy milk showed no signs of being curdled. I was a little upset, and made some more nigari solution, and added it. The soy milk was curdled immediately.
2、3分経ちましたが、豆乳は固まる気配がありませんでした。ちょっと焦って、にがり溶液をもう少し作って、入れました。豆乳はすぐに固まりました。

I'm not very happy with the results.
結果には満足していません。

Natural Peppermint Oil/天然はっか油

Today, around noon, I went to HAYAKAWA, a shop specializing in antiques and crafts, as well as used clothing, to buy a very special item: Natural peppermint oil produced here in the Muikamachi area of Minami Uonuma city.
今日は昼頃、骨董品や古布を扱うお店「はやかわ」に、とても特別な品を買いに行ってきました。南魚沼市の六日町地域で作られた「天然はっか油」です。


10 ml natural peppermint oil in a glass spray bottle costs 1,260 yen (including tax). You can have the bottle refilled for 840 yen (including tax).
The large bottle on the right contains peppermint distilled water, which I got free of charge.
ガラスのスプレー瓶に入った天然はっか油が10 mlが1,260円です。840円(税込み)で詰め替えしてもらえます。
右側の大きな瓶には、はっか蒸留水が入っています。無料で頂きました。

Okara Hamburgers/おからハンバーグ

As part of supper tonight, I made okara hamburgers.
今日の夕飯にはおからハンバーグを作りました。

The main ingredients were 300 g ground pork and the okara I got from making soy milk from 125 g dry soybeans.
主な材料は豚の挽き肉300 gと、乾燥大豆125 gから豆乳を作った時にできたおからです。

The other ingredients were:
1 egg
1 large onion, finely chopped and microwaved
Panko (Japanese bread crumbs)
(No salt or pepper)

他の材料は
卵1個
玉ねぎ大1個(みじん切りにしてレンジで火を通したもの)
(塩やコショウは、なし)

I fried one small and four large ones in the frying pan, with a small amount of oil.
小さいの一つと大きいの4つをフライパンで少量の油で焼きました。

The rest went to the freezer.
残りは冷凍庫へ。

At the high okara-to-meat ratio, the hamburgers were crumbly.
肉に対するおからの割合が多いので、ハンバーグは脆(もろ)かったです。

The sauce was a mixture of 3 tbsp each of soy sauce, mirin, and sake, as usual, which was heated in the frying pan after removing the hamburgers.
ソースはいつも通り、しょう油、みりん、お酒を大さじ3杯ずつ混ぜたもの。ハンバーグをどけた後のフライパンで火を通しました。

They were good enough for me, but I think I should have used more pork and less okara.
十分美味しかったですが、豚肉を多くして、おからを減らすべきでした。
